This is a great way to use up yellow squash out of the garden or out of the freezer.

2 cups diced yellow squash
2 cups crumbled cornbread
½ cup margarine, melted
2 teaspoons dried sage
1 (10.75 ounce) can cream of mushroom soup
1 egg, beaten
1 large onion, chopped
1 ½ teaspoons sugar
salt and pepper to taste
¼ cup milk

Steps:

  • Place squash in a pot fitted with a steamer basket over boiling water, and steam 10 minutes, or until tender.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • In a bowl, mix the squash, cornbread, margarine, sage, cream of mushroom soup, egg, onion, sugar, salt and pepper, and milk. Transfer to the prepared baking dish.
  • Bake 30 minutes in the preheated oven, or until lightly browned.

Besides serving them with toppings, steamed sweet potatoes are a great staple to have on hand for adding to salads and soups or enjoying as a quick and simple side dish.

2 medium sweet potatoes (about 1/2 pound each), scrubbed (see Cook's Note)
Toppings, such as hot honey and chopped pecans; salted butter and chili powder; creme fraiche, chives, salt and pepper; herbed butter; salted butter and brown sugar; salsa and sharp Cheddar; toasted pepitas, cilantro, salt and pepper, optional

Steps:

  • Place a steamer basket or colander in a large pot. Add water until it reaches 1 inch below the bottom of the basket. Put the sweet potatoes in the steamer basket and bring the water to a boil. Once the water is boiling, cover the pot, reduce the heat to medium and allow the potatoes to steam until you can insert a paring knife without resistance, about 30 minutes. Using tongs, remove the potatoes from the steamer basket and let rest for 5 minutes. Split potatoes in half lengthwise, and serve as is or with preferred toppings if using.

Steps:

  • Saute the onions and celery in 4 tablespoons butter until soft.
  • In a large bowl, toss the dried bread, sage, parsley, salt, and pepper.
  • Add the onion mixture along with the remaining melted butter to the bread mixture.
  • Beat the egg and add to the mixture.
  • Toss until well mixed.

10 slices white bread, cubed
1 large onion, chopped
3 stalks celery, chopped
1/2 green bell pepper, chopped (optional)
2 eggs

1 (5 ounce) can evaporated milk (pet)
3 cups fat-free chicken broth
1 (11 ounce) can fat-free cream of chicken soup

  • Preheat oven to 400°F Mix all ingredients and place into greased 9x13 pan. (it will be liquidy but it will bake down).

16 ounces mascarpone cheese
1/2 cup powdered sugar
6 tablespoons sugar-free chocolate syrup
12 ounces frozen non-dairy topping, thawed (I use fat free)
2 (3 ounce) packages ladyfingers (ladyfinger sponge cakes)
6 tablespoons no-sugar-added strawberry preserves
1 lb fresh strawberries, cleaned and sliced
1 ounce dark chocolate, shaved

Steps:

  • In a large bowl, combine the mascarpone, sugar, and chocolate syrup, until mixture is light and fluffy. This can be done with a mixer or a wooden spoon (I use a spoon). Gently stir in the whipped topping, being careful not to deflate it too much.
  • Place one half of the ladyfinger halves on the bottom of a 9-inch springform pan, tearing some to cover the bottom of the pan as much as possible (you may have one or two leftover).
  • Brush half the strawberry preserves over the ladyfingers. You may need to microwave the preserve briefly to loosen it up & make it easier to brush.
  • Top the ladyfingers with half the strawberry slices then spread half of the mascarpone mixture over the berries. Repeat layers, brushing ladyfingers with preserves, topping with strawberries, and ending with the remaining mascarpone mixture.
  • Cover and refrigerate for 4 hours or overnight. Garnish with chocolate shavings before serving.

  • Place the sweet potatoes and yams in a colander and drain well. Set them in the salad bowl and the green onion and mint.
  • While still warm, toss the sweet potatoes and yams into dressing. Serve the salad warm, or cool to room temperature, cover , refrigerate and serve cold.

2 cups yellow squash (sliced thin or cubed)
2 cups cornbread (diced)
1 (10 ounce) can cream of chicken soup
1/2 onion (diced)
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon rubbed sage
1 tablespoon butter
1/4 cup green onion (sliced thin)
1 tablespoon garlic clove (minced)

Steps:

  • PreHeat Oven to 375 degrees.
  • Place your diced or sliced yellow squash in a pot with the onions, green onions, garlic and just cover them with water. Bring to a boil and turn down a bit and cook til the yellow squach is nearly done and has softened.
  • Carefully pour the water off reserving a bit (probably about 1/2 a cup) of the water.
  • Add butter and spices.
  • Mix in the cornbread, spices, soup mix, with the squash/veggie mixture, and pour into a glass casserole dish, or similar oven proof vessel.
  • Place in oven for 45 mins uncovered. It's just that easy.
  • Warning, do not use a sweet cornbread with this recipe.

  • Peel and chop all the veggies and throw them in a large bowl (the peeling will take a long time with the squash).
  • After all the veggies and onion and garlic are in a bowl pour extra virgin olive oil in - about three turns of the bowl.
  • Add the seasonings and then stir. Lay out on lined baking sheet. Bake for 20 minutes, then turn veggies over and bake for another 20 minutes. My veggies usually take anywhere from 35 to 50 minutes. Poke a fork into the veggies to test if done -the veggies should be soft and not hard anymore (don't over bake because they'll get mushy).
