John's Baked Pork Chops Stuffed with Smoked Gouda and Bacon image

It was too rainy to grill so I prepared a baked version using boneless center-cut pork chops. I breaded the chops and added a baked apple garnish for flair. We were very pleased by the outcome. I used the fat line as marker for making the cuts for the stuffing. We like our pork well done so cooking time may vary according to your tastes.

2 ounces smoked Gouda cheese, shredded
4 slices cooked bacon, crumbled
¼ cup chopped fresh parsley
⅛ teaspoon ground black pepper
2 (2 1/4-inch thick) center-cut boneless pork chops
1 teaspoon olive oil
1 egg
1 cup bread crumbs
¼ teaspoon salt
ground black pepper to taste
1 apple, cored
1 green onion
2 pieces red grapes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine Gouda cheese, bacon, parsley, and 1/8 teaspoon black pepper together in a bowl.
  • Cut each pork chop from one side through the middle horizontally to within 1/2 inch of the other side. Open the two sides and spread them out like an open book. Stuff cheese mixture into each pocket and close; secure with a wooden toothpick. Coat each stuffed pork chop with olive oil.
  • Whisk egg in a bowl. Mix bread crumbs, salt, and black pepper to taste together in a separate bowl. Carefully dip each stuffed pork chop in the egg; press chop into bread crumb mixture until evenly coated. Place breaded pork chops in a 9x13-inch casserole dish.
  • Bake in preheated oven until no longer pink in the center, about 45 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Garnish pork chops with cored apple, green onion, and red grapes.

1/2 teaspoon grated lemon peel
2 tablespoons lemon juice
1/2 cup finely diced peeled apple or pear

4 very thick loin pork chops
Flour for dusting chops
Vegetable oil for skillet

Steps:

  • Preheat the oven to 325 degrees.
  • Combine the raisins, grated lemon peel, lemon juice and apple and season with salt and pepper. Make a pocket in the side of each pork chop and stuff some of the mixture inside. Close each chop with toothpicks. Season with salt and lightly dust with flour.
  • Heat the oil in an iron skillet. Add the chops and brown them brief on each side. Season with fresh pepper. Cover skillet with foil and bake for 30 to 40 minutes.

1 cup brown sugar
1 tablespoon black peppercorns
1 tablespoon mustard powder
2 cups cider vinegar, heated
1 pound ice cubes
1 1/2 cups cornbread, crumbled
2 tablespoons golden raisins
1/4 cup walnuts, roughly chopped
1/4 cup dried cherries, halved
1/4 cup buttermilk
1/2 teaspoon ground pepper
2 teaspoons fresh sage, thinly sliced
1/2 teaspoon kosher salt

Steps:

  • In a plastic container put the salt, sugar, peppercorns, and mustard powder. Add the hot vinegar and swirl to dissolve. Let mixture sit for 5 to 10 minutes to develop flavor. Add ice cubes and shake to melt most of the ice. Add chops and cover with brine. Refrigerate for 2 hours.
  • Remove chops from container and rinse. Cut horizontal pockets in each pork chop for stuffing. Combine rest of ingredients, and put into piping bag that is not fitted with a tip. Pipe each chop full with cornbread mixture. Grill the chops on medium high heat for 6 minutes on each side. Turn each chop 45 degrees after 3 minutes to mark.

1 tablespoon fresh cracked black pepper
3 tablespoons Dijon mustard
1 tablespoon dried sage
1 tablespoon granulated garlic
2 tablespoons olive oil
1 tablespoon butter
1/2 cup diced pancetta
6 cups cremini mushrooms, very thinly sliced
Salt and fresh cracked black pepper
1/4 cup minced shallots
1 teaspoon minced fresh sage leaves
1/2 cup shredded fontina cheese
1 teaspoon Italian seasoning
1 teaspoon fresh cracked black pepper
3/4 cup panko breadcrumbs
1/2 cup flour
2 eggs
2 tablespoons olive oil
1/4 cup bacon fat
1/4 cup minced shallots
1 cup chicken stock
2 tablespoons whole grain Dijon mustard
2 tablespoons plain yogurt
2 teaspoons lemon juice

Steps:

  • For the brine: Rinse and pat the chops dry, slit a pocket into each chop about 3 to 4 inches long and as deep as the bone. Combine the remaining ingredients in a re-sealable bag, place in the refrigerator and brine for 1 to 2 hours.
  • For the stuffing: In a saute pan over medium-high heat, add the oil and butter, and when the butter melts and foams, add the pancetta and cook until crispy. Remove to a paper towel-lined plate, leaving the fat in the pan. Add the mushrooms, sprinkle with salt and pepper and cook over medium-high heat, stirring frequently for 6 minutes. Add the shallots, sage and 1/2 of the pancetta and cook for 3 minutes more. Remove to a plate to cool, spreading out evenly. Once cool, add the fontina cheese. Reserve the extra pancetta for service.
  • Remove the chops from the brine and pat dry. Stuff with the cooled filling and secure the opening with toothpicks. Reserve any remaining filling for the sauce.
  • Preheat the oven to 350 degrees F.
  • For the breading: In a shallow pan or bowl, add the Italian seasoning, pepper, panko and flour. Mix well. Add the eggs to a second shallow bowl and beat.
  • Dredge the chops through the egg, then lay in the breading and press to adhere. Repeat with all the chops.
  • In a large saute pan, add the oil and bacon fat and, when shimmering, add the pork chops, cooking until golden brown, about 5 minutes each side. Hold gently with tongs and cook the edges as well. Place on a baking pan fitted with a wire rack and place into the oven. Cook until the meat registers 135 degrees F on a thermometer, 10 to 15 minutes. Remove and lightly tent with foil.
  • For the sauce: In the same pan that the chops were cooked in, add the shallots and any remaining mushroom filling and cook over medium-high heat for 4 to 5 minutes. Deglaze the pan with the stock and scrape any bits from the bottom. Whisk in the mustard and yogurt until well combined, and then add the lemon juice and salt.
  • Remove the chops from the baking pan, remove the toothpicks and place on a serving platter. Top with the sauce. Garnish with the parsley and the remaining pancetta and serve immediately.

  • Lightly brown pork chops in oil. Remove from heat.
  • Bring water to a boil and stir in stuffing mix and butter. Set aside for 5 minutes and then fluff with a fork.

2 garlic cloves, minced
6 sun-dried tomatoes, diced
1 (10 ounce) bag frozen spinach, thawed and excess water squeezed out

1/2 teaspoon fresh ground black pepper, plus more for seasoning
1/4 teaspoon dried thyme
1/4 cup goat cheese
1/3 cup reduced-fat cream cheese
4 (4 ounce) center-cut pork chops
1 1/2 cups chicken broth
1/2 lemon, zested
2 tablespoons lemon juice
2 teaspoons Dijon mustard

Steps:

  • Warm the 1 tablespoon olive oil in a medium saute pan over medium heat. Add the garlic and cook until fragrant, about 1 minute.
  • Add the sun-dried tomatoes, spinach, salt, pepper, and thyme.

  • Transfer the mixture to a medium bowl.

2 thick cut boneless pork chops
8 medium mushrooms
4 green onions
2 cups skim milk
1 cup flour
1/4 cup breadcrumbs
1/4 cup olive oil
1 tablespoon lawry lemon pepper seasoning
1 teaspoon course ground pepper
1 teaspoon celery salt
2 cups cooked long-grain rice

Steps:

  • Dice four mushrooms semi fine.
  • Dice green onions leaving half the stalks intact.
  • Mix and set aside.
  • Mix flour, breadcrumbs, and spices.
  • Take a little of the flour mixture and mix with the diced mushrooms/onions.
  • Sauté mushroom/onion mix using a small amount of the olive oil.
  • Set aside.
  • Take the pork chops and using a fillet knife carefully slice into the center of the chop lengthwise.
  • Be careful not to cut the edges open.
  • Stuff the chop with the mushroom mixture.
  • Now, take the chops and place then in the flour mixture, coat them well and quick fry them in a skillet using the rest of the olive oil.
  • Place the chops back in the flour mixture and repeat with the skillet.
  • Save the flour and skillet.
  • Take the remaining mushrooms and slice them.
  • Place them on the bottom of a pyrex baking dish and throw on the remaining green onions.
  • Place the chops in the baking dish and cover.
  • Bake at 350 for 40 minutes.
  • Remove from oven and take the chops out of the dish.
  • Remove the mushrooms and green onions and place in skillet with remaining flour and 1 cup of milk, on a low heat alternate milk and flour until you find the consistency of a sauce you like.
  • Serve chops over a bed of rice, topping with the sauce.
  • Garnish as you wish.
