SIMPLE STEAMED BROCCOLI

My son adores steamed broccoli, especially the way they serve it at the Outback Restaurant. He loves it so much he asks for broccoli instead of fries when we eat there!! This is what I came up with that he deemed "perfect". (The sugar is merely to help the water boil, like salt does, without adding a salty flavor to the vegetables. I read that tip on a website when I was learning to use the steamer and have used it ever since.)

1 teaspoon sugar
1/4 cup butter
water

Steps:

  • Place the sugar the bottom of your pan, insert steamer basket. Add the enough water to come just below the bottom of the steamer basket. Bring to a boil. Reduce heat to medium.
  • Add broccoli to basket and cover with a lid. Steam for 7-8 minutes, depending on your tenderness preference.
  • While steaming broccoli, melt butter in the serving bowl in the microwave.
  • Add broccoli and stir to coat.

Pinch kosher salt

  • Peel the stalk of the broccoli, remove the florets and cut into 1-inch pieces. Cut the stalk in half crosswise and then slice each half into 1/8-inch thick slices lengthwise.   • Prep the broccoli crowns and stems: Cut the crowns away from the large stems of the broccoli. Break the crown up into bite-sized florets. Rinse the broccoli florets thoroughly. Peel and discard the thick outer skin of the stems. Slice the stems or cut them into quarters lengthwise.
  • Bring steamer water to a boil: Place 3/4 to 1 inch of water in a saucepan with a steamer and bring to a boil. (Note that if you don't have a steamer, you can simply put the broccoli directly into an inch of boiling water.)

  • You can use fresh broccoli, frozen, or what I like to do is get the pre-cut, pre-washed package of "fresh" florets. Just divide it all up into a few snack-sized portions in a zip-lock bag, add a teaspoon of water and toss in the fridge (no water needed if it's frozen).
  • When it's time for a snack, toss one of the bags (with the zip NOT sealed!) into the microwave for about 30 seconds (depending on the power of your microwave). This will steam the broccoli in the bag.

  • Rinse the broccoli. Use a vegetable peeler to peel the stalks.

zest of 1 lemon

fresh parsley, for garnish

Steps:

  • Add water in a pot and bring to a boil.
  • Add broccoli to boiling water and cover.
  • Cook for 7 to 8 minutes, or until fork-tender.

  • Put 1-2 inches of water in the bottom of a pot. Put a steamer basket in the pot. (If you do not have a steamer basket you can cook the broccoli directly in an inch or two of water in the pot.)
