STEAK SANDWICHES WITH CARAMELIZED SWEET ONIONS
A spice-rubbed New York strip steak joins a succulent stack that includes caramelized sweet onions, leaves of peppery arugula, and a crusty ciabatta roll for a memorable sandwich.

- Coarsely grind together the spices in a spice grinder, then rub steak all over with spice mixture. Refrigerate 30 minutes.
- Blend garlic and 1/2 cup oil in a blender until combined. Set garlic oil aside.
- Heat 2 tablespoons olive oil in a medium skillet over medium heat. Add onion, and cook, stirring occasionally, until caramelized, about 25 minutes.
- Bring steak to room temperature. Preheat grill to medium (if using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 5 or 6 seconds). Season steak with salt. Grill, flipping once, until medium-rare, about 8 minutes per side. Let rest 10 minutes.
- Brush cut sides of rolls with garlic oil to taste. Grill rolls, cut sides down, until slightly charred around edges.
- Whisk remaining teaspoon olive oil, the lemon juice, and a pinch of salt in a small bowl. Add arugula; toss to combine.
- Thinly slice steak at an angle. Divide steak, onion, and arugula among rolls.

- Put the grill on. Heat a little oil in a frying pan. Season both sides of the steaks with salt, then fry for 1-2 minutes on each side. Meanwhile, slice the ciabatta in half lengthways and grill the cut sides until golden.
- Drizzle the toasted ciabatta with olive oil, spread the bottom half with the onions and sit the steaks on top. Cover with the watercress and close the sandwich with the other half of the ciabatta. Cut into four sandwiches and serve two per person. Serve hot.

- Butter rolls and place buttered side up on a baking sheet. Bake at 375° for 3-4 minutes or until lightly toasted., Meanwhile, in a skillet, combine the green pepper, red pepper and onion. - Preheat an oven to 500 degrees F (260 degrees C). Split the rolls open and toast them on a baking sheet in the oven while it is preheating. Mix together the mayonnaise, garlic, and Parmesan cheese in a small bowl. Refrigerate until ready to use. Remove the rolls from the oven when toasted as desired.
- Heat olive oil in a large skillet over medium-high heat. Carefully place the sliced steak and onions in the pan and season with sea salt, Worcestershire sauce, and liquid smoke. Cook and stir until the steak is browned and the onion is tender, about 10 minutes.

Steps:
- In a medium skillet melt butter over medium-low heat.
- Add onions and garlic.
- Cook, covered, for 13-15 minutes or until onions are tender.
- Add brown sugar and salt.
- Cook, uncovered, over medium-high heat 4-5 minutes or until onions are golden brown, stirring constantly.
- Meanwhile, cut meat into 4 serving-size pieces.
- Sprinkle pepper on both sides of each meat piece.
- Place on the unheated rack of a boiler pan.
- Broil 3 inches from the heat to desired doneness, turning once.
- (Allow 10-12 minutes for medium rare.) Stir vinegar into onions.
- Spoon onion mixture over steak.

- In a cast iron skillet heat the olive oil and butter over medium heat. Toss in the onions and cook over medium until they turn golden brown. Be sure to move them around from time to time to keep them cooking as evenly as possible. Caramelizing onions should take anywhere from about 25 minutes to 40 minutes, depending on your stovetop and pan. You want them perfectly golden. Once they are cooked transfer them to a bowl. Set aside.
- On your outdoor grill, or indoor grill if you prefer, cook your steaks over medium-high heat. Sear one side, then allow it to sit until it's cooked about 2/3 of the way you prefer your steak. Then flip and sear the other side. Allow to sit until it cooks to the temperature you prefer. If you use a skillet on your stovetop I highly suggest cooking the steaks in a few pats of butter. Trust me, it will help tremendously.
- Once the steak is cooked to the temperature you prefer remove it from the heat and place on a cutting board. Sprinkle with salt and pepper to taste. Allow it to stand for about 5 to 10 minutes, to allow the juices to redistribute. Slice very thinly once it's ready.
- Slice a French baguette in half lengthwise. Place it on a cookie sheet if cooking it whole, or cut up into pieces if you're using a small panini press to melt the cheese. Any way is fine. I used a cookie sheet for mine and left my baguette long with cutting it yet.
