MOM'S FLUFFY SCRAMBLED EGGS
I make these fluffy scrambled eggs when family comes for breakfast or when I just want to do something extra special for myself in the morning. My favorite cheese for this recipe is freshly grated white cheddar, but whatever you have in the fridge works! -Kailey Thompson, Palm Bay, Florida

- In a large nonstick skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove; drain on paper towels and break into 1-inch pieces. Discard drippings. In the same pan, cook and stir eggs over medium heat until almost set. Stir in 2 tablespoons butter; cook and stir until no liquid egg remains. Add cheese, parsley, dill, salt, pepper and remaining 4 tablespoons butter; stir gently until cheese is melted., Top toast with eggs and bacon; drizzle with hot pepper sauce.

Steps:
- Whisk together the eggs, heavy cream, a pinch of salt and a few grinds of black pepper in a medium bowl until the mixture is homogenous.
- Melt the butter in a medium nonstick skillet over medium heat. Add the egg mixture, then increase the heat to medium-high. Stir with a rubber spatula until curds begin to form. Lower the heat to low and add the creme fraiche and chives. Stir until the creme fraiche is fully incorporated and the eggs are just set.
- Transfer to a plate and serve immediately.
MOM'S FARM FRESH SCRAMBLED EGGS
We always had chickens growing up so we had an abundance of fresh eggs. I loved the scrambled eggs my mom made but it was mostly in the technique that made them so good. By cooking them this way gives them a light cloud like texture and they just melt in your mouth. I can never order scrambled eggs in a restaurant because they are always over cooked to me and know seems to know how to make them this way also, the secret ingredient Miracle Whip gives it a sweet, tangy and creamy taste. Try it.

- Whisk the eggs with the half and half until well incorporated and airy about 2 minutes.
- Place the bacon grease in a pan and let it melt over high heat. Pour in the eggs and whisk constantly until they begin to set it will get lumpy. Remove from heat and continue to whisk until all is set but still wet looking.
- Season with salt and pepper and stir in Miracle whip.

- Break the eggs into a cold, heavy-based pan, place on the lowest heat possible, and add half the butter. Using a spatula, stir the eggs frequently to combine the yolks with the whites.
- As the mixture begins to set, add the remaining butter. The eggs will take about 4-5 minutes to scramble - they should still be soft and quite lumpy. Don't let them get too hot - keep moving the pan off and back on the heat(as the bottom of the pan stays heated even after taking it off of the stove).
- Meanwhile, toast the bread. He used sourdough bread.
- Add the crème fraîche and season the eggs at the last minute, then add the snipped chives. Put the toast on warm plates, pile the softly scrambled eggs on top and serve immediately.
