2 5oz salmon fillets
1.5 Tbs olive oil
4 Tbs balsamic vinegar
1 Tbs maple syrup
1 tsp Dijon mustard
1 tsp garlic (minced)

Steps:

  • Preheat oven to 425F.
  • Add glaze ingredients to a small saucepan and heat over medium-low heat.
  • Bring to a boil, then simmer 2-3 minutes, or until glaze turns syrupy and glaze-y. Keep warm.
  • Meanwhile, heat about 1 ½ tablespoons olive oil in a medium oven-proof skillet over medium heat.
  • Season salmon with salt and pepper on both sides, and add to the hot skillet.
  • Cook 2 minutes on each side (will release easily from pan when ready to flip). Should be a golden brown. on the surface.
  • Remove from the heat - and place the pan in the preheated oven. Bake 5-8 minutes, or to your liking (will depend on thickness and size of your salmon).
  • To serve - place a salmon fillet on each plate and drizzle with balsamic glaze.
  • Devour.

3/4 cup balsamic vinegar
2 tablespoons maple syrup
1 tablespoon Dijon mustard
1 clove garlic, peeled and smashed or chopped
Four 6-ounce center-cut salmon fillets, skinned
2 tablespoons olive oil
Kosher salt and freshly ground pepper
2 tablespoons olive oil
1 large or 2 small shallots, thinly sliced
Kosher salt and freshly ground pepper
Kosher salt and freshly ground pepper
2 cloves garlic, peeled and smashed or chopped
2 1/2 cups frozen shelled edamame (12 ounces), thawed
2 cups sugar snap peas (6 ounces), halved

Steps:

  • For the glaze: In a small saucepan, bring the vinegar, maple syrup, mustard and garlic to a boil over medium heat. Reduce the heat to a simmer and cook until thick, about 12 minutes. Set aside to cool for 5 minutes.
  • For the salmon: Position a rack in the center of the oven and preheat the oven to 400 degrees F. Line a small baking sheet with parchment paper. Arrange the salmon on the baking sheet. Drizzle both sides of the salmon with the olive oil and season with 1 teaspoon salt and 1/2 teaspoon pepper. Roast until the salmon is cooked through and flakes easily with a fork, 8 to 10 minutes. Set aside to cool for 10 minutes.
  • For the vegetables: In a medium skillet, heat the olive oil over medium-high heat. Add the shallots, 1 teaspoon salt and 1/4 teaspoon pepper, and cook until the shallots are softened, about 3 minutes. Add the garlic and cook until aromatic, about 30 seconds. Add the edamame and snap peas and cook until warmed through, about 3 minutes. Season with salt and pepper.
  • Divide the vegetable mixture among 4 serving plates. Top with a piece of salmon and drizzle with the glaze.

1/2 teaspoon salt
2 teaspoons canola oil
1/4 cup water
1/4 cup balsamic vinegar

6 (5 ounce) salmon fillets
4 cloves garlic, minced
1 tablespoon white wine
1 tablespoon honey
⅓ cup balsamic vinegar
4 teaspoons Dijon mustard
salt and pepper to taste
1 tablespoon chopped fresh oregano

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil, and spray with non-stick cooking spray.
  • Coat a small saucepan with non-stick cooking spray. Over medium heat, cook and stir garlic until soft, about 3 minutes. Mix in white wine, honey, balsamic vinegar, mustard, and salt and pepper. Simmer, uncovered, for about 3 minutes, or until slightly thickened.
  • Arrange salmon fillets on foil-lined baking sheet. Brush fillets with balsamic glaze, and sprinkle with oregano.
  • Bake in preheated oven for 10 to 14 minutes, or until flesh flakes easily with a fork. Brush fillets with remaining glaze, and season with salt and pepper. Use a spatula to transfer fillets to serving platter, leaving the skin behind on the foil.

My husband found this recipe somewhere online a while ago and it has become my absolute favorite salmon dish. Tip: salmon should be no thicker than 1"and sliced into 2" wide pieces. Pepper measurements are approximate.

1 tablespoon olive oil or 1 tablespoon canola oil
1 1/2 lbs salmon
1 teaspoon fresh ground pepper
1/3 cup balsamic vinegar
1 tablespoon Dijon mustard

Steps:

  • Dust salmon with freshly ground pepper, flesh side up.
  • Heat oil in the pan on high heat until oil gets a little smoky.
  • Starting with pepper-side down, sear 3 minutes each side.
  • Remove salmon from pan and reduce heat to medium.
  • Immediately place balsamic vinegar in pan, where it will reduce quickly.
  • Add Dijon and mix until well blended.
  • Starting with pepper-side down, place salmon into glaze, coating both sides completely and turn fire off.

1/4 cup water
1 1/2 tablespoons fresh lemon juice
1 tablespoon plus 1 teaspoon packed light brown sugar

2 teaspoons vegetable oil

Steps:

  • Stir together vinegar, water, lemon juice, and brown sugar in a small bowl. Pat salmon dry and season with salt and pepper. Heat oil in a 12-inch nonstick skillet over moderately high heat but not smoking. Increase heat to high, add salmon skin side up, and sear until well browned, about 4 minutes.
