GRILLED STEAK AND RICE BOWL

1 1/4 pounds flank steak (about 1 inch thick)
1/4 cup ponzu sauce
1/4 cup wasabi mayonnaise
1 tablespoon vegetable oil, plus more for the grill
1 1/2 cups jasmine rice
1 2-inch piece ginger, peeled and thinly sliced
2 bunches scallions, halved
1 tablespoon toasted sesame seeds
2 Kirby or Persian cucumbers, diced
1 cup shredded carrots (about 2 medium)
1 tablespoon rice vinegar

Steps:

  • Preheat a grill to medium high. Pierce the steak all over with a fork. Combine 3 tablespoons each ponzu sauce and wasabi mayonnaise with the vegetable oil in a large bowl. Add the steak; turn to coat. Let sit 10 minutes. Meanwhile, cook the rice as the label directs, adding the ginger to the cooking water.
  • Brush the grill grates with vegetable oil. Remove the steak from the marinade; add the scallions to the marinade and set aside. Grill the steak, 8 to 10 minutes per side for medium rare. Transfer to a cutting board and let rest 5 minutes. Meanwhile, remove the scallions from the marinade and grill, turning, until charred, about 3 minutes; transfer to the cutting board.
  • Fluff the rice with a fork; discard the ginger, if desired, and stir in the sesame seeds. Toss the cucumbers and carrots with the remaining 1 tablespoon ponzu sauce and the vinegar. Thinly slice the steak against the grain and roughly chop the scallions. Top each serving of rice with the cucumber-carrot mixture, steak, scallions and the remaining 1 tablespoon wasabi mayonnaise.

1 cup uncooked long-grain white rice
2 cups water
2 tablespoons olive oil
1 medium onion, sliced and separated into rings
½ green bell pepper, julienned
1 pound boneless sirloin steak, cut into thin strips
2 cloves garlic, peeled and chopped
1 teaspoon browning sauce
1 tablespoon ground paprika
seasoning salt to taste
ground black pepper to taste
1 ½ cups water
2 tablespoons cornstarch
½ cup water

Steps:

  • Place rice and 2 cups water in a medium saucepan, and bring to a boil. Cover, reduce heat, and simmer 20 minutes.
  • Heat olive oil in a medium saucepan over medium heat, and saute onion and green bell pepper until tender.
  • Stir steak, garlic, and browning sauce into the onion and green bell pepper mixture. Season with paprika, seasoning salt, and black pepper. Cook and stir until steak is evenly browned. Mix in 1 1/2 cups water, and bring to a boil.
  • In a small bowl, dissolve cornstarch in 1/2 cup water. Stir into the boiling steak mixture until thickened. Serve over the cooked rice.

1 ½ pounds round steak
2 tablespoons vegetable oil
1 green bell pepper
1 (29 ounce) can diced tomatoes
4 tablespoons cornstarch
1 cube beef bouillon cube
¼ cup soy sauce
½ teaspoon garlic powder
½ teaspoon ground black pepper
½ teaspoon ground ginger
2 cups water
1 cup white rice
2 cups water

Steps:

  • Trim any fat from round steak and slice meat into thin 2 to 3 inch long strips. Remove the seeds and core from the green bell pepper, and slice into thin 3 inch long strips.
  • In a large frying pan over medium to high heat add oil and cook meat until medium rare, add peppers and continue cooking until meat is browned.
  • Reduce heat to simmer and add tomatoes, soy sauce, garlic powder, black pepper and ginger. Cover and simmer 10 minutes.
  • Dissolve bullion cube and corn starch in 2 cups water and stir well before adding to simmering beef. Cover and simmer 10 minutes, stirring occasionally, until sauce resembles the consistency of gravy. Remove from heat and serve over a bed of rice.
  • To cook rice: In a saucepan, bring 2 cups of water to a boil. Stir in 1 cup of rice. Cover and reduce heat to a simmer. Simmer for 20 minutes.

3 small serrano chiles
1 small garlic clove
Kosher salt
1/4 cup plus 2 Tbsp. fresh lime juice
3 Tbsp. fish sauce
3 Tbsp. honey
2 Tbsp. vegetable oil, divided
8 oz. skirt steak
6 oz. wide rice noodles
1/2 small head of Napa cabbage, coarsely chopped
2 small Persian cucumbers, thinly sliced
1 (6") piece daikon, peeled, halved, thinly sliced
1/2 cup finely chopped mint, plus leaves for serving
1/2 cup chopped salted, dry-roasted peanuts, plus more for serving

Steps:

  • Remove seeds from 2 chiles, then finely chop with remaining chile. Thinly slice garlic. Sprinkle a pinch of kosher salt over chiles and garlic. Smash chiles and garlic with the flat side of a chef's knife, alternating chopping and mashing, until a coarse paste forms. Transfer mixture to a large bowl and add lime juice, fish sauce, honey, and 1 Tbsp. oil. Stir vigorously to dissolve honey. This is your dressing.
  • Place steak in a medium bowl. Drizzle 3 Tbsp. dressing over, holding back chiles with a spoon; set remaining dressing aside. Let steak sit, turning occasionally, at least 10 minutes and up to 1 hour.
  • Meanwhile, bring a medium pot of salted water to a boil. Remove from heat, add noodles, and cover pot. Let sit, stirring every minute or so to keep noodles from sticking, until al dente, 5-8 minutes. Drain and rinse under cold running water; set aside.
  • Using your hands, toss cabbage, cucumbers, and daikon in a large bowl; season lightly with kosher salt. Massage vegetables with your hands to release excess water, then pour off any liquid that has collected in the bottom of the bowl.
  • Pat steak dry and season lightly with kosher salt. Heat remaining 1 Tbsp. oil in a large nonstick skillet over medium-high. Cook steak until browned, about 4 minutes per side for medium-rare. Transfer steak to a cutting board and let rest 5 minutes. Thinly slice.
  • Add steak, cabbage mixture, reserved noodles, 1/2 cup mint, and 1/2 cup peanuts to bowl with reserved dressing and toss well; season with more kosher salt if needed. Divide among bowls. Sprinkle with sea salt; top with mint leaves and more peanuts.

4 tsp olive oil
1 small onion , sliced
100g long-grain rice
1½tsp fajita seasoning
215g can kidney bean , rinsed and drained
2 x 200g rump steaks
handful coriander leaves, roughly chopped
tomato salsa , to serve

Steps:

  • Heat 3 tsp oil in a medium saucepan and cook the onion for 3-4 mins until golden. Stir in the rice and 1 tsp fajita seasoning, then cook for 1 min. Pour in 300ml boiling water and a pinch of salt and stir. Cover and simmer for 15-20 mins until all the water has been absorbed and the rice is tender. Stir in the beans and keep warm.
  • Meanwhile, rub the remaining oil, fajita seasoning and salt and pepper over the rump steaks. Heat a griddle pan, then fry the steaks for 2-3 mins each side. Stir the coriander into the rice and serve with the steaks and a dollop of salsa on top.

1 round steak, sliced into strips
1 small onion, sliced (rings or chopped)
1 can cream of mushroom soup (i like the fat free)
1 can mushroom stems and pieces, undrained
1/2 cup cooking sherry (i like a little more)
1 tablespoon garlic powder (I like more)
1/2 teaspoon garlic salt (Maybe more to taste)
1 1/2 cups cooked instant rice
1 tablespoon cooking oil

Steps:

  • Cook steak strips and onion in cooking oil in large skillet on medium- med high heat.
  • When steak and onions are done add soup and mushrooms (undrained) stirring.
  • When it looks less chunky and more soup-like add your sherry garlic and garlic salt.
  • Stir and simmer for about 5-10 minutes.
  • For even more tender meat, simmer a little longer on low.
  • If it starts to thicken too much you can add a little water (depending on how thick you like your sauce.) Serve sauce over rice.
  • Great with a salad and some garlic bread!
  • For lowfat variation: Use chicken breasts.
  • Boil them.
  • Cut into chunks and add to sauce and onions.
  • Use 98% fat free soup (can't taste the difference) delicious.
  • You can even add a little lowfat sour cream and you have a Chicken Pareasean (can't spell it) dish!

KOREAN BBQ STEAK RICE BOWLS

2 to 3 pounds flank steak
1 cup Korean Barbecue Sauce
2 cups uncooked sweet brown or sweet white rice (cooked according to package instructions)
2 cups kimchi
2 cups cucumber slices or 16 cucumber roses
2 cups pickled carrots or steamed carrots
8 green onions (trimmed of the roots and thinly sliced)
2 tablespoons sesame seeds
1/2 cup Korean Barbecue Sauce

Steps:

  • Place the flank steak in a resealable zipper top bag and pour in the Korean BBQ Sauce. Squeeze the air out of the bag, seal the bag, and squish the steak around so that it is completely coated in the Korean Barbecue Sauce. Refrigerate for at least 8 but up to 24 hours.
  • Preheat a grill pan over a high burner. Remove the flank steak from the bag of marinade, letting the excess drip away. Place the flank steak on the grill and let it stay exactly where you put it, undisturbed, for at least 3 minutes. Flip the steak over when it has beautiful browning and grill marks and again leave it undisturbed for 3 more minutes.
  • Flip the steak again, rotating 90° to make grill marks perpendicular to the first set. Grill 3 more minutes, then flip 1 final time, grilling a final 3 minutes or until the steak reaches your desired doneness. Use the tongs to transfer the steak to a cutting board or plate to rest for 10 to 15 minutes while you gather the rest of your ingredients.
  • Place 1 cup of cooked rice in each bowl. Arrange 1/4 cup of kimchi, 1/4 cup of cucumber slices or 2 cucumber roses, and 1/4 cup of pickled or steamed carrots on the rice. Set aside.
  • Slice the flank steak diagonally across the grain and add about 6 to 8 slices of the beef to each rice bowl. Drizzle 1 tablespoon of the Korean Barbecue Sauce over each bowl, then sprinkle a sliced green onion and some sesame seeds over each bowl. Serve immediately.

4 tablespoons cooking oil
2 teaspoons garlic, minced
1 cup steak, cooked medium and diced
1 cup peas
1/2 cup green onion, chopped
3 cups cooked white rice, day old, dried out uncovered in the fridge
2 eggs, fried and chopped
3 -4 teaspoons soy sauce (to taste)
1 -2 teaspoon A.1. Original Sauce (to taste)
2 teaspoons sesame oil

Steps:

  • Heat 2 tablespoons of the oil in a wok or sauté pan. When the oil is hot, add in the diced steak and toss. Add in the garlic and peas and heat through. Add in most of the green onions and eggs and heat through. Remove the mixture and keep to the side.
  • Reheat the pan and coat the bottom of the wok with oil. When the oil is hot, add in the rice and allow it to sizzle and fry. Toss occasionally to heat through and lightly caramelize. Season with soy sauce and a little A1 sauce.
  • Add in the reserved steak mixture and toss to evenly distribute.
  • Add in the sesame oil and adjust seasoning with soy sauce and A1.

MEXICAN FAJITA STEAK AND RICE

This is simple, quick and family friendly dish for Mexican steak and rice that is ridiculously easy to make. If you love the flavours of fajitas then this Mexican rice recipe is going to be a welcome addition to your cookbook. In the recipe below, we've used strips of quick frying steak but you could easily make this recipe using chicken or turkey steaks instead. You'll notice there is white rice in the dish, but don't worry, you needn't be worried by the seemingly "high GI" of white rice. The GI value is more or less redundant when the food is eaten with other foods especially when the other foods provide a source of fibre, protein and fat. 150 g white rice, uncooked weight
1 tbsp olive oil
1 green pepper, sliced
1 red pepper, sliced
2 red onions, sliced
400 g frying steak or chicken breast, sliced into long strips
2 tbsp Mexican/Cajun/Fajita spice mix
1 tbsp tomato puree

Steps:

  • To start, bring rice (dry weight) to the boil cook according to the directions on the packet.
  • Heat the olive oil in a large pan or work over a medium heat and add the chopped peppers and onions and fry until brown.
  • Remove the veg from the pan and add the steak and fry for a couple of minutes or until it is cooked.
  • Just like you would do with fajitas, add the vegetables back to the pan and mix through with the steak.
  • Add the spice mix and mix through and cook for a further minute.
  • Once the rice has cooked, drain it then add it to pan with the meat and vegetables along with the tomato puree and cook, stirring constantly for about a minute. Serve.

These Steak Foil Packets (sometimes called Hobo Dinners) are so easy you will not believe it! Fold rice, steak, and onion soup mix into some foil, bake, and voila. Deliciously tender steak and rice, ready to pair with whatever vegetables you want!

4 cups cooked rice
1 (1-oz) packet onion soup mix
1 pound steak (cube steak or top round steak)
1/2 cup evaporated milk (divided)
carrots, zucchini, asparagus, bell peppers, green beans, etc. ((optional)*)
heavy duty foil

Steps:

  • Preheat the oven to 350 degrees F. (Or see notes for camp fire or grill instructions.)
  • Tear off 4 large sheets of heavy duty foil, about 10-12 inches across. Regular foil will work too, just be careful not to tear it. You can double wrap if you're worried about it.
  • Add 1 cup of cooked rice to the center of each sheet of foil.
  • Top rice with about 1-2 teaspoons of onion soup mix.
  • Use a sharp knife to slice the steak into 12 thin strips, about 1 inch across. See photos.
  • Place 3 strips of steak on top of each mound of rice.
  • (At this point, you can add chopped vegetables around the edges of the rice. Season with salt and pepper. See notes.)
  • Pour 2 tablespoons of evaporated milk over the top of each mound of steak and rice.
  • Sprinkle the remaining onion soup mix evenly over the rest of the steak in each packet.
  • For each sheet of foil, bring the short ends of the foil together over the rice and steak. Press together and fold down securely over the food. For each end, fold the corners in, and then continue folding until you have a nice secure packet. See photos!
  • Place the 4 packets on a large baking sheet.
  • Bake at 350 for 1 hour.
  • Remove from the oven and carefully open each packet, being very careful not to burn yourself with the steam.
  • Serve hot!

2 large eggs
Kosher salt and freshly ground pepper
12 ounces sirloin steak, trimmed and cut into 1/2-inch-thick pieces
2 carrots, diced
2 stalks celery, diced
1 leek (white and light green parts only), thinly sliced and well rinsed
3 cloves garlic, minced
1 1-inch piece ginger, peeled and minced
2 cups frozen grain-and-rice blend, thawed
2 cups sugar snap peas, halved
2 tablespoons low-sodium soy sauce

Steps:

  • Heat 1 teaspoon vegetable oil in a large nonstick skillet over medium heat. Whisk the eggs with 1 tablespoon water and a pinch each of salt and pepper. Pour into the skillet and stir a few times with a rubber spatula to spread. Cook, undisturbed, until just set, about 2 minutes. Fold into thirds like an omelet and transfer to a plate.
  • Wipe out the skillet and heat 1 tablespoon vegetable oil over high heat. Season the steak with salt and pepper. Add to the skillet and cook, stirring, until the meat just starts browning, about 3 minutes. Transfer the steak to a bowl and set aside. Wipe out the skillet and heat the remaining 1 tablespoon plus 2 teaspoons vegetable oil. Add the carrots, celery and leek and stir-fry until slightly softened, about 2 minutes. Add the garlic and ginger and stir-fry until just softened, about 2 minutes. Add the rice blend and stir-fry until warmed through, about 2 minutes.
  • Pour off any collected juices from the steak; add the steak to the skillet along with the peas and soy sauce. Stir-fry until the peas are tender, 2 to 3 minutes. Slice the eggs into strips; stir into the rice.
