1/4 c. light brown sugar
1/2 c. granulated sugar
1 tsp. cinnamon
1 c. heavy cream
1 c. whole milk
6 eggs
1 tsp. vanilla
2 tbsp. butter
4 Granny smith apples, peeled and chopped
1/2 c. caramel sauce, divided

Steps:

  • Preheat oven to 350 degrees F.
  • Spread challah cubes on a large baking sheet and bake until the bread is toasted, about 10 minutes.
  • Whisk together milk, eggs, vanilla, cream, granulated sugar and cinnamon. Soak toasted bread cubes in the milk and egg mixture.
  • Melt butter in large skillet over medium heat. Sauté apples with brown sugar and 1/4 cup caramel until tender and bubbly.
  • Mix most of apple pieces into bread-custard mixture. Transfer bread pudding mixture to prepared pan. Arrange remaining apples atop bread pudding. Bake for 45 minutes to 1 hour.
  • Drizzle with more caramel sauce.

Steps:

  • Preheat oven to 350 degrees and grease a 9X5-inch loaf pan.
  • In a large bowl, mix together flour, baking powder, baking soda, salt, and apple pie spice.
  • In another bowl, whisk together both sugars, sour cream, eggs, and vanilla extract until well blended.
  • Pour wet ingredients into dry and stir until there are no streaks of flour. Fold in apples.
  • Pour batter into prepared pan. Bake in oven for 50-55 minutes. Cool in pan 10 minutes and then remove to a wire rack to cool completely.
  • In a small saucepan, bring butter, brown sugar, and whipping cream to a boil, stirring frequently. Boil for 1 minute. Spoon over bread and sprinkle with pecans.

¼ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
1 cup (200 g) granulated sugar (replace up to half with brown sugar)
2 large eggs
1/3 cup (80 ml) flavorless oil such as canola
1 teaspoon vanilla extract
3/4 cup (180 ml) yogurt
1 large apple ((or 2 small ones), peeled and chopped into cubes)
3/4 cup (150 g) brown sugar
1/3 cup (80 ml) heavy cream
3 tablespoons (40 g) unsalted butter
1-2 tablespoons powdered sugar

Steps:

  • Preheat oven to 350F/175C. Grease a 9x5-inch loaf pan.
  • In a large bowl mix together flour, baking powder, baking soda, salt, cinnamon, and sugar.
  • In a medium bowl whisk the egg, then add oil, vanilla extract and yogurt until combined. Pour the wet ingredients into the dry ingredients and mix just until combined. Fold in the chopped apple. Pour the batter into prepared loaf pan.
  • Bake for 50-60 minutes until a toothpick inserted into the center of the bread comes out clean. If the top is getting too brown while baking, cover pan loosely with aluminum foil. Allow to cool completely in the pan on a wire rack.
  • To make the glaze: In a medium saucepan, mix together sugar, heavy cream, and butter and bring to a boil. Reduce the heat to medium-low and let the mixture simmer for 1-2 minutes, whisking occasionally. Remove saucepan from the heat, and let cool slightly. Add 1 tablespoon powdered sugar and whisk until smooth and combined. Mixture should be thick, if it's still liquid, add another tablespoon until thick but pourable. Spread caramel mixture evenly over the bread.
  • Bread can be stored in an airtight container at room temperature for 3 days or in refrigerator for 5 days. Serve at room temperature.

1/2 cup buttermilk

2 box sugar-free instant french vanilla pudding mix (1 oz. size)
1 large unpeeled granny smith apple
1 1/3 c buttermilk
1/4 tsp super concentrated butterscotch extract (available at cake decorating store)
1/2 c dark brown sugar
2 tsp cinnamon, ground
1 tsp ginger powder
1 pinch salt
3 c whole wheat flour
1 Tbsp baking powder
2 tsp baking soda
1 3/4 c apple juice, unsweetened or apple cider
2/3 c sugar-free caramel ice cream topping

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Cube apple, measuring about 2 cups, toss with 2-3 T. of pudding mix. Set aside.
  • 3. In large bowl, whisk together the pudding mixes and the buttermilk. Add the butterscotch extract. This will be very thick.
  • 4. In a separate bowl, whisk together the brown sugar, spices, baking powder, baking soda, salt and flour.
  • 5. Add dry ingredients to pudding mixture a little at a time, alternating with apple juice and blend well after each addition.
  • 6. Fold in the apples.
  • 7. Bake in a greased bundt pan or small loaf pans. Time for large bundt pan will be 45-50 minutes. The small loaves will take only 20. Test with toothpick to make sure the bread is done.
  • 8. Remove from oven and let stand 10 minutes. Remove from pan.
  • 9. Cool completely. When cool, drizzle caramel syrup on the top. You should get 12 mini-loaves or 12 slices from bundt.
  • 10. (You can substitute sugar-free butterscotch pudding mixes for the French Vanilla and the butterscotch extract.)

  • Place the baking rack in the center of the oven and heat to 350 degrees F.

  • Preheat a grill for indirect medium-high heat.
  • Brush 8 cups of a 12-cup muffin tin with 2 tablespoons of the butter and sprinkle each one with some sugar until lightly coated. Separate the biscuits, cut each one into quarters and transfer to a large bowl. Add the apple to the bowl and then toss to combine with the remaining 4 tablespoons butter followed by the 1/4 cup sugar. Evenly divide the dough-apple mixture among the prepared muffin cups (about 4 pieces of dough per cup) and top with any butter and sugar left in the bowl. 2 cups heavy cream
2 cups whole milk
3/4 cup light brown sugar
1 teaspoon ground cinnamon
1 teaspoon kosher salt
1 teaspoon vanilla extract
9 large egg yolks
3 1/2 cups Granny Smith apples, peeled and chopped
3/4 cup pecans, chopped and toasted
1 loaf challah bread, cut or torn into 1-inch pieces (preferably stale)
Caramel Dessert Sauce, recipe follows
Vanilla ice cream, for serving
3/4 cup sugar
1/2 cup (1 stick) unsalted butter
1/2 cup buttermilk
1 tablespoon light corn syrup
1 teaspoon baking soda
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
Pinch salt

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9 by 13-inch baking dish with cooking spray or butter.
  • In a large mixing bowl, whisk together the heavy cream, whole milk, brown sugar, cinnamon, salt, vanilla and egg yolks and set aside.
  • Add the cubed apples, pecans and cubed bread to the prepared baking dish and toss to combine. Pour the custard over the bread and apple pieces. Carefully toss to coat, making sure that the cubed bread is submerged in the custard, and let stand to allow the bread to soak up the custard, 10 to 15 minutes.
  • Bake until the center has set, about 45 minutes. Let cool for 5 minutes. Drizzle Caramel Dessert Sauce over the bread pudding. Serve with extra sauce and vanilla ice cream.
  • In a heavy-bottomed saucepan, combine the sugar, butter, buttermilk and corn syrup. Bring to a boil over medium-high heat and cook for 1 minute. Remove from the heat and slowly add the baking soda (it will foam up), followed by the vanilla and cinnamon. The sauce will thicken as it cools. Serve warm.

  • For the Caramel Sauce (make a few hours ahead or night before): Making caramel is a bit like a game of chicken. You want to cook the mixture until it gets dark amber, but if you chicken out and pull it off the heat too early, your sauce will be light and lack flavour. Let it cook too long, and it will taste bitter and burnt. Just be sure to watch carefully and have your cream measured and at hand to quickly add to the sauce when the colour is right.
  • To make, combine the sugar, 1/2 cup water and corn syrup in heavy-bottomed, medium sized saucepan. Stir over medium heat until sugar dissolves (mixture becomes clear). Increase the heat and boil, without stirring, until mixture turns a deep amber color, occasionally swirling the pan, about 10 minutes. Remove from heat. Carefully add the cream (you may want to stand back as the mixture will bubble vigorously). Stir sauce over low heat until any caramel bits dissolve and sauce is smooth. Let caramel sauce cool to room temperature or refrigerate in a covered bowl or jar to use later.
  • For the Bread: In a large bowl or the bowl of your stand mixer, combine 3 cups flour with the yeast, salt and dry milk. Add the butter to the water and heat in the microwave or a saucepan until hot. Pour the hot water/butter into the dry ingredients. With strong strokes, beat the batter 100 times by hand, or for 2 minutes with a stand mixer kneading hook. Add a bit more flour, if necessary, to make a dough that can be lifted from the bowl and placed on the work surface.
