SPICY, GARLICKY CASHEW CHICKEN



Spicy, Garlicky Cashew Chicken image

I'm a cilantro lover, so I've upped it in my version, but also turned the heat down a notch, omitting the jalapeño pepper seeds, since I often double the recipe to feed a crowd.

1 cup salted, roasted cashews
8 tablespoons chopped cilantro ((with some stems))
1/4 cup canola or safflower oil
4 cloves garlic (roughly chopped)
2 tablespoons soy sauce
2 teaspoons brown sugar
1-2 jalapeño peppers (sliced, without seeds)
juice from 1 lime
2 tablespoons water
kosher salt
freshly ground pepper
3 pounds chicken thighs or drumsticks
lime wedges (for garnish)

Steps:

  • Combine the cashews, 2 tablespoons cilantro, oil, garlic, soy sauce, brown sugar, jalapeño, and water in s blender or food processor and blend until smooth, scraping down the sides, as necessary. Taste and season with the salt and pepper.
  • Season chicken all over with salt and pepper. Set aside 1/3 of the cashew mixture. Smear on enough of the remaining mixture to thoroughly coat the chicken. Let marinate at room temperature while you heat a broiler or grill. (Or refrigerate up to 12 hours before cooking.)
  • Broil or grill the chicken 20-30 minutes, turning frequently, until it's crisp and golden on the outside and done on the inside. (Faith cuts into it to be sure.)
  • Sprinkle the chicken with the remaining cilantro and serve with lime wedges and the remaining cashew mixture. (Faith likes this with rice or quinoa when she's feeding a crowd.)

4 garlic cloves, roughly chopped
2 tablespoons soy sauce
2 teaspoons brown sugar
1 lime, juice of
1 -2 jalapeno pepper, seeded (or not, to taste)
kosher salt
fresh ground black pepper
3 lbs chicken thighs (and or or drumsticks)

Steps:

  • In a blender or food processor, combine the nuts, 2 tablespoons cilantro, oil, garlic, soy sauce, sugar, lime juice, jalapeno, and 2 tablespoons water.
  • Blend until smooth, scraping down the sides as necessary.
  • Taste and season with salt and pepper, if desired.
  • Season the chicken all over with salt and pepper.
  • Smear on enough cashew mixture to coat the pieces thoroughly, but don't make it too thick or the sauce will fall off into your grill (set aside any remaining mixture).

2 garlic cloves, minced
1 teaspoon fresh ginger, minced
3 boneless skinless chicken breast halves, cut into 2-inch strips
3 cups broccoli florets
3 green onions, white and green parts, cut into 2-inch lengths
2 tablespoons hoisin sauce
1 tablespoon dark sesame oil
1 1/2 teaspoons crushed red pepper flakes
2 tablespoons cashew halves

Steps:

  • Coat a large nonstick skillet with nonstick spray and warm over med-high heat.
  • Add the garlic & ginger and cook for 30 seconds.
  • Add the chicken and cook, stirring constantly, for 3-4 minutes or until no longer pink.
  • Transfer to a plate.
  • Add the broccoli and cook, stirring constantly,for 3 minutes or until it's crisp-tender.
  • Return the chicken to the skillet and add the green onion.
  • Meanwhile, in a small bowl combine the hoisin sauce, oil, and red pepper flakes.
  • Pour into the pan and cook, stirring constantly, for 2 minutes or until all is blended.
  • Stir in cashews and serve.

1 -2 tablespoon dry sherry

3 cups cooked rice (hot)

Steps:

  • Heat oil in a large skillet over medium-high heat until hot and add chicken; cook and stir 7 to 8 minutes or until chicken is no longer pink in the centre.
  • Add mushrooms, green onions and garlic; cook and stir 1 minute or until vegetables are tender and add carrots, chicken broth,k sherry, sugar and lemon peel; cook and stir 1 to 2 minutes more.

2 tablespoons soy sauce
1 teaspoon sugar
1/2 teaspoon white pepper, ground
2 tablespoons rice wine vinegar
2 teaspoons sesame oil
2 tablespoons vegetable oil
1 lb chicken breast, boneless, skinless, cubed
2 green bell peppers, cored and cut in chunks
1 yellow onion, diced
2 teaspoons fresh ginger, grated
1 cup cashews, unsalted

Steps:

  • In a small bowl, whisk together the oyster sauce, soy sauce, sugar, white pepper, rice wine vinegar and sesame oil. Set aside.
  • In a large, deep skillet or wok, over medium high, heat the vegetable oil until shimmering. Add the chicken and stir fry till lightly browned, 2 or 3 minutes. It should not be completely cooked through yet.

2 tablespoons hoisin sauce
2 tablespoons oyster sauce
2 teaspoons toasted sesame oil
1 teaspoon hot Chinese chili paste
3 tablespoons vegetable oil
1 lb boneless skinless chicken, cut into 1 inch cubes
1/2 small yellow onion, in 1 inch dice
2 celery ribs, in 1/2 inch dice
1/2 cup unsalted roasted cashews
1 tablespoon minced garlic
1 scallion, sliced thinly on the diagonal (optional garnish)

Steps:

  • Stir together the hoisin, oyster sauce, sesame oil, and chili paste.
  • Heat a wok over medium-high heat. Add 2 tbsp vegetable oil and the chicken. Leave chicken for a minute or two to sear. Then stir fry for another minute or two until lightly browned.
  • Add 1 tbsp vegetable oil to pan with the celery, onions, cashews, and garlic. Stir-fry about 2 minutes, until crisp-tender. Add sauce mixture and chicken to pan.
