2 cups instant white rice, uncooked
2 cups warm water
1 lb. flounder fillets, cut crosswise in half
4 cups tightly packed fresh spinach, coarsely chopped
1/4 cup PHILADELPHIA Chive & Onion Cream Cheese Spread
1/2 cup KRAFT Sun Dried Tomato Vinaigrette Dressing

Steps:

  • Heat oven to 375°F.
  • Combine rice and water; spoon onto centers of 4 large sheets heavy-duty foil. Top evenly with half the fish; cover with spinach, cream cheese spread and remaining fish. Drizzle with dressing.
  • Fold foil to make 4 packets; place in single layer on rimmed baking sheet.
  • Bake 15 min. Cut slits in foil to release steam before carefully opening packets.

This easy Fish Florentine recipe, made with a pan seared firm white fish served on a creamy bed of spinach feels like something you would order out in a fancy restaurant!

4 5 oz thick pieces of skinless white firm fish fillet (such as grouper, bass or halibut)
1 tablespoons extra virgin olive oil
1 tablespoon salted butter
1 cup red bell pepper chopped
2 cloves garlic minced
9 ounces fresh baby spinach (from two bags)
2 ounces 1/3 less fat cream cheese (I like Philadelphia)
¼ cup half & half cream
3 tablespoons grated Parmesan cheese
kosher salt
fresh black pepper

Steps:

  • In a large skillet over medium heat add 1/2 tablespoon of olive oil and 1/2 tablespoon of butter, red bell pepper and garlic and cook for about 4 minutes.
  • Add spinach season with a pinch of salt and pepper mix until the spinach wilts down.
  • Add cream cheese, half & half and parmesan cheese mix well until cream cheese is melted and resembles creamed spinach.
  • Heat a separate skillet on medium high heat, add remaining oil and butter.
  • Season fish on both sides with salt and pepper and place on the hot pan.
  • Cook 6 minutes on first side and flip fish over and cook other side an additional 5 minutes, until cooked through and browned.
  • Divide the spinach mixture on the bottom of each plate and top with piece of fish.

This halibut dish, baked in a foil-pack, is a perfect choice for a quick and delicious romantic dinner.

1 cup instant white rice, uncooked
1 cup warm water
½ pound halibut fillet, cut crosswise in half
2 cups baby spinach leaves, coarsely chopped
¼ cup KRAFT Sun-Dried Tomato Dressing
1 tablespoon KRAFT 100% Grated Parmesan Cheese

Steps:

  • Preheat oven to 375 degrees F. Spoon 1/2 cup rice onto center of each of two 18-inch-long sheets of heavy-duty foil. (Or use double-layer sheets of regular foil.) Fold up all sides of foil slightly to form rim. Pour 1/2 cup warm water over each mound of rice; top each with 1 fish piece.
  • Arrange spinach around fish. Drizzle dressing evenly over fish and spinach. Bring up foil sides. Double fold top and ends to seal each packet, leaving room for heat circulation inside. Place foil packets in single layer in shallow baking pan.
  • Bake 15 minutes. Place one packet on each of two dinner plates. Cut slits in foil with sharp knife to release steam before opening each packet. Sprinkle evenly with cheese.

1 medium green pepper, cut into 3/4-inch pieces
4 green onions, sliced
3 bacon strips, chopped
1 celery rib, chopped
1 large tomato, chopped
1/2 teaspoon salt
1/8 teaspoon pepper
4 tilapia fillets (4 ounces each)
4 teaspoons lemon juice

Steps:

  • In a large skillet, saute the green pepper, onions, bacon and celery until vegetables are tender and bacon is crisp; drain. Add the tomato, salt and pepper; heat through., Place each fillet on a double thickness of heavy-duty foil (about 12 in. square). Drizzle fillets with lemon juice. Top with vegetable mixture.
