Cod Ceviche image

Ceviche makes a light, satisfying meal. I like to serve it over a bed of spinach. You can begin the dish in the morning and the fish will be ready by dinnertime.

Yield Serves 4 to 6

Number Of Ingredients 11

1 1/2 pounds Alaskan cod fillets
1 1/2 cups freshly squeezed lime juice
Salt and freshly ground pepper
1 small white or red onion, sliced
1 garlic clove, minced
1 or 2 serrano or jalapeño chiles, minced
2 medium tomatoes (in season only), diced
1/4 cup extra virgin olive oil
1 ripe but firm avocado, diced
1/4 to 1/2 cup chopped cilantro (to taste)
1 6-ounce bag baby spinach

Steps:

  • Cut the fish into 1/2-inch cubes. Make sure to pull out any bones and discard. Place in a large bowl, add the lime juice and stir together. Make sure that the fish is covered with lime juice. Cover and refrigerate for 6 to 7 hours, stirring every once in awhile.
  • Add salt and pepper to taste, and toss together. Add the onion, garlic, chiles, tomatoes if using, and olive oil, and toss together. Cover and refrigerate for another hour. Stir in the avocado and cilantro and gently toss together.
  • Line plates or wide bowls, or a platter with the spinach leaves. Taste the ceviche and adjust seasoning. Using a slotted spoon so that your plate doesn't become flooded with lime juice, top the spinach with the ceviche and serve.

I often use cod for ceviche, one of my favorite ways to enjoy seafood. The cod that gets the Environmental Defense Fund's highest rating is Pacific cod.

Yield 6 main-dish servings or 8 to 10 first-course servings

Number Of Ingredients 12

1 1/2 pounds very fresh Pacific cod
1 1/2 to 2 cups fresh lime juice
1 red or white onion, sliced, soaked for 5 minutes in cold water, then drained and rinsed
2 large garlic cloves, minced
2 jalapeño or Serrano chilies, minced seeds and membranes removed for a milder ceviche
Salt
freshly ground pepper
1 ripe but firm Hass avocado, diced
3 tablespoons extra virgin olive oil
1/2 cup chopped cilantro (1 bunch)
5 radishes, sliced
1 head Bibb lettuce or 5- or 6-ounce bag baby spinach for serving

Steps:

  • Remove any pin bones from the fish with tweezers or needle-nose pliers. Cut the fish into 1/2-inch pieces and place in a large glass or stainless steel bowl. Add the lime juice and toss together well. Cover with plastic wrap and refrigerate for 5 to 7 hours, stirring from time to time.
  • Add the onion, garlic, chilies, salt and pepper, avocado and olive oil, and stir together. Refrigerate for another hour. Shortly before serving, stir in the cilantro and the radishes.
  • Line wide bowls or plates with lettuce leaves or spinach. Using a slotted spoon, spoon the ceviche over the leaves. Garnish with cilantro sprigs, and serve.

I don't deny that chopping the fish into such tiny pieces seems perhaps against the express ethos (if I might put it that way) but there's no logic that can dissuade me. Besides, it really means that you hardly have to steep the fish in the acidy juices at all before it is "cooked" or rather denatured (yes, that is the term) by the lime. Not that that is my reason: I find that eating big chunks or raw fish, no matter if it is cured in some way by its acid bath, can scare people and this dainty confetti somehow doesn't. I am mad for it, and truth to say, really love it with a big bowl of tortilla chips on the side, but for elegance often produce little toasts or tostadas instead. I get a slender French stick or ficelle loaf and cut into thin slices; 1 loaf should yield about 40 mini tostadas. Brush with a little oil and then burnish slightly in a 400 degree F oven for 10 minutes. Use whatever firm white fish is available to you; my Mexican sources speak of sierra but that's not an option for me, geographically. If I find black cod, sometimes called Chilean sea bass (and is neither cod nor bass) then I use that, otherwise monkfish.

8 ounces skinless and boneless black cod or monkfish fillet, chopped as finely as you can
1/2 teaspoon dried oregano
1 teaspoon Maldon, kosher, or table salt
1/3 cup lime juice
3 scallions, finely chopped
1 jalapeno or any medium sized green chile, seeded and chopped to give 1 tablespoon
4 tablespoons freshly chopped cilantro leaves, plus a little more for garnishing
Tostadas or tortilla chips, for serving

Steps:

  • Put the chopped fish in a wide shallow dish and sprinkle over the oregano, salt and lime juice. Leave this for 8 minutes.
  • Drain the fish; it will have made a milky liquid. Add the scallions, chile and cilantro and stir gently together.
  • You can either put teaspoonfuls onto little toasts and sprinkle over some more cilantro, or put the ceviche into a bowl and serve with tortilla chips.

2 pounds dried salted boneless cod (known as baccala)
2 cups whole milk
1 large red onion, thinly sliced
1/4 cup chopped fresh parsley leaves
1 cup cherry tomatoes
1/2 cup extra-virgin olive oil
1/4 cup red wine vinegar
2 limes, juiced
Salt
Freshly ground black pepper

Steps:

  • Soak the baccala in cold water for 24 hours to re-hydrate, changing the water 3 times to remove the salt. Drain and rinse under cold water and put into a large pot. Add the milk and enough water to cover by 1-inch. Cook uncovered over medium heat for 45 minutes. Drain and set aside to cool. When fish is cool enough to handle, shred the fish into a bowl, taking care to get all the bones out. Add onion, parsley, and tomatoes. In a separate bowl, whisk together olive oil, vinegar, lime juice, and salt and pepper. Add the dressing to the cod salad, toss and serve.

500g firm white fish fillets, such as haddock, halibut or pollack, skinned and thinly sliced
juice 8 limes (250ml/9fl oz), plus extra wedges to serve
1 red onion , sliced into rings
handful pitted green olives , finely chopped
2-3 green chillies , finely chopped
2-3 tomatoes , seeded and chopped into 2cm pieces
bunch coriander , roughly chopped
2 tbsp extra-virgin olive oil
good pinch caster sugar
tortilla chips , to serve

Steps:

  • In a large glass bowl, combine the fish, lime juice and onion. The juice should completely cover the fish; if not, add a little more. Cover with cling film and place in the fridge for 1 hr 30 mins.
  • Remove the fish and onion from the lime juice (discard the juice) and place in a bowl. Add the olives, chilies, tomatoes, coriander and olive oil, stir gently, then season with a good pinch of salt and sugar. This can be made a couple of hours in advance and stored in the fridge. Serve with tortilla chips to scoop up the ceviche and enjoy with a glass of cold beer.

1 lb shrimp, cooked peeled, and chopped to bite size pieces
1 cup squeezed fresh lime juice
3 cups finely diced fresh tomatoes
1 diced green sweet pepper
1 1/2 cups chopped fresh cilantro
1 teaspoon salt
4 diced jalapeno peppers (take the seeds out if you like it mild, and leave them in for HOT)
1 tablespoon white vinegar
1 large onion, finely chopped
1 chopped green onion
1/2 lb imitation crabmeat, chopped

Steps:

  • combine all ingredients in a large bowl and mix together well.
  • Best to let it sit in the fridge for a few hours to allow the flavors to fully blend together but can be served as soon as it's made if desired.
  • serve cold either on tostada shells, as a dip with chips, or in a dish to eat alone.
  • May be garnished with lettuce, avacado, and black olive if desired.
