1 ¼ pounds cubed beef stew meat
1 onion, diced
1 (12 fluid ounce) can pale ale or lager beer
2 cloves garlic, minced
½ teaspoon dried thyme
1 ½ teaspoons chopped fresh parsley
2 tablespoons Worcestershire sauce
salt and pepper to taste
2 cups peeled and cubed potatoes
1 ½ cups quartered fresh mushrooms
1 tablespoon all-purpose flour
1 pastry for double-crust pie

Steps:

  • Place the beef stew meat, onion, and ale in a large saucepan. Simmer over low heat until the meat is tender, about 30 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Season the beef with garlic, thyme, parsley, Worcestershire sauce, salt and pepper. Mix in the potatoes and mushrooms. Cover and simmer over medium heat until potatoes are just tender enough to pierce with a fork, 10 to 15 minutes. Whisk a small amount of the sauce together with the flour in a small bowl, and stir into the beef. Simmer until slightly thickened.
  • Fit one pie crust into the bottom and up the sides of a 9 inch pie plate. Spoon the hot beef mixture into the crust and top with the remaining pie crust. Cut slits in the top crust to vent steam and crimp the edges to seal them together.
  • Bake in preheated oven until the crust is golden brown and gravy is bubbling, 35 to 40 minutes.

1 pound beef top round steak
2 tablespoons vegetable oil
1 cup sliced onion
2 cups diced peeled potatoes
2 cups water
PASTRY:
1 cup all-purpose flour
1/2 teaspoon salt
1/3 cup shortening
3 tablespoons cold water
1large egg, lightly beaten

Steps:

  • In a large resealable plastic bag, combine the flour, salt, pepper, paprika, ginger and allspice; set aside 2 tablespoons. Add meat to bag; seal and toss to coat., In a large skillet, cook meat and onions in oil over medium-high heat until meat is no longer pink and onions are tender. Gradually stir in reserved flour mixture. Add potatoes and water; bring to a boil. Cook and stir until thickened, 1-2 minutes. Reduce heat; simmer, uncovered, until potatoes are crisp-tender, 20 minutes., Meanwhile, for pastry, combine flour and salt. Cut in shortening. Gradually add water, tossing with a fork until dough forms a ball., Divide pastry in half so one ball is slightly larger than the other. On a lightly floured surface, roll out larger ball to fit a 9-in. deep-dish pie plate. Transfer pastry to pie plate. Trim even with edge of plate. Add filling. 1 teaspoon kosher salt
1 cup lard, chilled and cut into small pieces
½ cup ice water, or as needed
2 ½ tablespoons all-purpose flour
½ teaspoon dried thyme leaves

⅛ teaspoon ground black pepper
⅛ teaspoon ground ginger
⅛ teaspoon ground allspice
1 ½ pounds boneless beef round steak, cut into 1-inch pieces
⅓ cup olive oil
2 cups chopped sweet onion
1 cup beef broth
¾ cup dry red wine
1 cup peeled and diced potatoes
1 cup sliced carrots
½ teaspoon dried thyme leaves

Steps:

  • Combine 2 3/4 cups flour and 1 teaspoon kosher salt in a large bowl. Cut lard into the flour mixture until it resembles coarse bread crumbs. Add ice water a tablespoon at a time, tossing to mix. Gather the dough into a ball, divide it in half, and wrap each piece in plastic wrap. Refrigerate the dough while you prepare the filling.
  • Mix together 2 1/2 tablespoons flour, 1/2 teaspoon dried thyme, paprika, pepper, ginger, and allspice in a bowl. Dredge the steak pieces in the seasoned flour and set aside.
  • Heat olive oil in a skillet over medium-high heat. Stir in beef cubes and onion; cook and stir until the onion has softened and turned translucent and the beef is browned on all sides, about 10 minutes. Pour in beef broth and red wine and simmer until sauce thickens, about 20 minutes.

A traditional steak and Guinness pie done by my favorite British chef, Jamie Oliver. This is made particularly easy by using puff pastry for the top pie layer! If you want to skip the puff pastry layer, you could serve this as a normal stew. The herbs listed are just a suggestion. Jamie typically leaves the amount and type up to the cooks' personal tastes. He suggests a "handful". I did change the recipe a little bit from his, due to personal preferences. Feel free to substitute out the Guinness and use beef stock instead. Pure comfort food. :)

1 1/2 lbs stewing beef, diced
sea salt, to taste
fresh ground black pepper, to taste
2 tablespoons flour (heaping)
2 -3 tablespoons olive oil
1 onion, peeled and roughly chopped
2 -3 carrots, peeled and chopped (depending on size)
2 -3 potatoes, peeled and chopped (depending on size)
fresh thyme (fresh herbs, pick leaves and add about a handful) or bay leaf (fresh herbs, pick leaves and add about a handful)
2 cups Guinness stout (Can substitute the Guinness for beef stock) or 2 cups other dark stout beer (Can substitute the Guinness for beef stock)
28 ounces diced tomatoes
1 sheet puff pastry, defrosted (1 sheet from a 1 lb. 2 oz. package)
1 egg, beaten

Steps:

  • Season your beef generously with salt and pepper. Sprinkle with the flour and toss around until all pieces are well coated.
  • Heat olive oil, over med.-high heat, in a large casserole type pan and brown the meat. Make sure to not crowd your meat. You may do this in two batches, if necessary.
  • Add the onion and cook for 1 more minute. Then add the carrots, potatoes and fresh herbs. Cook for another 4 minutes. Add the Guinness and tomatoes and bring to a boil. Stir and turn down the heat to simmer. Simmer this mixture for about 2 hours or until the meat is very tender. The sauce should be thick and intensely flavored. Season if needed.
  • To make pies:.
  • Preheat your oven to 375 degrees F.
  • Put your meat filling into a large, round baking dish. You could also make individual pies. Any high-sided round ovenproof bowl is fine.
  • Roll out the pastry, dusting with flour as you go, until it is about 1/4 inch thick. Cut out a large circle (or individual circles for smaller servings) - about 1/2 inch bigger than the top of your bowl. Brush the rim(s) of the bowl with the beaten egg, then place the pastry circle(s) on top, pushing the excess pastry down the outside of the bowl to secure. Lightly score the top of the pastry in a criss-cross manner and brush with more of the beaten egg.
  • Bake in the middle of the preheated oven for about 45 minutes or until golden and bubbling.

1/2 teaspoon paprika
1/2 teaspoon dried thyme
1 clove garlic, minced
1/2 medium potato, peeled and grated
1/2 medium sweet yellow onion, minced
Kosher salt and freshly ground black pepper
1 batch Part-Butter/Part-Shortening Easy Pie Dough, recipe follows, chilled
1 large egg whisked with 2 tablespoons water, for the egg wash
2 cups (240 grams) all-purpose flour, cold, plus more for dusting
1 tablespoon sugar
1 teaspoon salt
12 tablespoons (170 grams) unsalted butter, cut into small pieces and chilled in the freezer for 10 minutes
4 tablespoons (50 grams) shortening, chilled in the freezer for 10 minutes
1/2 cup ice water
1 teaspoon lemon juice

Steps:

  • In a mixing bowl, combine the beef, flour and paprika. Stir to combine. Add the thyme, garlic, potato, onion and some salt and pepper. Stir to combine.
  • Divide one portion of the chilled Part-Butter/Part-Shortening Easy Pie Dough into 8 equal pieces. Roll each piece of dough into a round about 3 inches in diameter. You can use a 3-inch round cookie cutter to cut each round and even the edges if you desire. Repeat with the second piece of chilled dough.
  • Preheat the oven to 350 degrees F.
  • Brush each round of dough with the egg wash. Divide the filling among the rounds, piling it in the middle of each round. Bring the sides of the dough up to meet the middle and gently crimp the edges down in the center. Cut 3 small slits into each hand pie to allow steam to escape. Brush the top of the pies with egg wash.
  • Bake until golden brown, about 30 minutes. Allow to cool slightly before serving.
  • In the bowl of a food processor fitted with the blade attachment, pulse together the flour, sugar, salt, butter and shortening until the mixture resembles cornmeal but there are still pea-sized chunks of fat.
  • In a small bowl, stir together the ice water and lemon juice. Slowly add the liquid to the flour mixture, pulsing, until the dough just comes together. Squeeze a small piece of dough between your thumb and index finger to make sure it holds its shape.
  • Turn the dough out onto a lightly floured surface and divide it in half. Gently turn over each piece of dough a few times so that any dry bits are incorporated. Form each piece into a loose disk, cover the dough with plastic wrap and let it rest in the refrigerator for at least 20 minutes.

AUNTIE EM'S STEAK AND POTATO PIE

I needed to use up some potatoes and found this recipe on msnbc.com. This is from her restaurant, and it's the best pot pie. It's so good that if you decide to leave the meat out you won't notice. It is a labor of love if you make the homemade pie crust (pate brisee), but the flaky buttery crust is half of what makes it so good. The crust recipe reminds me of my favorite pie crust recipe that calls for ice water and lemon juice. When I made the crust I filled a small cup with ice cubes and added tap water. Keep in mind, if you use salted butter you won't need salt in the dough. I didn't have any cognac for the pie filling, but I added some tequila. It cooks out anyway. INCREDIBLY EDIBLE! You'll go back for seconds and then keep nibbling on it...

4 carrots, pelled and cut in 1-inch dice
3 small russet potatoes, peeled and cut in 1-inch dice

3/4 cup frozen green pea
5 tablespoons flour
1 cup beef broth
1/4 cup cognac or 1/4 cup dry red wine
1 teaspoon fresh rosemary

1 egg
1 teaspoon water

Steps:

  • For the pate brisee: Cut the butter into very small pieces and place in the refrigerator or freezer while you work with the other ingredients.
  • Place the flour, salt, and sugar in a food processor and pulse to combine.
  • Add the butter pieces to the dry mix and pulse until mixture forms coarse crumbs, about 10 to 15 seconds.
  • Add 3 tablespoons ice water to the mixture and pulse until dough comes together and holds together when you pinch the dough between your fingers.
  • Pour the dough out onto a cutting board and shape into a ball without overworking the dough.
  • Divide into two balls and shape each into a flat round disk.
  • Wrap each disk in plastic wrap and refrigerate one hour.
  • For the steak and potato filling and pie assembly: Place the potatoes in a pot of cold water. Bring to a boil.
  • After 10 minutes, add the carrots and cook 5 to 10 minutes more until both the potatoes and carrots are fork tender.
  • Drain and set the vegetables aside.
  • Melt the butter in a wide saute pan and add the onions. Cook until translucent.
  • Sprinkle in the flour and stir and cook 5 minutes, but do not brown.
  • Slowly add the broth to the onion mixture, whisking until the sauce smoothes out and thickens.
  • Add cognac, rosemary, thyme, salt, and pepper and cook 5 more minutes.
  • Add the beef, potatoes, carrots, and frozen peas to this sauce and mix gently.
  • Pour mixture into a 2 quart casserole, souffle dish, or large ramekins if you're making individual potpies.
  • Roll out the pastry dough into one large circle and place over the dish or cut the pastry to fit the individual ramekins.
  • Press down the pastry over the edges of the dish, folding them as necessary.
  • Fill pie plate or large ramekins with steak and potato filling.
  • Beat together the egg and water and brush over the top of the pastry to give a nice glossy finish to the crust.
  • Cut a few steam vents in the pastry and bake at 425 for 35 minutes until golden brown.

  • Fry the onion gently in the fat or dripping until tender; work in the flour.
  • Add the water gradually and bring to the boil, stirring all the time; boil for 5 minutes.
  • Add the steak, peas and seasoning and mix well. Place the mixture in a pie dish, cover with the mashed potato and brown under the grill or in a hot oven.
  • If you want to use raw steak (from your supermarket or butcher) instead of tinned, fry the onions and steak off together until the steak is tender.   • Add the water, peas and seasoning.

Steps:

  • Melt 1 tablespoon butter in medium skillet over medium-high heat. Sprinkle steaks with salt and pepper. Add steaks to skillet and cook until medium-rare, about 4 minutes per side. Transfer steaks to plate. Cut steaks into 1/2-inch cubes.
  • Melt remaining 2 tablespoons butter in same skillet. Add potatoes, leeks, and dry mustard. Stir 1 minute.   • Remove the meat from the fridge half an hour before you start to let it reach room temperature. Remove any fat and sinew from the meat. You can use stewing beef or any lean cut of braising steak for this dish.
  • Coat the beef in seasoned flour and fry in olive oil in batches until browned on all sides, and set aside on a plate.   • Prepare Pie Crust: Mix 1 1/4 cups flour with 1/2 cup of cold cubed butter. Mix it together well until it is crumbly and the butter is about pea-sized.   • On a lightly floured surface, roll out the pastry to a 7-8mm/1/3in thickness. Cut a 2cm/¾in strip of pastry. Dampen the edges of the rim of the pie dish with water.
  • Bake the pie for 30-40 minutes, or until the pastry is golden-brown. Leave to stand for 10–15 minutes before serving.

  • Roll the remaining pastry out on a floured work surface to a 3mm/⅛in thickness, and cut to the size of the pie dish. Brush the strips of pastry on the rim of the dish with beaten egg, and place the pastry lid on top.
  • Cook in the preheated oven for 50–60 minutes, or until the pastry is golden-brown and the filling is bubbling inside.
