This is an easy BBQ meatloaf recipe with delicious barbecue glaze on top. Tasty baked meatloaf that is moist, flavorful and ready on your table in less than 1 hour!

1 cup Diced Bread (, see note 1)
1/2 cup Milk
1 pound Fresh Ground Meat (, see note 2 (450 grams))
1 Medium Egg
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
1/2 teaspoon Garlic Powder
2 teaspoons Dried Basil (, see note 3)
1 tablespoon Worcestershire Sauce (, see note 4)
1 tablespoon BBQ sauce
1/4 cup Ketchup
1/4 cup BBQ Sauce
1 tablespoon Brown Sugar

Steps:

  • Preheat oven to 350° Fahrenheit (180° Celsius).
  • Transfer diced bread into a bowl (soup bowl will do) and pour over the milk. Soak until soft, but don't wait until it turns mushy.
  • In a mixing bowl, mix together (with hand) the soaked bread with ground meat, egg, salt, pepper, garlic powder, basil, Worcestershire sauce and BBQ sauce. This will only take a minute or two. You want all the ingredients to be distributed evenly.
  • Form into a loaf and place into an oven-proof glass container (or loaf tin or baking sheet) sprayed with oil. Mix together ketchup, BBQ sauce and brown sugar and spread half of it over the meatloaf (see note 5).
  • Bake in the oven for 50 minutes or until ready (see note 6).
  • Let it sit for about 10 minutes before serving.
  • Enjoy!

1/2 cup plain dried breadcrumbs
2 teaspoons Kosher salt
1 1/2 teaspoons chili powder
1 teaspoon black pepper
1 teaspoon ground cumin
3/4 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup milk
1 large egg, beaten
1 tablespoon Worcestershire sauce
1 1/2 teaspoon unsalted liquid smoke
2 pounds 80/20 ground beef
1 small yellow onion, finely minced
2/3 cup thick, sweet BBQ Sauce ((separated))

Steps:

  • Preheat the oven to 350° and have ready a rimmed sheet pan lined with foil, preferably nonstick foil.
  • In a large bowl, use a fork to mix together breadcrumbs, salt, chili powder, pepper, cumin, garlic powder, and onion powder. Add the milk, egg, Worcestershire, and liquid smoke and mix once more.
  • Add the ground beef and minced onion and mix with your hands until all of the ingredients are evenly incorporated. Transfer the mixture to the prepared pan and shape into a narrow loaf (the meatloaf will spread as it bakes).
  • Pour half of the BBQ sauce over the meatloaf and bake for 35 minutes. Remove from the oven, carefully pour over the remaining sauce and bake an additional 25 minutes.
  • Allow the meatloaf to rest about 15 minutes before slicing into. Serve and enjoy!

1 medium carrot, peeled
400 g beef mince
400 g higher-welfare pork mince
1 clove of garlic, peeled and crushed
1 teaspoon Old Bay seasoning, or 2 fresh bay leaves, crushed
2 teaspoon Worcestershire sauce
100 g stale breadcrumbs
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
2 large free-range eggs
150 g Cheddar cheese, optional
For the sauce
100 ml BBQ sauce
50 ml tomato ketchup
Tabasco sauce
chili sauce
1 large onion
1 green pepper, deseeded

Steps:

  • Set up your barbecue for the heat canyon technique (place the coals on opposite sides of the barbecue to make two heat walls - this will create sections of hot, direct heat on the sides, with an indirect, cooler area in the middle to ensure your meat gets consistent heat throughout the cook). Place a drip tray inside the middle of the barbecue. Cover with the lid and allow to heat up like an outdoor oven - you want a temperature of around 160°C/320°F.
  • To make your sauce, combine the BBQ sauce and ketchup with a few drops each of Tabasco and chilli sauce, then set aside. Finely dice the onion, pepper and carrot, then put into a large bowl with all the mince, the garlic, bay, Worcestershire sauce, breadcrumbs, salt and pepper. Beat the eggs and add to the mixture, then use your hands to scrunch and mix it all together. Grate in half the cheese (if using), and scrunch to combine.
  • Remove the mixture to a clean work surface and shape into a rectangular loaf (roughly 25cm in length). Using the handle of a wooden spoon, make four diagonal indents (roughly 1cm deep) into the top of the loaf at 3cm intervals, then pour over half the sauce. Place the meatloaf on a big piece of tin foil or in an old roasting tray, then place on the middle of the barbecue. Cover with the lid and cook for 1 hour to 1 hour 15 minutes, or until cooked through. Grate and sprinkle over the remaining cheese (if using), and continue cooking for a minute or so with the lid on, until melted. Remove to a board to rest for around 10 minutes, then slice it up and serve drizzled with the remaining sauce. Cheers, Grandma!

1 c bread crumbs
2 c cheese, shredded
2 eggs
1 large sweet onion, chopped
1 c barbecue sauce, divided use
1 Tbsp worcestershire sauce
3/4 tsp salt
1/2 tsp pepper

Steps:

  • 1. Preheat the oven to 350°F
  • 2. In a skillet, saute the onion until lightly browned, about 5 minutes.
  • 3. In a large mixing bowl, use your hands to gently but thoroughly mix together the meat, bread crumbs, cheese, eggs, sauteed onion, 1/2 cup of the barbeque sauce, worcestershire sauce, salt, and pepper
  • 4. Shape the mixture into a loaf and place in a large 2" deep baking pan. Spread the top of the loaf with the remaining 1/2 cup of barbeque sauce.
  • 5. Bake until the loaf is firm, 60 to 75 minutes, or until done. Let the meatloaf stand in the baking dish for 10 minutes, then cut into slices to serve.

1 small onion, finely chopped
For the Topping:

Steps:

  • Gather the ingredients. Lightly grease a 9 x 5 x 3-inch loaf pan with cooking spray. Preheat the oven to 350 F.

1/4 c oatmeal
1 egg

1 1/2 lbs ground beef
1/3 cup flour

  • Preheat oven to 400.
  • Stir together tomato sauce, BBQ sauce and sugar in a large bowl. Set 1/4 c of mixture aside.
  • With hands, mix together the remaining ingredients and form into loaf. Place in greased loaf pan.

  • Using your fingers gently combine all ingredients and meat being careful not to overly squish or press the meat (this makes the meatloaf dense)

  • Pour 1/4 cup of sauce in the bottom of a bread pan, or enough to evenly coat the bottom.
  • Add meatloaf to the bread pan and gently press into a solid loaf shape, pressing only hard enough for the meat to hold together.

  • Place in the oven for 70 minutes, or until the internal temperature reaches 165 degrees.
