Squashed Squash ( Hubbard or Butternut ) image

A friend phoned me this evening, asking how to do squash (she hasn't been cooking at home for long; she's always been a takeout kind of gal). So, here is the method I use, for everyone who wondered how but were afraid to ask. Go for it -- it's easy and delicious!

Number Of Ingredients 4

1/2 lb small winter squash, such as hubbard or butternut
2 tablespoons unsalted butter, room temperature
1 pinch freshly grated nutmeg
salt and pepper

Steps:

  • Pierce the squash in several spots with a fork or skewer.
  • Place on a microwave-safe plate and place in the microwave; cook on High until squash is soft, about 8 minutes.
  • Alternatively, you can do this in the oven: poke it as above, and roast at 400F for about 45 minutes.
  • Cut cooked squash in half, scoop out and discard seeds, then scoop all the flesh into a mixing bowl.
  • Add the butter and nutmeg, and mash well.
  • Taste; add salt and pepper if desired; serve.
  • A wee bit of cream can also be added when mashing, if you're feeling decadent.

This recipe was put out by the makers of Miracle Whip a number of years ago and it's one of my favourite side dishes for chicken or turkey dinners.

1 onion, finely chopped
3/4 cup Miracle Whip
3 cups cooked very well drained and mashed hubbard squash (you'll need 2 1-kg. bags,or 2 1-lb. bags of frozen squash) or 3 cups butternut squash (you'll need 2 1-kg. bags,or 2 1-lb. bags of frozen squash)
1/4 cup all-purpose flour
1 tablespoon brown sugar
1 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon nutmeg
1/4 teaspoon black pepper
3/4 cup fresh breadcrumb
2 tablespoons melted margarine

Steps:

  • Saute onin in a small amount of Miracle Whip dressing until tender.
  • Combine all ingredients except bread crumbs and margarine.
  • Spoon into a greased 6 cup casserole.
  • Combine bread crumbs and melted margarine; sprinkle over squash.
  • Bake at 375 degrees for 40 minutes or until golden.

ACORN OR BUTTERNUT SQUASH RISOTTO



Acorn or Butternut Squash Risotto image

This risotto is easy and fairly quick after you peel and cut up the squash. Good healthy alternative. Could be used as a main meal or a side dish

Yield 2-4 serving(s)

Number Of Ingredients 7

1 small butternut squash or 1 small acorn squash, your favorite
1 3/4 cups 10 Minute brown rice
2 cups frozen mixed vegetables
1 vegetable stock cube (or chicken if you prefer)
2 cups water or 2 cups white wine, approximately
pepper, to taste
Chinese five spice powder, to taste

Steps:

  • Peel the squash and cut into 1" cubes.
  • Put them under the broiler to toast.
  • Boil the rice with liquid and flavoring.
  • Heat up a large fry pan and scold the mixed veg on it with no liquid.
  • When the squash is browned to your taste put it in the microwave with a couple of spoons of water and zap until tender- takes about 4.
  • 5 minutes.
  • While the squash is zapping mix the cooked rice in with the mixed veg.
  • Stir in whatever seasoning you feel like using.
  • it should now be on a low heat- just to keep everything warm.
  • When the squash is done toss it in and mix it up- and serve.
  • Salt or soy sauce or whatever to taste.
  • it took about 15-20 mins to do.
