SHRIMP OR CHICKEN LETTUCE WRAPS WITH CREAMY CAESAR DRESSING



Shrimp or Chicken Lettuce Wraps with Creamy Caesar Dressing image

This recipe requires no cooking and is served cold, so it makes a perfect picnic in the hot summer months as well!

2 hearts romaine lettuce
1 pound jumbo fully cooked shrimp, from the seafood counter in market
1 rotisserie chicken, available in many markets
4 heaping tablespoons reduced fat mayonnaise
1 clove garlic, crushed
1 lemon, zested and juiced
2 tablespoons anchovy paste, optional (But it tastes better with it in. If you think you don't like anchovies, try them in this sauce. They just taste salty and yummy!)
1/2 cup grated Parmigiano-Reggiano, a few handfuls
2 teaspoons Worcestershire sauce
1 teaspoon coarse black pepper, eyeball the amount in the palm of your hand: 1 teaspoon is equal to about 1/3 of a palm full
3 tablespoons extra-virgin olive oil, pour to the count of 4

Steps:

  • Cut bottoms off the romaine and cut the heads in half lengthwise. Wash lettuce and separate the leaves. Let it dry in the dish draining rack while you prepare the rest of the menu.
  • Remove the tails from the shrimp and place the shrimp in a bowl or, pack for travel, if this is a picnic meal.
  • To remove the chicken meat from the chicken, cut the chicken breasts off first. Cut the legs and thighs off using kitchen scissors to help you. Slice the meat up on an angle. Arrange on a plate or in a plastic container.
  • Place mayonnaise, garlic, lemon, anchovy paste, cheese, Worcestershire and pepper into the blender and turn it on. Stream the extra-virgin olive oil into the dressing through center of the lid. When the oil is combined, remove the thick dressing with a spatula to a bowl or a portable plastic container.
  • Place lettuce on a serving platter or pack in large plastic bag or container to travel.
  • To assemble, spread dressing onto a lettuce leaf. Fill leaf with a large shrimp or sliced cold chicken, like a lettuce taco, and eat!
  • To pack for picnic, take the romaine hearts in plastic food storage bags. Pack the shrimp and cut chicken in separate bags and pack dressing in small plastic container.

Caesar salad served in mini bowls made out of Parmigiano - so cute and delicious! You can also fill the cheese bowls with any other type of salad. I saw these on Rachael's holiday open house show with John Cusack.

1 cup grated parmigiano-reggiano cheese, plus extra for salad
1 -2 romaine lettuce hearts, chopped
anchovy paste, to taste
1 lemon, juice of
salt
fresh ground black pepper
extra virgin olive oil, for drizzling

Steps:

  • Preheat oven to 400ºF.
  • On a large nonstick baking sheet, place about 2 tablespoons of the grated cheese in circles about 4 inches across. Place the baking sheet into the oven until the cheese melts and turns golden brown, about 5-7 minutes.
  • While the cheese rounds are in the oven, set up 8 small cups or bowls on your countertop upside down.
  • Once the cheese is golden, quickly remove the tray from the oven and, using a small knife or spatula, lift up the cheese rounds and place them over the inverted cups or bowls and allow them to cool. On the show she used an empty egg container but you could also use mini muffin tins.
  • While the cheese bowls are cooling, combine the lettuce, anchovy paste, lemon juice and Parmigiano in a mixing bowl. Season with salt, freshly ground black pepper and a drizzle of olive oil, and toss to combine.
  • When the cheese cups are completely cooled, arrange them on a serving platter and fill each one with a small scoop of the Caesar salad. Serve immediately.

HOMEMADE " FRENCH" DRESSING (RACHAEL RAY)

Ok -- since I'm always harping on you to buy that bag of salad, I thought I'd take you back to the basics with a garden salad. Now I know you're probably saying, "I don't need a recipe to tell me how to hack up a head of lettuce." You're right; you don't! But you just HAVE to try out that hacked up iceberg with a dressing you make from scratch. It's so much better than the bottled stuff and healthier too because you know EXACTLY what's in it! So today instead of a bag of salad, hack a leafy head. Trust me--tearing it apart is GREAT therapy after a hard day's work. Throw in some sliced cucumbers and radishes, and chopped scallions. Add some shredded carrots for color. Then stir up the dressing. This is VERY tasty! The only note I'll add is something Mom taught me years ago -- never ever ever cut lettuce with a metal utensil. It will make the leaves turn brown very quickly. Always chop lettuce with a plastic or plastic-like utensil or tear it up by hand.

1/4 cup ketchup
1/4 cup extra virgin olive oil, eyeball it
1 teaspoon garlic powder
2 teaspoons Worcestershire sauce
salt, and
white pepper

Steps:

  • Combine lettuce and chopped veggies in salad bowl. (Use whatever "salad greens" you prefer.).
  • Add all of the dressing ingredients into a blender. Put the top in place and blend on high until dressing is combined.
  • Pour dressing over salad and toss. Adjust salt and pepper, to your taste.

I love the simplicity of the ingredients. I don't always want a heavy caesar dressing. Best of all was the reaction of my teenaged son, who exclaimed with a surprised expression, "This is good!" when he first tried it. Feel free to add more garlic or double recipe. (Old Sub Sailor) Fish sauce adds anchovie taste.
