I'm not usually a fan of "stealth" nutrition. I want my kids to learn to eat and enjoy healthy food, and we're working on that. However, I'm not above sneaking in some extra good stuff from time to time, especially when it comes to veggies. Some of them just don't like them no matter how many I make them eat! Ingredients

2 can(s) crushed tomatoes(28oz.)
1 medium onion, cut in 1in. pieces
1 medium zucchini or yellow squash, slice 1in. thick
1 c shredded carrot
1 c green or red bell pepper, coarsly chopped
1/2 c celery ribs and leaves, roughly chopped
2 Tbsp olive oil
2 tsp sugar
1 tsp garlic powder
1/8 tsp gound black pepper
1/4 c fresh basil, minced*
1/2 c fresh parsley, minced*
1/2 tsp salt, or to taste

Steps:

1. Dump 1 can of the tomatoes into a large saucepan.
2. Dump the other can in a food processor or blender. Add the onion, squash, carrot, bell pepper and celery. Process until veggies are smooth(or mostly smooth). Add to the saucepan with tomatoes.
3. Add olive oil, sugar, garlic and pepper. Heat over med. heat until bubbling, reduce heat to simmer, cover and cook at least 30 min.(I like to let it simmer a lot longer, or even put it in the crockpot for several hours).
4. Add the minced herbs and salt. Simmer for 5-10 more minutes. Serve over pasta.
5. Notes: This can easily be a meat sauce...just brown 1/2-1lb. of ground meat, drain and add to sauce. *fresh herbs have even more antioxidants than a lot of veggies, so including them increases the nutrition of the sauce even more. If you don't have fresh herbs, you can use dried(2t. of basil and 2T of parsley.), and add them when you add the garlic and pepper.

Ingredients

1/4 cup extra virgin olive oil
1 onion, finely minced (or pureed)
1 -2 garlic clove, finely minced
1/4 cup orange puree (My Take on Sneaky Orange Puree)
1/4 cup white puree (Sneaky Chef Make-Ahead White Puree)
1 (28 ounce) can whole peeled tomatoes with liquid
1 (6 ounce) can tomato paste
1/2 teaspoon salt
fresh ground black pepper

Steps:

Place the oil in a deep saucepan over medium heat.Cook the onions and garlic until slightly translucent but not brown. Stir occansionally.
Mix in the orange and white puree, tomatoes, and tomato paste and bring to a boil. Lower the heat and simmer for 15-20 minuttes until sauce thickens. Move the sauce to a blender and puree in batches, or use an immersion blender inserted directly in the pot to puree sauce.
Stir in salt and a few grinds of pepper, to taste. Use immediately or store covered in the fridge for up to 1 week, or freeze for up to 6 months.
Pink Sauce Variation:.
Add 1/2-3/4 cup soy milk(or regular milk or vegetable broth) into sauce, mixing until well blended and continue to simmer to thicken the sauce. Pure sauce as instructed above.

This is my favorite spaghetti sauce recipe. It comes from a freezer cookbook called Once a Month Cooking. This makes alot so plan on freezing about half of the recipe. You can use this sauce on spaghetti, manicotti, veal (or chicken) scallopini, or French bread pizza

1 lb Italian sausage
3/4 cup finely chopped onion
1 (6 ounce) can tomato paste
3 (15 ounce) cans tomato sauce
1 cup water
2 cloves garlic, chopped
2 bay leaves
1 tablespoon sugar
2 teaspoons dried basil
1 teaspoon dried oregano
2 tablespoons chopped fresh parsley
2 teaspoons salt

Steps:

Brown the sausage with the onion and drain.
Add the rest of the ingredients and simmer, partly covered, for 2 hours.
Simmering can be done in a crockpot, if desired.
This makes alot of sauce and can be frozen beautifully.
