CHEESY CRAB TARTS
I love to entertain and always looking for yummy appetizers. These wonderful little tarts are compliments of Paula Deen. I prepared them ahead of time and warmed them in the oven before my guests arrived. Besides their scrumptious taste and slight kick they make a beautiful presentation. I also substituted the lump crab with imitation crab.

- Preheat oven to 350 degrees. Lightly spray 32 cups of a mini muffin pan with cooking spray. Place center of wonton wrappers in bottom of mini muffin cups, pressing edges of wrappers against sides of pan to form a cup. Spray edges of wonton wrappers with cooking spray.
- In a medium bowl, combine cream cheese, and next 6 ingredients; beat with an electric mixer at low speed until smoooth. Fold in crabmeat, green onion, and red bell pepper. Spoon crab mixture evenly into prepared wonton cups. Bake 20-25 minutes, or until center are set and wonton is lightly browned.

CRAB TARTLETS - STEPH
These tartlets are similar to a baby quiche and perfect for the holidays. They'd be great for any party and no one needs to know how easy they are to make.

- 1. Beat eggs until frothy. Add next three ingredients; stir well. Add remaining ingredients. Place shells on ungreased baking sheet. Spoon mixture into tart shells.
- 2. Bake at 350 degrees for 40 minutes or until cheese mixture is set. Place on lower rack in oven. ENJOY!!
TAMALE TART WITH ROASTED GARLIC CUSTARD AND GULF CRABMEAT

- For the garlic custard: Bring the cream to a boil in a medium saucepan over medium heat. Lower the heat and then simmer until liquid is reduced to 1 cup plus 2 tablespoons. Whisk in the roasted garlic. In a mixing bowl, whisk the egg yolks lightly while drizzling in the cream mixture, and season with salt and pepper. Cover and set aside to cool.
- For the tamale tart: In a small saucepan, steam the red bell pepper over boiling water until soft, about 10 minutes. Drain and transfer to a blender or food processor; blend until smooth. You should have about 3/4 cup puree; if necessary, add a little water to make up the quantity.
- In a medium bowl, combine the masa harina, cornmeal, cayenne, cumin and salt. In a large bowl, using an electric mixer at medium speed, whip the shortening until light and fluffy.
- Gradually beat the dry ingredients into the shortening to form a smooth dough. Beat in the ancho chili puree and the red bell pepper puree. Form the dough into a disk and pat into a 9-inch tart pan with a removable bottom, pressing the dough evenly over the bottom and up the sides. Fill the tart pan with the reserved garlic custard and cover with plastic wrap.
- Place a round metal cooling rack inside a wok and pour in the water; the rack should fit at least 3 inches above the water. Bring the water to a boil over high heat, then turn off the heat. Place the wrapped tart pan on the rack and reheat the water until it boils again. Lower the heat to simmer, cover the wok, and steam until the custard is set but still trembles slightly, 25 to 30 minutes. Using pot holders, carefully lift the tart pan off the rack. Remove the plastic wrap and the sides of the tart pan. Transfer to a serving platter.
- For the crabmeat: In a large non-reactive skillet, heat the olive oil over high heat until lightly smoking. Add the onion and cook, stirring for 1 minute. Stir in the crabmeat, tomatoes, cilantro, serrano and lime juice, and cook until warmed through, about 2 minutes. Season with salt. Using a slotted spoon, cover the top of the tart with the crab mixture. Cut the tart into wedges and serve warm.

- Unroll crescent dough; separate into 8 triangles. Cut each triangle in half lengthwise, forming 2 triangles. Spread 1/2 teaspoon pesto over each triangle; place 1 rounded teaspoon of crab along the wide end of each triangle. , Roll up triangles from the wide ends and place point side down 1 in. apart on an ungreased baking sheet., Bake at 375° until golden brown, about 10-12 minutes. DEVILED CRAB TARTLETS
Encased in melt-in-the mouth pastry, succulent crab meat is given a mild spicy kick.

- Sift the flour and a pinch of salt into a bowl, then rub in the butter until the mixture resembles breadcrumbs. Add the egg yolk and 1-2tbsp cold water, and stir to bring the mixture together. Knead briefly on a floured work surface and wrap in clingfilm. Chill in the fridge for 30 minutes.
- To make the filling, heat the knob of butter in a large frying pan and add the onion. Cook gently for about 4-5 minutes until softened, then pour in the sherry and simmer for 2 minutes. Add the vinegar and Worcestershire sauce and simmer for another minute. Stir in the mustard and cayenne pepper, remove from the heat and leave to cool.
- Heat the oven to 190C (170C fan). Roll out the pastry and use to line 6 tartlet tins (10cm diameter).line with baking paper and baking beans and blind bake for 15 minutes. Remove the paper and beans.
- Scoop the crab meat from the shells into a bowl and briefly mix. Beat together the egg and cream, then fold in the onion mixture and crab meat. Spoon into the pastry cases and bake for 15-20 minutes, until just set.
CRAB AND RICOTTA TARTLETS

Steps:
- Sift the flour and a good pinch of salt into a mixing bowl, add the diced butter and rub it in with your fingertips, until the mixture resembles coarse breadcrumbs. Gradually stir in enough ice water to make a firm dough.
- Turn the dough onto a floured surface and knead lightly. Roll out the pastry and use to line four, 4-inch tart-let tins. Prick the bases with a fork, then chill in the refrigerator for 30 minute.
- Line the pastry shells with waxed paper and fill with baking beans. Bake in a preheated oven at 400* for 10 min, then remove the paper and the beans. Return to the oven and bake for another 10 minute.
- Place the ricotta, grated onion, Parmesan and mustard in a bowl and beat until soft. Gradually beat in the eggs and yolk.
- Gently stir in the crab meat and chopped parsley, then add anchovy paste, lemon juice, salt and cayenne pepper to taste.
- Remove the tarts from the oven and reduce heat to 350*. Spoon the filling into the shells and bake for 20 min, until set and golden brown. Serve hot with a garnish of salad greens.

- Lightly dust a work surface with flour. Roll out the pastry to the thickness of a pound coin, to line a 23cm/9in diameter, 4cm/1½in deep tart tin. Prick the base with a fork but do not trim the pastry.
- Cover the pastry with baking paper, fill with baking beans and bake ‘blind’ for 30 minutes, or until it just starts to colour.
- Carefully remove the baking beans and paper. (If there are cracks, use leftover pastry or beaten egg to fill them.) Return the pastry case to the oven for 5 minutes.
- For the custard, put the eggs, yolks and cream in a bowl and whisk gently, adding a pinch of nutmeg, salt and pepper. Sieve the custard into a pouring jug.
- If using dressed crabs, separate the crab meat with your fingers and remove any shell. Flake the white meat and set aside, then spread the dark meat over the pastry case.
- Heat the oil in a frying pan, then quickly fry the spring onions until just softened. Add them to the pastry case.
- Stir the white crab meat and Parmesan into the custard, lightly season, then carefully pour it on to the spring onions.
- Bake the tart in the centre of the oven for 50 minutes, or until the filling is just set. Leave to cool for a few minutes before serving.
- For the guacamole, in a bowl mix all the ingredients well and season. If making in advance, cover the surface tightly with a layer of cling film, then cover the bowl with another layer of cling film and set aside.
