SEASONED BEANSPROUTS



Seasoned beansprouts image

Flavour blanched beansprouts with spring onion, garlic and toasted sesame seeds for a quick side salad to serve with Korean dishes

Number Of Ingredients 5

225g beansprouts
½ spring onion , green part only, thinly sliced on the diagonal
1 garlic clove , grated
1 tsp toasted sesame seeds
1 tsp toasted sesame oil

Steps:

  • Bring a pan of water to the boil, add the beansprouts, cook for 10-15 secs, then drain and rinse under cold water until cool, and drain again. Gently squeeze out any excess water.
  • In a medium bowl, stir together the spring onion, garlic, sesame seeds and sesame oil. Add the beansprouts, season with salt and gently toss to coat.

SESAME BRUSSELS SPROUTS

130 grams (4 1/2 ounces) Brussels sprouts
4 spring onions
1 Thai red chile
25 grams (1 ounce) butter
1 tablespoon reduced salt soy sauce
1 tablespoon sesame oil
1 tablespoon water
1 tablespoon sesame seeds

Steps:

  • Get a pan on a medium heat and add in the olive oil.
  • Slice the Brussels sprouts in half and place them flat side down into the pan for 3 to 4 minutes. You're looking for them to go golden so don't be tempted to turn them! Season with sea salt and black pepper.
  • Slice the spring onions on the diagonal and add to the pan around the sprouts.
  • Cut the butter into slices and add to the pan around the sprouts and spring onions.
  • Slice up your red chile and scatter into the pan, adding the seeds if you're feeling brave!
  • Add the soy sauce and sesame oil and give it all a good toss. Add in your water to ensure they cook through for about 3 to 4 minutes. This will also create a sauce for your spouts.
  • In a separate pan, toast your sesame seeds in a dry pan over medium heat for 2 minutes or until lightly browned, stirring occasionally.
  • Serve on a plate and scatter over the browned sesame seeds.

SESAME & SPRING ONION STIR-FRIED UDON WITH CRISPY TOFU

400g block firm tofu
1 tbsp cornflour
½ -1 tsp chilli flakes, to taste
¼-½ tsp Szechuan peppercorns, ground, to taste
1 tbsp vegetable oil
bunch of spring onions, trimmed and cut into lengths
200g green beans, trimmed and cut into lengths
400g ready-to-use thick udon noodles
½ tbsp sesame oil
2 tsp sesame seeds, plus a pinch to serve
1 tbsp low-salt soy sauce, plus extra to serve
1 tbsp rice vinegar

Steps:

  • Drain and pat the tofu dry with kitchen paper. Cut into cubes, wrap in more kitchen paper, and place a heavy board over the top. Leave to drain for 15 mins.
  • Mix the cornflour, chilli flakes and ground peppercorns together in a bowl with a pinch of salt, then add the drained tofu. Toss well to coat.
  • Heat half the vegetable oil in a large non-stick frying pan over a high heat, and fry the tofu pieces for 5-6 mins until golden all over. Scoop out of the pan, and leave to drain on kitchen paper.
  • Add the remaining oil to the pan and stir-fry the spring onions and beans for 3-4 mins until tender and lightly golden. Pour a kettle of boiling water over the noodles in a sieve to loosen. Drain well, then tip into the pan. Fry for a few minutes until piping hot. Add the sesame oil and sesame seeds, and sizzle for a few seconds. Splash in the soy sauce, rice vinegar, then add the tofu. Toss well, then serve in bowls with a pinch of sesame seeds on top and more soy sauce on the side.

Flavour versatile Brussels sprouts with mirin, soy, sesame and chilli and serve as a healthy side dish

3 ½ tbsp sesame seed
1 tbsp low-sodium soy sauce
1 tbsp mirin or Sherry
pinch of sugar
500g Brussels sprout , roughly chopped
1 red chilli , shredded (optional)

Steps:

  • Toast the sesame seeds and, while they are still hot, use a pestle and mortar to grind all but ½ tbsp until almost powder-like. Mix the soy and mirin into the crushed seeds, along with the sugar and 2 tsp water.
  • Heat a large wok, then stir-fry the sprouts with a splash of water until softened but still crunchy. Stir through the sesame paste, then scatter with the remaining sesame seeds and the chilli, if using.

1 tbsp sesame oil
thumb-size piece ginger , cut into matchsticks
300g Brussels sprout , halved
250g beansprout
small bunch spring onions , sliced diagonally
1 tbsp clear honey
2 tbsp soy sauce , plus extra to serve
1 tbsp sesame seeds

Steps:

  • In a wok or large frying pan, heat the oil. Fry the ginger and Brussels sprouts, tossing to coat them in the oil for 5-6 mins, until slightly browned. Add a few tbsp water during cooking to stop them sticking if needed.
  • Throw in the beansprouts, spring onions, honey and soy sauce, then stir-fry for 1 min. Sprinkle on the sesame seeds and serve immediately with extra soy sauce, if you like.
