Subtle yet distinctive, the difference between Key Lime juice and regular lime juice comes through in this delicious cake. Because of its pale green color, this cake resembles a lemon cake...unless you add a few drops of green food color to the cake or glaze! The recipe came from a local paper years ago. My mile high altitude requires a longer cooking time, so you may have to adjust the timing on this.

1 (18 1/4 ounce) box lemon cake mix
1 (3 1/2 ounce) box instant lemon pudding mix
4 eggs
1/2 cup water
1/2 cup key lime juice (Nellie's and Joe's)
key lime juice, is available in most supermarkets along with the juice
1/2 cup canola oil or 1/2 cup vegetable oil
2 cups sifted powdered sugar
1/4 cup key lime juice

Steps:

  • Preheat oven to 350°.
  • Spray bundt pan with cooking spray.
  • Combine cake mix, lemon pudding, eggs, water, lime juice and oil; beat two minutes at medium speed of an electric mixer, stirring down sides occasionally.
  • Pour batter into prepared bundt pan; bake in preheated oven as directed on box.
  • Cool cake in pan for ten minutes, remove from pan.
  • When cool, drizzle with glaze.
  • For Glaze: combine powdered sugar and 1/4 cup Key Lime juice in mixer bowl; blend thoroughly.

½ cup butter, softened
1 cup white sugar
2 eggs
2 teaspoons grated key lime zest
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon baking soda
¼ teaspoon salt
¾ cup key lime juice

Steps:

  • Cream together the butter or margarine and 3/4 cup sugar. Beat until light and fluffy. Separate the eggs. Beat in the egg yolks one at a time, and add the key lime zest.
  • Sift together the flour, baking powder, baking soda, and salt. Add these dry ingredients to the egg butter mixture, alternating with 1/2 cup key lime juice.
  • Beat the egg whites until stiff, and fold into the batter.
  • Pour batter into a well greased 10 inch Bundt pan. Bake for 30 to 35 minutes at 350 degrees F (175 degrees C), or until cake tests done. Cool cake for 10 minutes in pan, and then invert onto cooling rack.
  • To Make Key Lime Glaze: Combine 1/4 cup sugar and 1/4 cup key lime juice. Simmer over medium low heat until a light syrup forms; this should take approximately 5 minutes. Use glaze immediately. Pour over still warm cake.

4 cups confectioners' sugar

Steps:

  • Combine cake mix, gelatin mix, oil, eggs and orange juice. Pour into three 8 inch cake pans. Bake according to instructions on box. Allow to cool, then frost.
  • To make the frosting: In a large bowl, beat the butter and cream cheese until light and fluffy. Add lime juice and confectioners sugar. Mix well.

1 1/3 cups sugar
2 cups all-purpose flour
2/3 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 (3 ounce) package lime Jell-O gelatin
5 eggs
1 1/3 cups cooking oil
1/2 teaspoon vanilla
1 teaspoon lemon extract
1/3 cup key lime juice (if not available, regular limes may be substituted)
1/3 cup powdered sugar
whipped cream (garnish)
lime slice (garnish)
3/4 cup orange juice

Steps:

  • Preheat oven to 350 degrees.
  • Place dry ingredients (except powdered sugar) into mixing bowl.
  • Add eggs, oil, orange juice, vanilla and lemon extract.
  • Beat until well blended.
  • Pour batter into a 9x13x2 inch pan; bake 25 to 30 minutes.
  • Remove cake from oven and let stand in pan 15 minutes or until almost cool.
  • Prick cake all over with a fork.
  • Drizzle thoroughly with lime juice mixed with powdered sugar.
  • Cover and refrigerate.
  • To serve, cut into squares, top with whipped cream and garnish with lime slices.

1 1/3 cups granulated sugar
2 cups all-purpose flour, sifted

5 large eggs, slightly beaten
1 1/2 cups vegetable oil
3/4 cup orange juice
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
1/2 cup lime juice
1/2 cup confectioners' sugar
1/2 cup butter
1 (8 ounce) package cream cheese, room temperature
1 (1 lb) box confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees.
  • Grease and flour three 9-Inch round cake pans.
  • In a large mixing bowl, mix the gelatin, sugar, flour, salt, baking powder and baking soda. Stir to mix well.
  • Add the eggs, oil, orange juice, lemon juice and vanilla.
  • Divide the batter evenly among the three pans and bake for 35-40 minutes.
  • Test for doneness by lightly touching the tops of the layers or inserting a toothpick.
  • Cool the layers in the pans for 5 minutes then turn them out onto racks.
  • While the layers are still hot mix the lime juice and 1/2 cup confectioners' sugar and pour it over the layers on the racks.
  • You can pierce the layers with a fork to allow the glaze to soak in better.
  • Allow the layers to cool completely as you prepare the icing.
  • For the icing Cream the butter and cream cheese.
  • Beat in the confectioners' sugar until the mixture is smooth and easy to spread.
  • Spread the icing between the layers and on the top and sides of the cake.

1 cup vegetable oil
4 eggs
1 (3 ounce) package lime flavored gelatin powder
1 cup orange juice
1/2 cup butter
1 (8 ounce) package cream cheese (I use fat free with great results)
3 tablespoons fresh key lime juice (I used bottled key lime)
4 cups confectioners' sugar
lime zest

Steps:

  • Combine cake mix, gelatin mix, oil, eggs and orange juice.
  • Pour into three 8 inch cake pans.
  • Bake according to instructions on box.
  • Allow to cool, then poke holes in cakes while in pans and pour key lime juice over layers.
  • To make the frosting: In a large bowl, beat the butter and cream cheese until light and fluffy. Add lime juice and confectioners sugar. Add lime zest if desired. Mix well and ice cakes.
  • You can substitute ingredients for a lighter cake and it still turns out well.

The cake usually takes a little longer in a 13x9 pan and the outside of the cake will brown just a bit. Enjoy!

1 (1/3 ounce) package jell-o sugar-free lime gelatin
1 1/2 cups vegetable oil or 1 1/2 cups canola oil
5 eggs
1/2 cup orange juice
4 tablespoons confectioners' sugar
1/2 cup lime juice
1 (16 ounce) box confectioners' sugar
1/2 cup butter, softened
8 ounces cream cheese
1 tablespoon vanilla

Steps:

  • Mix cake mix, jello, oil, eggs, and orange juice.
  • Beat 3 minute at medium speed.
  • Pour into 3 greased cake pans or 13x9 greased pan.
  • Bake at 350 for 25-30 minute for cake pans and 35-40 minute for 13x9.
  • Mix confectioners' sugar and lime juice.
  • Pour over warm layers or 13x9 cake.
  • Mix sugar, butter, cream cheese and vanilla and cream together with mixer.
  • Frost cake when cooled and enjoy!

  • Mix the 1 1/2 cups sugar with the 5 eggs, crisco oil,baking powder, lime jello, soda, flour, vanilla, lemon extract, 3/4 cup orange juice.
  • Beat with mixer till well blended.

  • bake batter in 350 oven 30 to 40 min till a tooth pick comes out clean.
