¼ cup soy sauce
2 tablespoons hoisin sauce, or more as needed
1 tablespoon water
1 clove garlic, minced
1 teaspoon green onions, chopped
½ teaspoon toasted sesame oil
½ teaspoon white sugar
¼ teaspoon minced fresh ginger

Steps:

  • Combine soy sauce, hoisin sauce, water, garlic, green onions, sesame oil, sugar, and ginger in a small mixing bowl. Mix well, adding additional hoisin sauce to thicken mixture to your desired consistency if needed. Cover the sauce and refrigerate for 1 to 2 hours to allow flavors to blend.
  • Before serving, pour mixture into a small saucepan and heat. Serve warm.

Spring Rolls with Honey-Soy Dipping Sauce image

Refreshing and satisfying, these spring rolls are a perfect for an appetizer or light lunch.

Number Of Ingredients 13

1 tablespoon lime juice
1 tablespoon honey
1 tablespoon low sodium soy sauce
1/8 teaspoon crushed red pepper
2 tablespoons water
1/3 package bean thread noodles, prepared according to package directions
5 small lettuce leaves (Bibb or baby green or red leaf lettuce)
1/2 cup shredded carrot
1/4 cup peanuts, chopped
1/3 cup mint leaves
1/3 cup basil leaves
1/3 cup cilantro leaves
5 each spring roll skins/wrappers

Steps:

  • Combine the lime juice, honey, soy sauce, crushed red pepper and water in a small saucepan. Set the pan over medium heat and bring to a simmer. Simmer for 3-4 minutes, then remove from the heat and allow to cool.
  • Toss 1-2 teaspoons of the dipping sauce with the prepared bean thread noodles.
  • Prepare a large bowl of warm water for softening the spring roll skins and lay out all of the filling ingredients; the lettuce, carrots, peanuts, mint, basil and cilantro.
  • Remove 1 spring roll skin from the package and gently submerge in the bowl of warm water. Gently swish until spring roll skin becomes loose and flexible. Carefully remove it from the water and place on a clean kitchen countertop. Place one lettuce leaf on the bottom and then top with some noodles, carrots, peanuts and herbs. Take one edge and fold over to meet the other edge, then pull back on the fillings (like you're making a burrito) until tight. Then fold in the sides and continue rolling the spring roll until sealed. (If you break the skin, just get another one and try again! If you can't roll it, don't worry about it. Just place everything in the middle and fold it up. I promise it will taste the same!)
  • Slice rolls in half, if desired and serve with dipping sauce.

Bowl of warm water
Sprouts
Julienned carrots
Julienned Napa cabbage
Julienned red peppers
Asian chili-lime dipping sauce, recipe follows
4 tablespoons cup lime juice
4 tablespoons rice vinegar
4 tablespoons water
2 tablespoons sugar
1 teaspoon red chilies
1 scallion, finely chopped
1 teaspoon sesame oil

Steps:

  • Dip rice paper into warm water to soften. Lay out on a damp towel. Arrange a few sprouts, carrots, cabbage, red peppers on the lower bottom of the rice paper. Fold right and left sides over filling and roll up tightly. Place seam side down on serving platter.
  • In a bowl combine all of the ingredients. Let stand at room temperature before serving or store in the refrigerator.

8 very thin 8-inch square spring roll wrappers
Garlic-Soy Dipping Sauce, recipe follows
Spicy Peanut Dipping Sauce, recipe follows
1/2 cup soy sauce
1/4 cup rice vinegar
2 tablespoons peanut oil
1 teaspoon hot sesame oil
1 teaspoon minced garlic
Pinch of sugar
2 tablespoons finely chopped garlic
1/2 cup smooth peanut butter
1/2 cup soy sauce
1 teaspoon sugar
1 tablespoon rice vinegar
1 tablespoon hot chile oil
1/2 cup cilantro leaves, finely chopped

Steps:

  • Combine all vegetables in a bowl and season with salt and pepper to taste. Lay the spring roll wrappers on a flat surface, pointed edge toward you. Put a 1/8 of the filling in the bottom third of the wrapper, bring the pointed edge over the filling, fold in the sides tightly. Dab the top pointed edge with water and roll tightly. Serve with sauces.
  • Combine all ingredients in a small bowl.
  • Combine all ingredients in a bowl and whisk until smooth, add cilantro just before serving.

2 ounces dried mai fun noodles
12 ounces cooked shrimp, Chopped
1 cup green cabbage, Finely Chopped
1/2 cup carrot, Peeled And Chopped
1/2 cup green onion, Chopped
1/2 cup bean sprouts, Chopped
1/4 cup red bell pepper, Finely Chopped
2 teaspoons fish sauce
16 egg roll wraps
1 large egg
vegetable oil, For Frying
1/2 cup soy sauce
1/4 cup mirin
1/4 cup rice vinegar
2 green onions, Finely Chopped
4 teaspoons ginger, Minced
3/4 teaspoon hon dashi (Japanese bonito-type soup stock granules)

Steps:

  • Cook noodles in pot of boiling water until tender, about 1 minute.
  • Drain. Rinse with cold water.
  • Drain well.
  • Coarsely chop.
  • Place noodles in bowl. Mix in next 7 ingredients.
  • Season with salt and pepper.
  • Place 1 egg roll wrapper on work surface.
  • Place 1/4 cup shrimp mixture in 3-inch-long log down center of wrapper.
  • Fold bottom of wrapper over filling, then fold in sides of wrapper over filling.
  • Brush top edge of wrapper with egg.
  • Roll up tightly, pressing to seal edge.
  • Repeat with remaining wrappers and shrimp mixture. (Can be made 6 hours ahead. Cover; chill.).
  • Pour oil into heavy large pot to depth of 3 inches.
  • Heat to 350°F
  • Working in batches, add rolls to oil; deep-fry until golden brown, about 5 minutes.
  • Drain on paper towels.
  • Serve with sauce.
  • To make soy-ginger dipping sauce:.
  • Whisk all ingredients in bowl to blend. Makes about 1 cup.

Healthy and tasty! Often when I go to make a new recipe, I'll search and find sometimes 3 or more that sound good. I'll then make a combination of them, more than likely adding or omitting a few ingredients to suit my palate. This is one of those times. I really liked the resulting spring rolls and I hope you do too! Make sure that if you don't want to cook the wrappers, you get the ones that can be soaked for a few seconds in water, then made into a wrap and eaten immediately.

2 tablespoons vegetable oil
1 tablespoon garlic, minced
1/2 teaspoon ginger, grated
2 cups napa cabbage (aka Chinese, not regular cabbage)
1/2 cup bean sprouts
1/2 carrot, grated
2 scallions, finely sliced
2 ounces bean thread noodles, blanched and chopped
8 ounces chicken breasts, cooked and shredded
1 tablespoon oyster sauce
1 tablespoon hoisin sauce
2 tablespoons cilantro, chopped
10 vietnamese spring roll wrappers
1 egg, beaten
1/2 cup soy sauce
1/4 cup rice vinegar
2 tablespoons peanut oil
2 teaspoons light sesame oil
1 teaspoon garlic, minced
1 pinch sugar

Steps:

  • Combine all ingredients for the dipping sauce and set aside.
  • Heat oil in skillet or wok over high heat. Add the garlic, ginger, cabbage, carrot, scallions and bean sprouts. Cook for 2 minutes or until the cabbage is just limp.
  • Add the noodles and chicken; continue to cook until heated through.
  • Stir in the hoisin and oyster sauces; toss to coat the mixture. The filling should be moist, but not wet. Remove from heat and allow to cool. Toss in chopped cilantro.
  • Place a Vietnamese spring roll wrapper in a pan of hot (not boiling) water for about 15 seconds. Remove and place on plate. If using square wrappers, position one corner toward yourself. If round, it doesn't matter. :o).
  • Spoon 2 tablespoons of the filling near the bottom (or corner near you) of the wrapper and fold up to enclose the filling. Fold in the left and right sides, then roll up the remainder of the way.
  • Serve with Garlic-Soy Dipping Sauce.

  • For the spicy peanut sauce, first shake well your can of coconut milk. Then add all the ingredients, except water, to a pot and cook over medium heat. Stir as you cook until the sugar is dissolved and everything is heated through. Taste and add more red curry paste if you prefer (start with just 1 tablespoon). Then thin the sauce with water to the consistency you desire.
  • For the sweet and spicy sauce, first mince the garlic and finely chop the fresh chili if using. Remove some seeds if you prefer a less spicy sauce. In a sauce pan, combine the vinegar, 1/2 cup water, sugar, garlic, soy sauce, and chopped chili or pepper flakes. Cook over medium heat and stir well to dissolve the sugar. In a small bowl with a fork, whisk together the 1 tablespoon water and 2 teaspoons arrow root powder or corn starch. Whisk until combined well. Drizzle this into the pan and continue to cook until the sauce thickens and coats the spoon well. Remove from heat.
  • For the Yum sauce, simply combine all the ingredients except water in a small mixing bowl. Stir together. Taste and add more salt or seasoning you prefer. Then thin to your desired consistency with water.
