500 g / 1.1 lb pork mince
200 g / 0.4 lb shrimp ((minced using a cleaver))
30 g / 0.07 lb shiitake mushroom ((rehydrated and cut into thin strips))
10 g / 0.02 lb woodear mushroom ((rehydrated and cut into thin strips))
500 g / 1.1 lb taro ((cut into thin strips))
100 g / 0.2 lb carrot ((cut into thin strips))
100 g / 0.2 lb jicama ((cut into thin strips))
20 g / 0.04 lb green bean thread ((soaked in cool water and drained until dry))
200 g / 0.4 lb pork fat ((cut into cubes))
3 red shallots ((finely chopped))
1 onion ((finely chopped))
3 tsp sugar ((or to taste))
1 3/4 tbsp salt ((or to taste))
1/2 tbsp pepper
1/2 tbsp chicken bouillon powder
1 tbsp fish sauce
2 tbsp oil
2 eggs
5 packets spring roll wrapper ((one packet has roughly 50, depending on the brand))
1 egg white ((for sealing each roll))
cooking oil ((for frying))

Steps:

  • Mix all the filling and seasoning ingredients together in a large mixing bowl.Pro Tip: Use plastic glad wrap to cover the bowl's top as you wrap so that it doesn't become dry during the process. This also means you can seal it for the fridge if you don't end up using it all.
  • Put the wrapper on the plate with a corner pointing to you. Spoon about 1 1/2 tsp of the filling into the center of the wrapper and squeeze it to make a log.
  • Fold the bottom corner up and over the mince, then pull the log gently towards you to remove any air bubbles.
  • Fold the left and right corners into the center.Note: Wrap the wrapper all the way to each end of the log so there are no gaps. Keep in mind that the shape of your mince log will determine how long your Chả Giò ends up being.
  • Roll tightly from the bottom up until there's a small triangle left.
  • Dip your finger into the egg white and smear some of it on the tip of the triangle.
  • Complete the roll by rolling it upward until you have a sealed Chả Giò. Place each finished one on a plate or a tray to fry.Note: If you don't plan on frying them straight away, pack them into freeze-safe bags and let them freeze until you're ready to cook them.
  • Bring the oil in a pot to a medium-high heat and gently place the spring rolls in to cook for 5 minutes or until golden.
  • Enjoy them fresh as is or serve it with a classic Vietnamese Dipping Sauce (Nước Mắm)!

Cha gio When Noi came to America in 1975, banh trang - Vietnamese rice flour wrappers - weren't available, so the use of wheat wrappers from Singapore and China became widespread throughout the immigrant community. While it's easier to get banh trang these days, Noi still uses the wheat wrappers for this recipe.

For nuoc cham dipping sauce
5 1/2 tablespoons sugar
3/4 cup warm water
1/4 cup plus 1 tablespoon Asian fish sauce (preferably from Phu Quoc)
2 tablespoons rice vinegar (not seasoned)
2 teaspoons fresh lime juice (optional)
2 garlic cloves, minced
2 fresh Thai chiles (2 to 3 inches; preferably red; including seeds), thinly sliced crosswise
For spring rolls
7 1/2 oz very thin bean thread noodles (in small skeins, also known as cellophane or mung bean noodles*)
2 oz dried wood ear mushrooms
1 medium shallot
2 garlic cloves
2 cups grated carrots (4 to 5 carrots)
1 lb ground pork shoulder
1/4 cup Asian fish sauce (preferably from Phu Quoc)
1/4 cup plus 1 teaspoon sugar
2 1/2 teaspoons black pepper
2 teaspoons salt
1 lb shrimp in shell, peeled and deveined
25 (8-inch) square frozen spring roll pastry wrappers made with wheat flour, thawed
1 large egg yolk, lightly beaten
About 6 cups vegetable oil
Accompaniments: lettuce leaves and fresh mint and cilantro leaves

Steps:

  • Make dipping sauce:
  • Stir together sugar and water until sugar is dissolved. Stir in remaining sauce ingredients, then chill, covered, at least 2 hours.
  • Prepare filling:
  • Put noodles in a large bowl and cover with hot water by several inches. Soak, pulling noodles apart and stirring occasionally, 10 minutes. Drain noodles and cut into 2- to 3-inch pieces (you should have about 3 cups), then transfer to another large bowl.
  • Put mushrooms in a bowl and cover with hot water by several inches. Soak 15 minutes. Drain and rinse mushrooms thoroughly, then drain again. Trim off and discard any hard parts from mushrooms. Finely chop mushrooms. (You should have about 2 cups.) Add to noodles.
  • Pulse shallot and garlic in a food processor until finely chopped, then add to noodles along with carrots, pork, fish sauce, sugar, pepper, and salt. Pulse shrimp in processor until coarsely ground. (Do not overprocess or it will become pasty.) Add shrimp to noodle mixture. Mix with your hands until well combined. Chill filling, covered with plastic wrap, until cold.
  • Assemble rolls:
  • Line 2 trays with wax paper.
  • Transfer one fourth of filling to a small bowl and keep remainder chilled, covered. Place 1 wrapper on a work surface, keeping remaining wrappers covered with a clean kitchen towel (to prevent them from drying out). Cut wrapper diagonally in half to form 2 triangles. With long side of 1 triangle nearest you, put 2 tablespoons filling along middle of long edge of triangle, and shape filling into a thin 5-inch log. Fold left and right corners of wrapper over filling, overlapping slightly and aligning bottom edges. (Wrapper will resemble an open envelope.) Dab top corner with yolk, then roll up wrapper away from you into a long thin roll, making sure ends stay tucked inside. Place on a tray, seam side down. Repeat with remaining triangle. Make more rolls in same manner with remaining wrappers and filling, keeping trays of rolls chilled, loosely covered, until ready to fry.
  • Heat 1 1/2 inches of oil in a 5- to 6-quart pot over moderately high heat until it registers 365°F on thermometer. Fry rolls in batches of 5 or 6, keeping rolls apart during first minute of frying to prevent sticking, until golden brown and cooked through, 4 to 5 minutes. (Return oil to 365°F between batches.) Transfer as fried to a colander lined with paper towels and drain rolls upright 2 to 3 minutes. To eat, wrap hot or warm rolls in lettuce leaves and tuck in mint and cilantro leaves. Serve with dipping sauce.

Stashing for when we are looking beyond classic Maryland-style steamed crabs or wonderful crab cakes - that'll be quite a bit later in summer LOL. Received this recipe in am email from gourmet-recipes-from-around-the-world. The poster, ifourc, notes pork and shrimp cha gio can be made by using 1 pound ground pork and 1/2 pound shrimp. 1-1 1/2 ounces of thin cellophane noodles, chopped into 1/2" pieces and soaked in water until soft, is a common ingredient and can also be added to the mixture.

2 garlic cloves, minced
2 carrots, small dice
6 green onions, thinly sliced
1/2 head cabbage, thinly sliced
4 -5 shiitake mushrooms, stems removed, diced
1 lb shrimp, shelled and deveined
4 tablespoons soy sauce
1 teaspoon sesame oil
1/2 teaspoon sugar
1/2 teaspoon black pepper
1/2 lb crabmeat
1 egg, separated
1 (8 inch) package spring roll wrappers

Steps:

  • Blanch cabbage and place into ice bath. Drain and squeeze out excess water. In a large bowl, mix together garlic, carrots, green onions and cabbage.
  • Chop shrimp into small pieces. To the large bowl, add shrimp, soy sauce, sesame oil, sugar, and black pepper and mix. Add crab meat and egg white to mixture and combine evenly.
  • Brush egg yolk on three corners of wrapper. Add 2 tablespoons of filling in center of wrapper, diagonally. Fold the two sides on the diagonal over the filling. Fold the non-egg yolk corner over and tuck snugly under filling and roll up.
  • Deep fry the spring rolls in peanut oil at 350°F for 4-5 minutes or until golden brown. Work in batches. Flip half way through. Remove and place on paper towels to absorb excess oil. Eat with nuoc cham.

1 ounce dried bean thread noodles, soaked in hot water for 30 minutes, drained, and cut into 1/2-inch pieces with a scissors (about 2/3 cup)
1 tablespoon dried tree ear mushrooms, soaked in hot water for 30 minutes, drained, and stems trimmed and chopped with a scissors
2/3 cup finely minced yellow onion
2 carrots, grated
3 green onions, thinly sliced
2 eggs
2 tablespoons fish sauce
1/2 tablespoon minced garlic
1/4 teaspoon salt
2 teaspoons sugar
1/2 teaspoon ground black pepper
1/2 pound ground chicken
1/2 pound ground pork
ASSEMBLING AND FRYING
2 tablespoons cornstarch
1/3 cup water
15 thin spring roll wrappers such as Menlo brand

Steps:

  • Combine the bean thread noodles, mushrooms, onion, carrots, and green onions in a mixing bowl. Set aside.
  • Beat the eggs in a large bowl. Mix in the fish sauce, garlic, salt, sugar, and black pepper. Add the chicken and pork and using a fork, break up the meat, so it is thoroughly mixed with the seasonings. Add the noodle mixture and mix well. Set aside.
  • Combine the cornstarch and water in a small saucepan. Bring to a boil over low heat and stir often to prevent sticking. If mixture seems too thick, add more water. This will be the "glue" to seal the edges of the wrapper.
  • Cut the wrappers in half diagonally. You will have two equal triangles. Starting with the longest side toward you, place about 2 tablespoons of filling on the bottom area of the triangle. Using your fingers, mold the filling into a cylinder 2 inches long and 1 inch wide. Fold the two pointed ends of the wrapper in and roll to enclose. Dab a little cornstarch mixture along the edges (do not use too much "glue") and seal the roll. Set aside while you finish making the remaining rolls. Do not stack them.
  • To fry, preheat a large wok or fry pan. When hot, pour enough oil in to completely cover the spring rolls. Heat to about 325 degrees. Carefully place the rolls into the oil. Do not crowd the pan or place the rolls on top of each other. Fry the spring rolls until filling is cooked, about 5 to 6 minutes on each side, turning often until they are nicely brown and crisp. If they brown too quickly, reduce the heat as the oil is too hot. Remove the cooked spring rolls from the pan and drain on paper towels. Serve immediately with dipping sauce and table salad .
  • To enjoy a spring roll the Vietnamese way, put it on a lettuce leaf, top with cucumber and mint, and wrap it up. Then dip in Vietnamese dipping sauce.

6 dried Chinese mushrooms
1/2 cup cellophane noodle
1 lb ground lean pork
2 garlic cloves, finely chopped
1/4 cup onion, finely chopped
2 small carrots, finely grated
2 eggs, lightly beaten
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup fish sauce (nuoc mam)
3 tablespoons lemon juice
1 tablespoon sugar
1 garlic clove, finely chopped
2 teaspoons fresh gingerroot, finely chopped
1/2 teaspoon ground coriander
3 tablespoons water
36 rice paper (1 package)
2 cups peanut oil or 2 cups corn oil

Steps:

  • Soak mushrooms and cellophane noodles (in a separate bowl) in warm water for 30 minutes.
  • MAKE DIPPING SAUCE: Combine all ingredients in a bowl, add 3 Tablespoons water and refrigerate. If you like it hot add 4-5 paper-thin rings of fresh habanero or scotch bonnet chili to the sauce.
  • MAKE THE FILLING: Drain mushrooms and noodles thoroughly. Chop mushrooms finely and cut noodles into 1 inch lengths. In a bowl combine with the pork, garlic, onion, carrot, eggs, salt and pepper.
  • Brush rice paper rounds generously with water to soften. Cut in quarters with scissors. Place 1 teaspoon filling on curved end of each quarter. Fold curved edge over fill, fold in sides and continue rolling, sealing the finished roll with more water, if necessary. Repeat until all the filling has been used.
  • Heat oil in wok or large fry pan to 375°F Fry rolls a few at a time until crisp, about 6 to 8 minutes. Drain on paper towel and serve with sauce for dipping.
  • The cooked rolls may be frozen. Re-heat frozen rolls in a 400°F oven for 20 minutes before serving.

1/2 cup finely chopped fresh chicken meat
1/2 cup rehydrated dried black fungus
1/2 cup cooked bean threads
1/2 cup chopped white onion
1/2 cup fresh crabmeat
1/2 cup raw chopped shrimp
1/2 cup shredded carrot
1/2 cup bean sprouts
1 egg
fish sauce, to taste
1/4 teaspoon white pepper
8 sheets rice paper, round (or more, as needed)
vegetable oil (for frying)
assorted fresh vegetable, and herb platter to eat with spring roll (red leaf lettuce, mint, cilantro, basil.)
1/4 cup shredded carrot
crushed red pepper sauce, to taste (Tuong Ot Toi)
1 tablespoon lemon juice
1 teaspoon granulated sugar
1/2 cup boiling water
fish sauce, to taste

Steps:

  • For filling: In a bowl, mix together the chicken, black fungus, bean threads, white onion, green onion, crab meat, shrimp, carrots, bean sprouts, egg, fish sauce and white pepper. Set aside.
  • Dip each sheet of rice paper in warm water and place on a clean towel, just as you are ready to fill and roll.
  • Put sheet on a flat surface. Put about 1/4 cup filling across bottom 1/3 of rice sheet. Fold 1/3 of sheet on left side over mixture and repeat with the right side. Starting at the bottom, carefully roll up as tightly as possible. Place spring rolls on platter.
  • When all spring rolls are completed, heat 1 to 2 inches of vegetable oil in a wok or deep skillet to 350 degrees. Place spring rolls in the hot oil folded side down to keep them from breaking. Cook 2 to 4 minutes per side or until they are a golden brown and ends are brown indicating that the ingredients are done. Drain and serve immediately.
  • For dipping sauce: Put carrots, crushed red pepper sauce, lemon juice and sugar in a small serving bowl. Pour the boiling water over the ingredients. Add the fish sauce to taste. Stir to mix. Serve.
  • Makes about 8 spring rolls.

3 1/2 ounces rice noodles
1 egg
1 lb ground pork
3 carrots, peeled and shredded
1 small onion
2 tablespoons fish sauce
1/2 teaspoon pepper
1/4 cup chopped scallion
1 lb spring roll wrappers, lumpia thawed (spring roll wrappers about 25)
1/2 cup vegetable oil
1 extra egg

Steps:

  • soak noodles in hot water and let soften. drain well and cut into 2" lengths and set aside. In large bowl beat eggs well add noodles, pork, carrots, onion, fish sauce, pepper and scallions, mix well. Place wrapper on flat surface and add large spoonfull of mix and roll up once tuck in sides and roll up the rest of way. (Sometimes helpfull to take an extra egg and beat and use to seal the edge of wraper.) In large skillet or wok heat oil over medium heat for 1 minute Put spring roll into oil and fry 8-10 min or until golden brown. If using a deep fryer heat oil to about 350 and fry for 2-3 minute If doing a large amount of spring rolls keep donw spring rolls in oven a@ 200 degrees while frying the rest. Most like served with soy sauce.

This is a very popular Vietnamese fast-food-style dish but unlike Western fast-food it's slightly more healthy... (esp. if you skip the spring rolls and use bbq meat instead) If you don't want to cook spring rolls, you can use Thai fish cakes, grilled pork/beef/chicken, prawns or tofu. Pretty much any protein at all. Or you can just eat the noodles and salad on their own. In my photo I have used home made fish cakes instead of spring rolls, but I think spring rolls makes the tastiest version of this recipe. You will have a lot of extra spring rolls! You can freeze them without cooking them for later if you want.

10 sheets spring roll wrappers (for fried spring rolls)
200 g ground pork
100 g dried rice vermicelli
2 spring onions
1 tablespoon hoisin sauce
1/3 cup dried shiitake mushroom
2 garlic cloves
1 carrot, chopped roughly
1 egg
1 egg white
1 pinch salt
1 teaspoon ground black pepper
vegetable oil, 2 cups for frying
1 cup baby cos lettuce
1/4 cup chopped coriander
1/4 cup chopped mint
1/4 cup crushed peanuts
1/3 cup chopped cucumber
1/4 cup fried shallots (bought already cooked in a packet in Asian aisle)
1 small red chili pepper
1 tablespoon fish sauce
1 lime, juice of
1 teaspoon sugar, dissolved in
1 tablespoon boiling water
1 cup bean sprouts

Steps:

  • Soak the mushrooms in boiling water til soft.
  • Soak 20 g of the rice vermicelli in boiling water til soft.
  • Put in a food processor: softened rice vermicelli, softened mushrooms, pork mince, garlic, spring onions, carrot, egg, salt, pepper and hoi sin sauce and blend quickly (not til it's a paste).
  • Cut spring roll pastry (if in large sheets) into squares, about 10 - 15 cm on each side.
  • For each square, turn so point is downwards.
  • Place spoon of mixture just below centre of square and shape into a little log (not all the way to the edges though).
  • Take bottom point and fold over mixture, tucking in on opposite side.
  • Roll upwards one full roll.
  • Fold each side point into middle.
  • Finish rolling around top point and glue shut with egg white.
  • Heat vegetable oil to high, test it's hot enough by dropping in a small piece of pastry - if it bubbles it's ready.
  • Cook spring rolls in oil til golden brown.
  • Place cooked spring rolls on kitchen towel to drain oil.
  • Put lettuce, sprouts, cucumber, chopped herbs in a large single-size serving bowl.
  • Heat up a litre of water to boiling.
  • Cook remaining rice vermicelli (will only take a couple minutes).
  • Drain vermicelli in a colander, rinse with lukewarm water.
  • Place rice vermicelli over greens in bowl.
  • Sprinkle peanuts and fried shallots over the top.
  • Slice spring rolls into bite size pieces and place on top.
  • Combine sugar-water, fish sauce, chopped red chili and lime juice in a bowl and then pour over noodle dish.
