4 to 5 tablespoons extra-virgin olive oil
8 large cloves garlic, very thinly sliced
Kosher salt
4 ounces pancetta, cubed
3/4 pound spinach leaves
1 tablespoon apple cider vinegar

Steps:

  • Gently heat the olive oil in a small skillet over medium-low heat and add the garlic slices. Cook, stirring with a slotted spoon so the garlic slices gently cook and become crispy, and remove them as they brown. Drain on a kitchen towel and sprinkle with salt.
  • Heat a couple of spoonfuls of the oil from the garlic in a large skillet over medium heat and add the pancetta. Cook until the pancetta becomes crispy, then remove with a slotted spoon and set aside. Add the spinach to the same skillet and season with salt. Toss lightly so the spinach gets coated with the oil and wilts slightly, about 1 minute. (The spinach should only be partially wilted and still appear somewhat raw.)
  • Pour off any water that might accumulate in the bottom of the skillet and stir in the vinegar and pancetta. Transfer to a serving bowl and top with the garlic chips. Serve immediately.

Steps:

  • Heat a large skillet over medium. Add pancetta; cook until crisp, 4 to 6 minutes. With a slotted spoon, transfer pancetta to a paper-towel-lined plate; reserve fat in skillet.
  • Add as much spinach as will fit in skillet; season with salt and pepper. Cook, tossing spinach and adding more as it wilts. Continue to cook until tender, about 2 minutes. Remove from heat, and pour off excess liquid; stir in lemon juice. Top with pancetta.

6 ounces pancetta, cut into 1/8-inch-thick slices
1/2 cup (1 stick) unsalted butter, at room temperature
2 cups (8 ounces) shredded Monterey Jack cheese
2 cups (8 ounces) shredded mild Cheddar
1 teaspoon kosher salt
1 tablespoon vegetable or canola oil, plus extra, as needed
2 packed cups coarsely chopped baby spinach
16 (1/3-inch-thick) slices country-style white bread

Steps:

  • Put an oven rack in the center of the oven. Preheat the oven to 400 degrees F.
  • Spray 2 baking sheets with cooking spray. Lay the pancetta in a single layer on the prepared baking sheets and bake until crispy and brown, about 12 to 14 minutes. Drain on paper towels. Cool for 5 minutes and crumble. Set aside.
  • In a food processor, combine the butter, cheeses, salt, and 1 tablespoon vegetable oil. Blend until smooth, adding extra oil, as needed, until the mixture is spreadable. Add the spinach and pulse until just combined.
  • Preheat a panini maker. Spread the cheese mixture over 8 slices of bread. Top with the crumbled pancetta. Put the remaining bread slices on top. Grill the sandwiches, 2 at a time, until golden and crispy, about 3 to 4 minutes. Cool for 2 minutes, then cut each sandwich in half and arrange on a platter.

1 1/4 pounds spinach in bulk or 3/4 pound spinach packaged in plastic
2/3 cup (about 1/4 pound) small cubes of pancetta, unsmoked Italian bacon, available in Italian food shops, or use smoked lean bacon
1 small red onion, peeled
Salt to taste, if desired
Freshly ground pepper to taste
1 teaspoon freshly squeezed lemon juice

Steps:

  • Rinse the spinach well and drain it. Remove tough stems, center membranes and blemished leaves. There should be about 10 cups reasonably well-packed. Break the spinach into two-inch pieces
  • Heat the pancetta in a skillet and cook until rendered of fat.
  • Cut the onion into quarters. Cut each quarter crosswise into the thinnest possible slices. Add the onion pieces to the pancetta in the skillet. Add the spinach and cook, stirring, until it is wilted. Add salt, pepper and lemon juice and cook about one minute. Serve immediately.

6 cups loosely packed stemmed baby spinach
1/2 cup (5 ounces) fresh goat cheese (recommended: Laura Chenel)
1/3 pound thick-sliced pancetta, cut into strips about 1 inch long and 1/4 inch wide
Extra-virgin olive oil
1 tablespoon minced garlic
2 teaspoons minced fresh thyme leaves
1/4 cup sherry vinegar
Sea salt
Freshly ground black pepper
1/2 cup dried cranberries

Steps:

  • Put the spinach in a large bowl. Crumble the cheese over the spinach. Cook the pancetta in a medium skillet over medium heat until crispy, 8 to 10 minutes, stirring occasionally. Drain the pancetta in a sieve set over a heatproof measuring cup, reserving the rendered fat. You will need 1/4 cup for the dressing. If necessary, add enough olive oil to make 1/4 cup. Pour the fat back into the pan and add the pancetta. When the pancetta is warm again, add the garlic and cook until light brown, about 30 seconds, stirring occasionally. Add the thyme and let it crackle in the fat for about 10 seconds. Add the vinegar, and season with salt and pepper, to taste. Cook for about 30 seconds to lower the acidity of the vinegar. You should see tiny drops of vinegar dispersed throughout the fat. Add the dried cranberries and stir. Pour the dressing over the spinach and cheese. Toss to coat the leaves evenly and melt the cheese a little. Serve immediately.

Steps:

  • Place spinach in large bowl, set aside. In small bowl, combine balsamic vinegar, olive oil, salt and pepper. Set aside. In large saute pan, cook pancetta over medium-high heat until almost crisp, about 5-7 minutes. Do not drain fat. Add pine nuts and cook, stirring constantly for about 1 minute. Add grapes and red onions; continue to cook for 1 minute. Add balsamic dressing and bring to a boil, about 30 seconds. Turn off heat and pour hot dressing over spinach. Toss quickly to coat leaves. Salad should be barely warm. Sprinkle with parmesan shavings and serve.

1/2 medium red onion, thinly sliced
2 tablespoons olive oil
8 ounces white mushrooms, sliced

1/4 cup red wine vinegar
1 tablespoon honey
1/2 teaspoon Dijon mustard
Freshly ground black pepper
2 ounces pine nuts, toasted (about 1/3 cup)

Steps:

  • Combine the spinach and red onions in a large bowl.
  • Heat the olive oil in a medium saute pan over medium-high heat until hot and shimmering. Add the mushrooms and salt to taste, and cook, stirring with a wooden spoon, until they start to release their moisture and begin to shrink, 2 to 3 minutes. Now let the mushrooms cook undisturbed until their liquid evaporates and they have turned deep golden brown on one side, 5 to 7 minutes. Stir and continue cooking until nicely browned on both sides, 3 to 5 minutes more. With a slotted spoon, remove the mushrooms from the pan and toss with the spinach and onions.
  • In a separate, heavy-bottomed saucepan, cook the pancetta over medium-low heat until dark and crispy, about 15 minutes. Remove from the pan with a slotted spoon and reserve.
  • To the rendered fat in the pan, add the vinegar, honey and mustard. Bring to a boil and whisk to combine. Add salt and pepper to taste and then pour the warm dressing over the spinach, mushrooms and onions. Add the reserved pancetta and toss to distribute the heat and dressing.
  • Serve in a salad bowl, garnished with pine nuts.

1 lb oricchette pasta (little ears or bow tie would work fine or small shells)
2/3 cup pancetta, diced
1 onion, medium and finely chopped
20 ounces cannellini beans, drained and rinsed (1 1/2 cans)
5 plum tomatoes (lightly seeded and chopped)
5 -6 ounces Baby Spinach (1 bag of fresh spinach)
5 teaspoons of minced garlic
1/2 teaspoon red pepper flakes (adjust as to how much heat you want)
1/2 cup dry white wine (chardonney or chablis)
1/2 cup chicken broth
1/4 cup parsley, chopped
1 tablespoon kosher salt
1 teaspoon black pepper
3 tablespoons olive oil, to (1 to saute the vegetables, 2 for the spinach)
1 tablespoon butter
1 cup grated parmesan cheese
4 tablespoons olive oil

Steps:

  • Bean sauce -- In a large saute pan, add 1 tablespoon of the olive oil and saute the pancetta until lightly brown. Then add the onion, red pepper flakes and continue cooking until the onion is slightly soft and translucent. Then add the beans, salt and pepper, wine, chicken broth, and parsley. Simmer 10-15 minutes on low. Mash up the beans slightly with a fork. The beans will naturally thicken the sauce.
  • Pasta -- While the beans cook, start cooking your pasta according to directions.
  • Spinach -- Now . while the beans simmer and the pasta cook, lets make the spinach. In a large skillet heat the 2 tablespoons olive oil and butter. Add the garlic and cook just a minute until lightly browned, then add the tomatoes and cook 3-4 minutes until they start to break down. Next, add the spinach and cook until lightly wilted just a couple of minutes, not too long. Add additional salt and pepper and cook until spinach is slightly wilted.
  • Combine -- Drain the pasta, (reserve a little of the water) and toss with the bean mixture, parmesan cheese, and the spinach mixture. Add a little of the pasta water if you would like a little more sauce. I also like to drizzle just a bit of good olive oil the top. ENJOY!
  • Some good toasted baguettes are perfect with this. Just topped with a little olive oil is all.

Reduce the heat to moderately low and simmer until reduced to 2 1/4 cups, about 15 minutes. Remove from the heat and stir in 1/4 cup of the Parmesan cheese. Season with salt and pepper.
  • In a large skillet, cook the pancetta in the remaining 2 tablespoons butter over moderately high heat until slightly crisp, 3 to 4 minutes. Add the spinach in batches and cook, tossing, until wilted. Season with salt and pepper.
  • Preheat oven to 350 degrees F. Cook the pasta shells in a large pot of rapidly boiling salted water until barely al dente, about 7 minutes. Drain.

2 tablespoons olive oil, divided

Steps:

  • Preheat the oven to 375 degrees F.
  • For the shells: Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 10 minutes. Drain pasta. Toss with 1 tablespoon olive oil and allow to cool before stuffing.
  • Warm 1 tablespoon olive oil in a large, heavy skillet over medium heat. Add the pancetta and cook until lightly golden, about 5 minutes. Remove the pancetta from the pan with a slotted spoon and transfer to a large bowl.
  • Add the spinach, onion, garlic, parsley, ricotta cheese, asiago cheese, pepper, and nutmeg. Stir to combine.
  • Stuff the shells with about 2 tablespoons of the spinach mixture each and place the stuffed shells in a large, buttered baking dish.
  • For the sauce: Melt the butter in a medium saucepan. Add the garlic and cook for 1 minute.
  • Add the cream and bring to a simmer.
  • Turn the heat to very low and add the 2 cups asiago cheese, parsley, and pepper. Stir until the cheese is dissolved.
  • Pour the sauce over the shells. Top with the remaining 1/4 cup asiago cheese.

  • Sauté pancetta in nonstick skillet over medium heat until crisp, about 6 minutes. Drain on paper towels. Pour drippings in skillet into bowl. 500g pack gnocchi
1 garlic clove, sliced
1 tbsp olive oil
100ml double cream
freshly grated nutmeg
130g pack smoked pancetta cubes
100g spinach
zest ½ lemon
25g parmesan, grated, plus extra for serving
25g toasted pine nut

Steps:

  • Cook the gnocchi following pack instructions, then drain. Meanwhile, heat 1 tsp of the oil in a small pan and fry the garlic, then add the cream and a good grating of nutmeg. Put to one side.
  • Heat 2 tsp of the remaining oil in a frying pan and cook the pancetta until crisp. Add the gnocchi and fry until it starts to turn golden, adding a little more oil if it begins to stick. Stir in the spinach, lemon zest and seasoning.
  • Stir the Parmesan into the cream sauce. Spoon the gnocchi onto plates, drizzle over the sauce and scatter with pine nuts. Serve with extra Parmesan.

With its thick, ruffled leaves and almost mineral flavor, mature spinach (as opposed to those ubiquitous baby leaves) does the job well. If you can't find it, you can substitute baby spinach, though it will wilt when it makes contact with the hot eggs. Or try kale, which also holds up nicely. 1/4 cup parmesan cheese
4 ounces pancetta, diced
1 small onion, diced
1 pinch nutmeg
salt
pepper

Steps:

  • Preheat oven to 350 degrees, and spray a 9 inch pie dish with non-stick cooking spray.
  • Squeeze all the water out of the frozen spinach and put the spinach in a large bowl. Put the shredded cheeses in the bowl, along with the nutmeg and salt and pepper to taste.
  • Lightly beat the eggs and add the milk. Combine the egg-milk mixture with the spinach-cheese mixture.
  • Brown the pancetta cubes in a medium skillet. Drain the pancetta cubes on paper towel, then add to the bowl with the spinach and eggs.
  • Brown the onion in the drippings in the skillet used to cook the pancetta. Drain the onions on the paper towels and add to the spinach and eggs.
  • Pour the mixture into the prepared pie dish, and bake for 35-40 minutes, or until a knife inserted into the center comes out clean. Let cool for 10 minutes before cutting into 6 wedges.

  • In a large heavy bottom pot over medium heat add your butter, olive oil, shallots and pancetta and cook until the pancetta is very crispy. This is important. You want it to the point it is just starting to brown like crispy bacon (5-10 minutes).
  • Now add your baby spinach to the pot and mix well making sure to coat your spinach in the pancetta and olive oil mixture. Cook until your spinach just begins to wilt.
  • Now add your salt and toss your spinach around in the pan again just to make sure you get all of the bits of pancetta and shallot from the bottom of the pan incorporated into your spinach.
