Steps:
- Preheat the oven to 375 degrees F. Lightly butter 6 (6-ounce) ramekins.
- Whisk the oats, flour, brown sugar, pecans, and salt in a medium bowl. Rub in the butter with your fingertips until it is in even, pea-size pieces. Peel, core, and coarsely chop the apples and divide evenly among the ramekins. Scatter the crisp topping evenly over the fruit in each ramekin.
- Transfer the ramekins to a baking sheet and cook until the fruit bubbles around the sides and the top is golden, about 30 minutes.
- Preheat a broiler. Place the crisps about 4 inches from the broiler and cook until golden brown, about 30 seconds. Let cool about 15 minutes before serving. Serve warm with whipped cream, if using.
- In our diabetic-friendly desserts, we use small amounts of sweeteners in accordance with guidelines set up by the American Diabetic Association. As with all sweets, moderation is important.

Steps:
- Sift flour and 1/2 teaspoon salt together.
- Cut in the butter until the mixture resembles coarse cornmeal.
- Add 3 tablespoons water and 3 tablespoons cream together until blended.
- Turn onto a floured board.
- Roll out to fit a 15x10 inch pan; I would use a 9x13 pan. This is a very old recipe and they used different pans back then.
- Arrange 8 apples (peeled, cored, and sliced,) on dough sprinkled with 1/2 cup sugar and 1/2 teaspoon cinnamon.
- Dot with 2 tablespoons butter.
- Bake 25 minutes at 375 degrees Fahrenheit.
- Blend together 1 egg slightly beaten, 1/2 cup cream (sweet or sour), 1/2 cup sugar, 1/8 teaspoon salt and 2 cups coconut, flaked.
- Spoon this mixture over apples.
- Bake 20 minutes more 375 degrees Fahrenheit. No temperature was given so I am guessing.

APPLE STRIPS
Bar-sized apple pie. When I make this recipe, I sub greek yogurt for the sour cream and add more than stated - until it is a good texture to roll. Also, I roll between 2 sheets of waxed paper, peel the top piece, lay back down, flip over, peel the other sheet and flip onto pan.
