Provided by Aimee Shugarman

Categories     Muffins

Time 27m

Number Of Ingredients 11

1 cup packed, shredded zucchini (about 2 small zucchini)
4 oranges, divided
1/2 cup unsalted butter, softened
1 1/2 cups granulated sugar
1 tsp vanilla extract
1 large egg
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp kosher salt
2 cups powdered sugar
1/4 cup of orange juice (from the oranges above)

Steps:

  • Preheat oven to 425 degrees F. Grate zucchini and set aside.
  • Zest one orange, and juice all the oranges. You'll need 3/4 cup orange juice total, 1/2 cup for the muffin batter, and 1/4 cup for the glaze.
  • In a large bowl, cream together the butter and sugar. Add in vanilla extract and egg. Beat in the orange zest and 1/2 cup of orange juice.
  • Add flour, baking soda and salt, just until combined. Fold in the shredded zucchini.
  • Line a muffin pan with cupcake wrappers or spray with baking spray. Use a large scoop and add batter.
  • Bake in 425 degree oven for 5 minutes. After 5 minutes, reduce heat to 350 (without taking muffins out) and cook for an additional 10-12 minutes, or until a toothpick inserted in the middle comes out clean.
  • While the muffins cool, make the glaze with whisking powdered sugar with 1/4 cup orange juice until desired consistency. If it's too thin add a little more powdered sugar. Drizzle over cooled muffins.

ZUCCHINI MINI MUFFINS WITH ORANGE-MAPLE GLAZE

Zucchini Mini Muffins with Orange-Maple Glaze image

Provided by Melissa d'Arabian : Food Network

Time 45m

Yield about 36 mini muffins

Number Of Ingredients 17

1 1/2 cups all-purpose flour
1 cup whole wheat flour
1/2 cup wheat germ
1 cup dark brown sugar
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
1 tablespoon ground cinnamon
Salt
1 cup finely shredded zucchini, patted dry of excess moisture (about 1 medium)
2 eggs, lightly beaten
3/4 cup milk
1/2 cup applesauce
1/4 cup canola oil
1 teaspoon pure vanilla extract
4 ounces cream cheese, at room temperature
Zest and juice of 1 medium orange
2 tablespoons pure maple syrup

Steps:

  • For the muffins:
  • Preheat the oven to 325 degrees F. Prepare a mini muffin tin with paper liners.
  • In a large mixing bowl, add the all-purpose flour, whole wheat flour, wheat germ, brown sugar, baking soda, baking powder, cinnamon, and 1/4 teaspoon salt. Whisk well to combine, making sure there are no lumps in the mixture.
  • In a separate bowl, add the zucchini, eggs, milk, applesauce, canola oil, and vanilla. Whisk well to combine, making sure that the eggs are incorporated properly.
  • Pour the wet ingredients into the dry ingredients and mix until just combined, taking care not to overmix. Place the batter into the prepared muffin tins, filling them to the brim of the liner, about 1 tablespoon. Place into the oven and bake until a toothpick inserted into the middle of a muffin comes out clean, about 15 minutes.
  • For the glaze:
  • Meanwhile, in a small bowl, mix the cream cheese, orange zest, orange juice, and maple syrup.
  • Remove the muffins from the oven and cool on a wire rack for 15 minutes. When ready to glaze the muffins, dip the tops of them, 1 by 1, into the glaze, turning the muffin in a circle to coat the top evenly. Serve, or store in an airtight container for up to a week. Alternatively, prior to glazing, freeze for up to 1 month.

ZUCCHINI MUFFINS

Zucchini Muffins image

SHERYL: _The first time Wyatt had one of Chuck's zucchini muffins it was as if he'd died and gone to muffin heaven. I was thrilled, of course, because I knew he was actually eating zucchini without the fuss factor. Now, the first thing out of his mouth every morning is, "I want a keenie muffin!" Being the creature of habit that he is, I believe he would start every day with one of Chuck's muffins, and the nice thing about it is that Mommy can make them, too!_

Provided by Sheryl Crow

Yield Makes 12 muffins

Number Of Ingredients 12

2 large eggs, preferably omega-3 eggs, beaten
1/3 cup packed light brown sugar
2 teaspoons pure vanilla extract
3 cups grated fresh zucchini
2/3 cup canola oil, preferably expeller-pressed, plus more for greasing the muffin tins
2 teaspoons baking soda
1/2 teaspoon salt
3 cups unbleached all-purpose flour
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 cup chopped pecans
1 cup golden raisins

Steps:

  • 1. Preheat oven to 350°F.
  • 2. In a large bowl, whisk together the eggs, brown sugar, and vanilla. Stir in the grated zucchini, canola oil, baking soda, and salt.
  • 3. In a separate bowl, whisk the flour with the cinnamon and nutmeg. Add the dry ingredients to the zucchini mix and stir well. Finally, stir in the pecans and raisins.
  • 4. Grease a 12-cup muffin tin with canola oil. Spoon the batter into the cups to fill them about 3/4 of the way. Bake for 25 to 30 minutes or until a toothpick or small knife inserted in a muffin comes out clean. (Alternatively, spoon the batter into a 8 x 5 x 3-inch loaf pan. Bake for 50 to 55 minutes or until the top of the loaf cracks and a toothpick or small knife inserted in the center of the loaf comes out clean.)
  • 5. Transfer the pan to a wire rack to cool for about 20 minutes. Then run a small paring knife around each muffin and remove them from the muffin tin.
