2 packages (10 ounces each) fresh spinach, torn
1 pint cherry tomatoes, halved
2 ripe avocados, peeled and sliced
1 package (5 ounces) frozen cooked salad shrimp, thawed
3/4 pound fresh mushrooms, sliced
3 hard-boiled large eggs, chopped
1/2 cup sesame seeds, toasted
1/4 cup shredded Parmesan cheese
CREAMY DRESSING:
2 cups sour cream
1 cup mayonnaise
1/4 cup finely chopped onion
2 tablespoons sugar
2 tablespoons white vinegar
1 teaspoon salt
1/2 teaspoon garlic powder

Steps:

  • In a large bowl, toss the spinach, tomatoes, avocados, shrimp, mushrooms, eggs and sesame seeds. Sprinkle with Parmesan cheese. In a small bowl, combine the dressing ingredients. Pour over salad and toss to coat.

1 cup fresh mushrooms, sliced
1 teaspoon sesame seeds
1 garlic clove, minced
2 teaspoons olive oil or 2 teaspoons vegetable oil
2 tablespoons vinegar
1 teaspoon honey
1 teaspoon soy sauce
1/8 teaspoon pepper

Steps:

  • For the salad, just toss the ingredients in a salad bowl and set aside to prepare the dressing.
  • To make the dressing, cook the sesame seeds and garlic in the oil in a small skillet for 1 minute (not too hot or garlic will pop and splatter).
  • Remove from heat and stir in rest of the ingredients.
  • Cool slightly and pour over the salad.
  • Toss gently and serve.

2 pounds spinach, well rinsed, thick stems removed
1 clove garlic, very finely chopped
5 scallions, green parts only, trimmed and finely chopped
2 tablespoons balsamic vinegar
2 tablespoons good-quality soy sauce, such as Kikkoman
1 tablespoon Asian sesame oil
Squeeze of fresh lemon juice
Coarse (kosher) salt, to taste
2 tablespoons sesame seeds, toasted (see Note)

Steps:

  • Wilt, drain, and squeeze dry the spinach. Chop the spinach into large, uneven pieces.
  • Place the garlic, scallions, vinegar, soy sauce, and oil in a large bowl and whisk thoroughly to combne. Add the spinach and toss to evenly coat the leaves. Season with a good squeeze of lemon juice and salt and pepper; taste and adjust the seasoning.
  • To serve, divide the salad among four bowls and sprinkle each with a portion of toasted sesame seeds.
  • Note: To toast the sesame seeds, preheat the oven to 350 degrees F. Scatter the seeds on a baking shseet and bake until lightly browned, 3 to 4 minutes.

While I can't promise authenticity, I can promise this is fast and simple to make - and I think, extremely delicious.

½ pound baby spinach leaves
3 tablespoons white sesame seeds
1 tablespoon white sugar
1 tablespoon soy sauce, or to taste
½ teaspoon mirin
¼ cup mayonnaise
2 teaspoons white miso paste
1 tablespoon seasoned rice vinegar
2 (5 ounce) sushi-grade ahi tuna steaks
salt to taste
2 tablespoons black sesame seeds
2 teaspoons vegetable oil
1 tablespoon prepared ponzu sauce

Steps:

  • Place spinach in a dry pot set over medium-high heat and cook, stirring, until it just begins to wilt, 1 to 2 minutes. Transfer into a strainer to cool.
  • While spinach cools, toast white sesame seeds in a dry pan over medium heat until light golden brown. Transfer into a mortar and pestle and crush into a very coarse paste, leaving some seeds whole. Add white sugar, soy sauce, and mirin. Stir with a wooden spoon to combine and reserve.
  • Transfer cooled spinach to a towel and squeeze out any excess liquid. Chop roughly and add to a mixing bowl. Add the dressing and mix well. Cover and chill thoroughly before serving.
  • Mix mayonnaise, miso paste, and rice vinegar together for miso mayo sauce. Place in the refrigerator until needed.
  • Lightly salt tuna steaks, and then coat all sides well with as many sesame seeds as you like, pressing them lightly as you do.
  • Brush a nonstick pan with oil and place over medium heat. Sear tuna steaks in the hot pan for 30 to 45 seconds on each side, as well as each edges.
  • Slice and place tuna over the miso sauce. Brush tuna with ponzu and serve with spinach salad on the side.

2 tbsp tahini
½ tbsp miso glaze or white miso paste
1 tsp sesame oil
1 tsp golden caster sugar
2 tsp Yuzu juice or lime juice
1 tbsp toasted sesame seeds

Steps:

  • Boil the kettle and put the spinach in a large colander set over the sink. Pour over enough boiled water to just wilt the leaves (you may need to do this in batches), then leave to cool. When cool, squeeze the spinach to get rid of the excess water.
  • Make your dressing by combining all the remaining ingredients (except the sesame seeds) together with 2 tbsp water. (Add a little more water if you want a runnier consistency.) 1 teaspoon sesame oil, can be chili sesame oil
1 tablespoon lemon juice

1 teaspoon ginger, fresh grated
1 lb spinach
1/4 cup red onion, chopped
1/4 lb mushroom, sliced
1 tomatoes, cut in thin wedges
1 teaspoon pepper, coarse cracked

  • Boil the beef broth with the chopped steak-umms until cooked and reduced to 1/4 cup. If using roast beef, you don't need to cook it, just chop and add it to the cooked broth.

Made this last night - very flavorful dressing. I got this recipe from Cottage Living, 6/2006, and made it with some adjustments. It originally called for 3 tablespoons sesame oil, so if you don't worry about fat intake (and are familiar with the relatively strong taste of sesame oil), go for it. Added a cup of leftover grape tomatoes. Also substituted maple syrup for the honey and I think it worked out well.

6 ounces baby spinach leaves
1 -2 medium carrot (grated or julienned, about 1 cup)
1/2 cucumber, peeled and sliced (seeding optional)
4 green onions, thinly sliced

3 tablespoons rice vinegar
1 -3 tablespoon sesame oil
