Steps:
- Place chopped spinach, shredded chicken, tomatoes, avocados, pumpkin seeds and Parmesan cheese into a large salad bowl and set aside.
- In a separate bowl, whisk together all ingredients for dressing until it emulsifies (combines). Pour entire amount of dressing over the salad ingredients and toss to coat completely.
- Serve immediately with an extra sprinkling of Parmesan and black pepper. Enjoy!

Steps:
- Prepare recipe for chicken breast.
- On high heat, heat 1 Tbsp oil in a skillet. Sear chicken 2 minutes on both sides. Turn heat down to low, close lid of the skillet and cook another 5-6 minutes, until chicken is tender.
- Meanwhile, in a small bowl, combine the ingredients for the spinach salad dressing.
- Prepare all the ingredients for the salad ingredients and arrange them in a large salad bowl.
- Slice the chicken and add to the salad. Drizzle with the homemade dressing and toss.

SPINACH-BACON SALAD WITH CHICKEN

- Position a rack in the upper third of the oven; preheat to 425 degrees F. Cook the bacon in a medium ovenproof nonstick skillet over medium-high heat, turning, until crisp, 8 minutes. Remove to a paper towel lined-plate with a slotted spoon, reserving 1 tablespoon drippings in the skillet. Let cool slightly, then chop.
- Meanwhile, soak the shallots in the vinegar in a small bowl. Puree the avocado, buttermilk, tarragon and 1/2 teaspoon salt in a blender; set aside.
- Season the chicken with salt and pepper. Heat the reserved bacon drippings in the skillet over medium-high heat. Add the chicken and cook until browned, about 2 1/2 minutes per side. Transfer the skillet to the oven and bake until the chicken is cooked through, 6 to 8 minutes. Transfer the chicken to a cutting board; chop.
- Combine the spinach, grapes and the shallots in vinegar in a large bowl. Add the avocado dressing and toss to coat; season with salt and pepper. Top each serving of salad with chicken, bacon and pepitas.

- Heat 1 TBS olive oil in a large skillet over medium-high heat.
- Season chicken with salt and pepper to taste.
- Cook in skillet, turning once, until juices run clear (about 12 minutes).
- Slice into thin strips and place in large bowl.
- In separate bowl, whisk together salt and pepper, garlic and vinegar.
- Slowly whisk in 1/3 cup olive oil.
- Stir in shallots, tomatoes, and basil.
- Spoon 1/4 cup of the dressing over chicken and toss to coat.

- Wash, pick over and dry the spinach.
- Wash, dry and tear up the radicchio.
- Wash and slice the radishes.
- Peel and slice the mango and avocado.
- (Actually it is easiest to cut the avocado in half, remove the pit, and lift out'slices' with a flattish spoon.) Mix the spinach, radicchio, sliced radishes, peeled and sliced avocado, and peeled and sliced mango.
- Whisk together, or shake in a jar, the orange juice, mustard, salt, pepper and oil.
