Steps:

  • Soak 1/4 sliced red onion in cold water, 10 minutes; drain. Mix 2 tablespoons olive oil, 1 tablespoon chopped dill, and salt and pepper. Brush 2 pitas with some of the seasoned oil, then toss 2 cups cherry tomatoes in the rest. Cook the pitas in a grill pan until marked, then tear into pieces. Grill the tomatoes until marked. Toss the pita and tomatoes with 6 cups baby spinach, 1/4 sliced cucumber, 1/4 cup kalamata olives, the onion, 2 tablespoons olive oil, the juice of 1 lemon, 1/4 cup chopped dill, and salt and pepper.

I work in natural foods and some of the items we sell at the store, such as pepitas, dried apple chips, and apple cider vinegar, inspired me to create this recipe. Pepitas are Mexican pumpkin seeds and a perfect crunchy topping for this fall-influenced salad.

¼ cup hulled pumpkin seeds (pepitas)
1 teaspoon olive oil, or as needed
⅓ cup extra-virgin olive oil
3 tablespoons apple cider vinegar
2 tablespoons white sugar
1 teaspoon Dijon mustard
1 teaspoon mayonnaise
1 teaspoon minced shallot
ground black pepper to taste
3 cups torn romaine lettuce leaves
3 cups torn baby spinach
1 cup dried apple chips
¼ cup dried cranberries
¼ cup crumbled bleu cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Toss pepitas with 1 teaspoon olive oil in a bowl; spread onto a baking sheet.
  • Toast in the preheated oven until pepitas start to turn golden brown and become fragrant, about 5 minutes. Let cool.
  • Combine 1/3 cup olive oil, vinegar, sugar, mustard, mayonnaise, shallot, and black pepper together in a container with a tight-fitting lid. Screw on lid tightly and shake dressing vigorously.
  • Toss the toasted pepitas, dressing, romaine lettuce, spinach, apple chips, cranberries, and bleu cheese together in a large bowl.

Save baby spinach for salads -- for this recipe, a heartier variety is best. Look for leaves that are thick and curly, which will retain more texture and flavor when sauteed.

2 ounces pepitas
1 tablespoon sesame seeds
3 tablespoons extra-virgin olive oil
1 tablespoon minced garlic (from 2 to 3 cloves)
2 teaspoons minced fresh ginger (from a 2-inch piece)
Kosher salt and freshly ground pepper
2 pounds curly-leaf spinach, large stems removed
2 tablespoons champagne or white-wine vinegar

Steps:

  • Heat a large skillet over medium. Add pepitas and toast, shaking pan occasionally, until they begin to swell and darken slightly, about 2 minutes. Add sesame seeds and continue toasting until pepitas and sesame seeds turn golden brown in places, about 1 minute more. Transfer to a plate; let cool completely.
  • Return skillet to medium-high; swirl in 2 tablespoons oil. Add garlic and ginger, season with salt, and cook until fragrant, about 30 seconds. Add enough spinach to fill skillet. Cook, stirring, until spinach begins to collapse. Add remaining spinach, a handful at a time, until all is just wilted. Stir in vinegar and cook 30 seconds. Remove from heat. Stir in remaining1 tablespoon oil; season with salt and pepper. Sprinkle with toasted pepitas and sesame seeds just before serving.

BABY SPINACH, AVOCADO, AND PUMPKIN SEED SALAD



Baby Spinach, Avocado, and Pumpkin Seed Salad image

10 cups baby spinach leaves, washed and ready to use
1/2 cup green pumpkin seeds
2 (small to medium-sized) avocados
2 tablespoons olive oil
1 lime, zested and juiced
1/2 teaspoon salt

Steps:

  • Put the spinach leaves and pumpkin seeds into a large salad bowl.
  • Halve the avocados and then remove the stones. Spoon out the flesh over the salad leaves and pumpkin seeds.
  • Mix the olive oil, lime juice and zest in a small bowl. Add the salt and whisk to emulsify.
  • Pour the dressing over the salad, and then gently toss everything together using your hands. Take care not to mush the avocado pieces.

1 cup raw pepitas (pumpkin seeds)
1/4 cup freshly squeezed lime juice
1 large jicama, peeled
1 1/2 lbs Baby Spinach, washed
2 1/2 teaspoons salt
1 teaspoon fresh ground pepper
1/3 cup red wine vinegar
2/3 cup extra virgin olive oil
1 cup crumbled feta cheese
1 cup pomegranate seeds

Steps:

  • In a small, ungreased, frying pan over medium heat, toast the pepitas until golden brown.
  • Remove from the heat, add lime juice mixed with 1 teaspoon salt and shake vigorously. Cook shaking often, until the pan is dry. Set aside to cool.
  • Slice the jicama into 1/8-inch slices, then julienne as thinly as possible. Transfer to a very large salad bowl, along with the spinach.
  • Whisk 1 1/2 teaspoon salt (or to taste), pepper, vinegar and olive oil together in a small bowl and drizzle it over the salad.
  • add the pepitas, feta and pomegranate seeds and toss well.
  • Serve immediately.
