GARLIC SAUTEED SPINACH
Dinner couldn't be simpler with Ina Garten's Garlic Sauteed Spinach recipe from Barefoot Contessa on Food Network. It's an easy, go-to side dish for your table.

Steps:
- Rinse the spinach well in cold water to make sure it's very clean. Spin it dry in a salad spinner, leaving just a little water clinging to the leaves.
- In a very large pot or Dutch oven, heat the olive oil and saute the garlic over medium heat for about 1 minute, but not until it's browned. Add all the spinach, the salt, and pepper to the pot, toss it with the garlic and oil, cover the pot, and cook it for 2 minutes. Uncover the pot, turn the heat on high, and cook the spinach for another minute, stirring with a wooden spoon, until all the spinach is wilted. Using a slotted spoon, lift the spinach to a serving bowl and top with the butter, a squeeze of lemon, and a sprinkling of sea or kosher salt. Serve hot.

- Place potatoes in a pot and cover with water. Salt water and boil potatoes until tender 12 to 15 minutes.
- Squeeze the water from spinach in a clean dish towel.
- Drain potatoes and melt butter in the hot pot, then add the garlic and cook 2 to 3 minutes. Stir in cream, add the spinach, separating the greens as you do. Season greens with salt, pepper and nutmeg. Add potatoes to the pot and mash to desired consistency.

- Cook the poatoes in boiling water until very tender.
- Mash with a potato masher or a fork.
- In a large bowl, mix together the mashed potatoes with the butter, sour cream, salt and pepper.
- Set the oven to 350 degrees.
- Butter a 10 cup casserole dish.
- Wash the fresh spinach leaves (if using fresh spinach).
- Place the wet leaves in a microwave-safe dish; cover, and microwave on HIGH for 2-3 minutes, when cool, enough to handle, squeeze out all excess moisture.
- Chop coarsley, and place in a medium-size bowl; stir in the feta cheese and the garlic.
- Stir the spinach mixture into the potatoes.

You would never guess that this rich and creamy spinach is a lower-fat version. The secret is low-fat feta cheese and fat-free cream cheese and half-and-half. The white sauce is made without butter or oil. I served this for Thanksgiving and everyone loved it!

- 1)In a sauce pan, whisk half and half, milk, flour, salt, pepper, and nutmeg until smooth.
- 2)Stirring constantly, heat over medium heat until it simmers, then reduce heat.
- 3)Add cream cheese and continue stirring (whisking) until thick and smooth, about 4 to 5 minutes.
- 4)Remove from heat and stir in feta cheese. Set aside.
- 5)Heat oil over medium high heat in a large pan and sauté onions for 5 minutes then add garlic and continue cooking for 1 minute.
- 6)Add spinach and water to pan, bring to a simmer, then reduce heat and cover pan.
- 7)Cook, stirring occasionally, for 8 to 10 minutes.
- 8)Drain well.
- 9)Stir prepared sauce into pan, stir until completely blended.
- 10)Pour into greased casserole dish, top with parmesan cheese, and bake at 375 degrees for 4 to 6 minutes.

- Wash the potatoes well, then prick the skin several times with a fork. Place the potatoes on a microwave safe plate and microwave on high for 5 minutes. Pierce the potatoes in the center with a fork to test for doneness. If they still feel crunchy in the center, microwave longer, one minute at a time, until they are tender in the middle (mine took about 8 minutes).
- Let the potatoes cool for just a few minutes. Slice the potatoes into several pieces to make them easier to mash, then transfer to a large bowl. Add the butter, garlic powder, salt, some freshly cracked pepper, and milk. Mash the potatoes until the butter is melted and the seasonings are evenly distributed.
- Add the fresh spinach and stir it into the potatoes. Allow the residual heat of the potatoes to partially wilt the spinach. Leaving the spinach only partially wilted gives the potatoes more texture and volume.
- Finally, crumble the feta cheese over top and fold it into the potatoes. Taste the potatoes and adjust the salt, pepper, or butter if needed.

- Boil or microwave your potatoes until they are tender, about 20 - 25 mins depending on the size of your chunks of potato, then drain. Allow to steam dry for a minute or two, then place back in the pot/bowl they came out of, which should by now have steamed dry as well.
- Mash potatoes using a potato masher, potato ricer or fork to your desired consistency. Add butter, sour cream, powdered garlic, and lemon zest then mix lightly to incorporate and melt butter.
- Add milk 1 tbsp at a time until you reach your desired consistency, then fold through parsley, chives, shallots & baby spinach. If you boiled your potatoes on the stove in step 1, then transfer your potato mixture to a microwave safe bowl/dish.
- Microwave potato mixture on high for 2-3 mins or until well heated, then fold through crumbled feta, add salt & pepper to taste and serve.
