1/2 cup chopped onion
2 tablespoons butter
1 garlic clove, minced
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
1/2 cup heavy whipping cream
1/3 cup whole milk
5 tablespoons shredded Parmesan cheese, divided
1/4 cup dry bread crumbs
1/2 teaspoon salt
1/4 teaspoon dried marjoram
1/8 teaspoon pepper

Steps:

  • In a large skillet, saute onion in butter until onion is tender. Add garlic; cook 1 minute longer. Stir in the spinach, cream and milk. Remove from the heat; stir in 4 tablespoons cheese, bread crumbs, salt, marjoram and pepper. , Spoon into a greased 1-qt. baking dish. Sprinkle with remaining cheese. Bake, uncovered, at 350° for 40-45 minutes or until cheese is lightly browned.

1/2 cup chopped onions

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 container (8 oz.) BREAKSTONE'S or KNUDSEN Sour Cream
3 eggs
1/8 tsp. pepper
2 pkg. (10 oz. each) frozen chopped spinach, thawed, well drained
1/8 tsp. ground nutmeg

Steps:

  • Heat oven to 325°F.
  • Melt butter in small skillet on medium heat. Add onions and garlic; cook and stir 5 min. or until crisp-tender. Beat cream cheese, sour cream, eggs and pepper in large bowl with mixer until blended. Add onion mixture and spinach; mix just until blended.
  • Spoon into 9-inch square pan sprayed with cooking spray. Sprinkle with nutmeg; cover.
  • Bake 45 min. or until heated through and lightly browned, uncovering after 30 min.

2 onions
2 cloves of garlic
olive oil
2 teaspoons dried oregano
1 whole nutmeg, for grating
1 kg frozen chopped spinach
100 g unsalted butter, (cold)
100 g Cheddar cheese
100 g plain flour
100 g rolled oats
250 ml crème fraîche

Steps:

  • 1. Preheat the oven to 180°C/350°F/gas 4.
  • 2. Peel and finely chop the onions and garlic, then place in a large frying pan on a low heat with 2 tablespoons of oil and the oregano. 3. Finely grate in half the nutmeg and fry gently for 10 minutes, or until soft but not coloured, stirring regularly. 4. Add the spinach, turn the heat up to medium and cook down for 15 to 20 minutes, or until any liquid has evaporated. 5. Meanwhile, roughly chop the cold butter, grate the cheese and place in a food processor with the flour, oats and a pinch of sea salt and black pepper. Pulse into a nice crumble texture (or rub together by hand), then remove to a plate. 6. Put the cooked spinach mixture into the processor (there's no need to clean it), then add the crème fraîche and blitz for 1 minute. 7. Taste and season to perfection, then tip evenly into a baking dish (20cm x 30cm). Sprinkle over the crumble and bake for around 45 minutes, or until golden and bubbling.

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.

1 small onion, finely chopped

2 sprigs fresh rosemary
1/4 cup all-purpose flour
2 cups whole milk
Kosher salt and freshly ground pepper
2 9-ounce packages refrigerated cheese ravioli
1 10-ounce package frozen chopped spinach, thawed and squeezed dry
2 ounces low-moisture mozzarella, cut into 1/2-inch cubes
1/4 cup grated grana padano or parmesan cheese

Steps:

  • Preheat the broiler. Melt the butter in a large ovenproof skillet over medium-high heat. Add the onion, garlic and rosemary and cook, stirring often, until the onion is soft and just starts browning, about 6 minutes.
  • Sprinkle in the flour and cook, stirring, until smooth and bubbling, about 2 minutes. Stir in 2 cups water, the milk, 1/2 teaspoon salt and a few grinds of pepper. Bring to a boil, then reduce the heat to a gentle simmer. Stir in the ravioli and cook, stirring occasionally, until the ravioli are tender and the sauce thickens, 5 to 7 minutes.
  • Remove from the heat. Discard the rosemary sprigs and stir in the spinach. Sprinkle with the mozzarella and grana padano. Place the skillet under the broiler until golden and bubbling, about 5 minutes.

SWEET POTATO & SPINACH BAKE

300ml single cream (or double cream for a really creamy texture)
1 garlic clove, peeled
2 sprigs thyme or rosemary
250g bag frozen spinach
freshly grated nutmeg
butter, for greasing
850g sweet potatoes, peeled and thinly sliced (about 3mm thick)
25g grated hard cheese, such as cheddar, Parmesan or veggie alternative
2 lamb chops
few sprigs thyme or rosemary
1 tsp olive oil per portion

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the cream, garlic and herb sprigs into a small saucepan and slowly bring to just below boiling. Turn off the heat, season and leave to infuse.
  • Put the spinach into a colander, pour over a kettle of boiling water and leave to drain for a few mins. Then squeeze out as much water as possible. Season with salt, pepper and freshly grated nutmeg.
  • Grease an ovenproof dish generously with butter and spread half the sweet potato slices across the bottom. Top with a layer of spinach, then the remaining potato. Pour over the cream mixture, through a sieve to remove the garlic and herbs, then sprinkle with cheese. Bake for 45-55 mins until golden and tender.
  • Meanwhile, if you're serving the chops, heat a griddle or frying pan and finely chop the leaves from the herb sprig. Rub over the chops with the oil and some seasoning, then griddle or fry for 3-4 mins on each side or until cooked to your liking. Leave bake, and chops if serving, to rest for 5 mins, then serve with a big green salad.

100g/3½oz baby spinach, any thicker stems removed
2 tsp olive oil
2 spring onions, outer leaves removed, thinly sliced
1 garlic clove, thinly sliced
1 tbsp plain flour
300ml/10fl oz skimmed milk
2 bay leaves
1 tsp wholegrain mustard
1 unwaxed lemon, finely grated zest only
100g/3½oz Parmesan (or vegetarian alternative), finely grated
salt and freshly ground black pepper
mixed salad leaves dressed with a squeeze of lemon juice and 1 tsp olive oil, to serve

Steps:

  • Preheat the oven to 200C/180C Fan/Gas 6
  • Cook the macaroni in boiling water for 6 minutes. Add the broccoli and cook for another 2 minutes. Turn off the heat, add the spinach and leave to stand with the lid on for 2 minutes. Drain well and set aside
  • Heat the oil in a heavy-based frying pan. Fry the spring onions for 2 minutes. Add the garlic and fry for another 2 minutes. Add the flour and cook, stirring all the time, for 1-2 minutes. Slowly pour in the milk, add the bay leaves and season with salt and pepper. Continue simmering for 2-3 minutes, until thickened. Remove the bay leaves.
  • Stir in the mustard, lemon zest and three quarters of the Parmesan, then season well.
  • Tip the pasta and broccoli into a shallow baking dish. Pour over the sauce and mix well. Sprinkle over the remaining cheese and bake for 15-20 minutes.
  • Serve with the dressed salad leaves.

2 cloves of garlic, minced
425g (15oz) of crushed tomatoes
1 tbs of tomato paste (puree)
1/2 tbs of balsamic vinegar
pinch of dried basil
pinch of dried oregano
1.5 cups (360ml) of water
salt and black pepper
cooking oil spray (I used olive oil)

Steps:

  • Spray a frying pan with some cooking oil spray.
  • Add the onion, carrot and garlic and fry for a couple of minutes to soften.
  • Add in the crushed tomatoes, tomato paste, vinegar, herbs and water, bring to a boil and then cover and simmer for about 10-15 minutes.
  • Add to a blender (or use a stick blender and blend until smooth (you can leave the sauce as is if you prefer).
  • Taste sauce and season as needed with salt and black pepper.
  • Preheat oven to 180c/Fan 160c/350f or gas mark 4
  • Cook pasta accordingly to package instructions until al dente. Reserve a little of the pasta water
  • Combine the sauce with the pasta and chopped spinach until all mixed well. Add in a little of the reserved pasta water if needed to loosen sauce.
  • Add to an ovenproof dish and top with the cheeses.
  • Bake for approx 25-30 minutes until cheese on top is melted and lightly golden.
  • Serve and enjoy!!

1 lb fresh spinach
1/4 lb butter
1 large onion, diced
3 cloves garlic, minced
salt and pepper
2 cups mozzarella cheese, grated (or your choice)
1/8 teaspoon nutmeg

Steps:

  • Coarsely chop the spinach.
  • Melt the butter over medium heat & when bubbly add onion& garlic.
  • Saute for 2 minutes.
  • Add spinach, salt & pepper.
  • Cover & reduce heat to low steam for 3-4 minutes.
  • Put half of the cheese into an 8" greased casserole dish.
  • Add spinach, & nutmeg.
  • Cover with remaining cheese.
  • Bake in 350F for apprx 20 minutes or until cheese is browned.

4 cups chopped yellow onions (2 large)
1/4 cup flour
1/4 teaspoon grated nutmeg
1 cup heavy cream
2 cups milk
3 pounds frozen chopped spinach, defrosted (5 (10-ounce) packages)
1 cup freshly grated Parmesan cheese
1 tablespoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup grated Gruyere cheese

Steps:

  • Preheat the oven to 425 degrees F. Melt the butter in a heavy-bottomed saute pan over medium heat. Add the onions and saute until translucent, about 15 minutes. Add the flour and nutmeg and cook, stirring, for 2 more minutes. Add the cream and milk and cook until thickened. Squeeze as much liquid as possible from the spinach and add the spinach to the sauce. Add 1/2 cup of the Parmesan cheese and mix well. Season, to taste, with salt and pepper. Transfer the spinach to a baking dish and sprinkle the remaining 1/2 cup Parmesan and the Gruyere on top. Bake for 20 minutes until hot and bubbly. Serve hot.

1 pound dry pasta, I recommend using a bite sized pasta shape. You can use gluten free or whole wheat pasta if you like.
6 ounces baby spinach leaves, washed and roughly chopped
3-4 cups pasta sauce or marinara sauce, depending on how saucy you want your pasta bake
1 1/2 cups grated mozzarella cheese
6 oz container crumbled feta cheese, or a large block that you've cut into small squares
Salt and pepper, to taste, if needed

Steps:

  • Pre-heat oven to 375 degrees F. Start by cooking your pasta. Cook according to package directions and drain. Add the spinach leaves into the empty pasta cooking pot and then poor the hot pasta right on top of the spinach. Give it a stir to make sure the heat from the pasta gets to all the spinach. That should help wilt the spinach and break it down.
  • Next, pour in the pasta sauce, feta cheese (make sure to leave a little for topping) and 1 cup of mozzarella cheese. Stir to make sure all the ingredients are evenly distributed and then pour pasta into a large baking dish (9×13). Top your pasta with another small handful of feta cheese and remaining 1/2 cup mozzarella and then cover pasta bake with aluminum foil.
  • Place baked feta pasta in the oven and bake until you can hear the sauce bubbling, 20-25 minutes. Remove the foil and bake for another 5 minutes or so, until the cheese on top is melted.

4 oz spinach
½ cup parsley, fresh
½ cup basil, fresh
½ cup water
1 tsp olive oil
½ red onion ((diced))
1 clove garlic ((minced))
1 ⅓ cup chickpeas ((canned or cooked))
1 ½ tsp lemon juice
¼ tsp cumin, ground
¼ tsp nutmeg
¼ tsp paprika
4 eggs
¼ cup ricotta cheese ((crumbled))
Salt and pepper to taste
Paprika ((garnish))
Jalapeño ((sliced, garnish))
Basil, fresh ((garnish))
Parsley, fresh ((garnish))

Steps:

  • Blanch leaves (only do this step if the spinach is fresh and unfrozen): Prepare a small pot of salted boiling water and a bowl with ice water. Add the spinach, parsley and basil to the boiling water and blanch for 15-20 seconds. Immediately sieve and place on the ice water until the leaves have completely cooled. Separate water from leaves, press the leaves against the sieve to release all of the absorbed water.
  • Blend green leaves with water until processed and smooth.
  • Preheat the oven to 400 F.
  • In a medium cast iron pan or oven proof pan heat the olive oil over medium-low heat. Add the diced onion and minced garlic. Cook until it begins to brown on the edges. Take off the heat and add chickpeas, spinach green juice, lemon juice, cumin, paprika, nutmeg and salt and pepper to taste. Mix until combined.
  • Use a spoon to create 4 small wells; crack an egg into each well. Sprinkle them with salt, black pepper and paprika. Bake until eggs are just set, about 10 minutes.
  • Top with crumbled ricotta, chili flakes and green leaves to serve.

¼ cup all-purpose flour
3 eggs, beaten
¾ cup shredded Cheddar cheese
½ cup dried bread crumbs
2 tablespoons chopped fresh parsley
¼ cup butter, melted
1 cup milk
½ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish.
  • Clean spinach thoroughly. Remove all excess water. Chop spinach. Arrange spinach and flour in layers, nestle beaten eggs about midway between the layers.
  • Combine cheese and bread crumbs. Mix in optional parsley, if desired. Sprinkle over top of spinach. Mix butter or margarine, milk, salt and pepper. Pour over all ingredients. Bake at 350 degrees F (175 degrees C) oven for 50 minutes to one hour.
