CRISPY BAKED CHICKEN WINGS

- For the wings: Preheat your oven to 450 degrees F. Line a rimmed baking sheet with foil and brush the foil with the oil.
- Pat the wings dry with paper towels, then sprinkle with the baking powder and toss to evenly coat in a large mixing bowl. Spread the wings evenly on the prepared baking sheet. Bake until golden brown, crispy and cooked through, 25 to 30 minutes, flipping halfway through.
- For the dry rub: Combine the brown sugar, salt, black pepper, granulated sugar, paprika, chili powder, garlic powder, onion powder, cumin, cayenne and celery seeds in a small bowl.
- Remove the wings from the oven and add to another large mixing bowl. Season well with some of the rub, and then toss to coat. (Reserve the remaining rub for another use.) Serve immediately.

Steps:
- Cut each chicken wing at joints to make 3 pieces.
- Discard wing tips or save for making chicken broth.
- Mix egg, 2 tsp.
- vegetable oil, the soy sauce, sugar, and five spice powder; pour over chicken.
- Cover and refrigerate 1 hour.
- Add water to chicken.
- Stir flour, cornstarch, and baking soda into chicken.
- Heat vegetable oil (1 1/2 inches) in wok (we use a deep fryer) to 350 degrees.
- Fry 4 or 5 chicken pieces at a time until light brown, turning 2 or 3 times, about 5 minutes; drain on paper towel.
- Serve with sweet and sour sauce or hot mustard.

- Make sure chicken wings are nice and dry.
- Place all the dry ingredients in a large Ziploc bag and shake to mix well.
- Place half the chicken wings in the back and shake well to ensure all wings are coated.
- Set coated chicken wings aside and coat the last half of the chicken wings.
- Oven Method:
- Preheat oven to 400 degrees.
- Place wings on a wire rack on a baking sheet pan. Lining the baking sheet with foil or parchment paper is great for an easy and quick cleanup as
- Bake wings for 30-45 minutes, turning wings over halfway through cooking (ensure wings are cooked to an internal temperature of 165 degrees).
- Charcoal Grill Method:.
- Fill a chimney starter full of charcoal and light the charcoal.
- In about 10 to 15 minutes the coals should be sufficiently lit to pour into the grill. You'll know the coals are ready when the ones on top have started to turn a bit gray with ash.
- When ready, dump the charcoal on one side of the grill leaving the other side bare.
- Put the wings on the hot side the grill. Cook the wings until the coating starts to caramelize and you get some black grill marks, flip the wings and and repeat.
- Move them to the cool side of the grill, cover and cook for 30-35 minutes (ensure wings are cooked to internal temperature of 165 degrees).
- Gas Grill Method:.
- Turn one side of the grill to high heat, the other side on medium-low heat.
- Put the wings on the hot side of the grill and cook until the wings start to caramelize, flip wings and repeat.
- Move the wings to the cool side of the grill, cook and cover for 30-35 minutes (ensure wings are cooked to an internal temperature of 165 degrees).
- IMPORTANT: Keep an eye on the wings as the sugar in the rub will burn very easily.

Steps:
- Preheat oven to 425°.
- Cover shallow baking pan with foil and spray with cooking spray.
- Spread chicken wings in a single layer in pan.
- Brown wings for 20-30 minutes.
- Remove from oven and drain fat from pan, sprinkle with salt and pepper.
- Meanwhile combine all remaining ingredients, except salt and pepper, in a sauce pan.
- Cook over medium heat until thick and glossy, stirring constantly.
- Cover chicken wings with half of the sauce.
- Reduce heat to 350° and bake 30 minutes.
- Turn wings, cover with remaining sauce, bake 30 minutes more.

- Make a slash on the inside of the chicken wing joints without cutting through the bone and in a few other places. In a large, shallow baking dish, combine the ketchup with the mustard, hot sauce, soy sauce and brown sugar. Add the chicken wings and turn to coat. Cover and refrigerate overnight.
- Light a grill. Remove the chicken wings from the marinade (pantry sauce), leaving some of it on them, and reserve the remaining marinade. Grill the wings over a medium-hot fire, turning and basting them with the reserved marinade, until nicely charred and cooked through, about 30 minutes. Stop basting during the last 5 minutes of grilling and discard any remaining marinade. Serve the wings hot or at room temperature.
