SPICY HONEY-GLAZED HAM

1 8-pound fully cooked bone-in half ham (shank or butt)
1 cup low-sodium chicken broth
1 cup honey
3/4 cup packed light brown sugar
1/2 cup dijon mustard
1/2 cup whole-grain mustard
3 tablespoons apple cider vinegar
3 tablespoons hot sauce
1 tablespoon chopped fresh thyme
1/2 teaspoon red pepper flakes
Bring the ham to room temperature 1 hour before baking.

Steps:

  • Position an oven rack in the lowest position; preheat to 350 degrees F. Trim off any skin from the ham, leaving a 1/4-inch layer of fat. Score the fat with a sharp knife in a 1-inch crosshatch pattern without cutting through to the meat. Place the ham flat-side down in a roasting pan and add the chicken broth to the pan. Cover with foil and bake 1 1/2 hours.
  • Meanwhile, make the glaze: Whisk the honey, brown sugar, mustards, vinegar, hot sauce, thyme and red pepper flakes in a medium bowl. Remove 3/4 cup of the glaze to a separate bowl and set aside for serving. Remove the ham from the oven, discard the foil and brush with about one-quarter of the remaining glaze. Continue baking, brushing with the glaze and the pan juices every 30 minutes, until the ham is a deep reddish-brown and a thermometer inserted into the center registers 140 degrees F, 1 to 1 1/2 more hours. (Add 1/2 cup water to the pan if the juices dry out.)
  • Transfer the ham to a cutting board and let rest 20 minutes before slicing. Serve with the reserved glaze.

Red wine and peppercorns produce a rich taste. This was in the newspaper and I'm posting here so I don't lose it. Intend to try it this Easter. Total cooking time is guestimate since I haven't tried it out yet.

1 (6 -8 lb) smoked bone-in ham, shank portion
2 1/2 cups cabernet sauvignon wine or 2 1/2 cups pinot noir wine
2 tablespoons chopped shallots
1/2 teaspoon finely chopped fresh thyme
1 teaspoon cracked black pepper
5 tablespoons liquid honey (divided)
1 cup canned reduced-sodium chicken broth
1 tablespoon cornstarch
1 tablespoon butter

Steps:

  • In medium saucepan, combine wine, onion and thyme. Bring to a boil; redure heat and simmer uncovered 5 minutes. Remove from heat. Set aside 1 cup for serving sauce.
  • Place ham in a shallow baking pan; score by making diagonal cuts, about 1/8" deep, in a diamond pattern in surface of ham. Sprinkle with pepper and rub into surface cuts with fingers. Brush ham with 3 Tbsp honey.
  • Pour 1/4 c of the wine mixture over ham and bake in centre of pre-heated 350F oven for 1 1/2 to 2 1/2 hours or until an instant read thermometer inserted in the thickest portion (not touching the bone) registers 140F or 15 to 18 minutes per pound, basting every 30 minutes with 1/4 cup of the remaining wine mixture.
  • Remove ham from oven. Transfer to a cutting board and loosely cover with foil. Let rest for 10 to 15 minutes before slicing. Discard wine mixture in pan.
  • Meanwhile, in a medium saucepan, combine 1/2 cup of remaining wine mixture and chicken broth. Bring to a boil; reduce heat. Cook uncovered until reduced to 1 cup. Stir cornstarch into remaining 1/2 cup wine mixture and then stir into hot wine-broth mixture. Add remaining 2 Tbsp honey and butter. Bring to a boil; reduce heat. Simmer uncovered for 2 minutes, stirring occasionaly.

1(5-pound) boneless ready-to-eat ham
1/2 cup water or white wine
1 cup cherry preserves
1 tablespoon prepared horseradish (creamy)
1 tablespoon packed light brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1/4 teaspoon ground cardamom
1/4 teaspoon salt
1 lemon, zested and juiced

Steps:

  • Preheat the oven to 350 degrees F. Line a roasting pan with foil and spray it with nonstick spray.
  • Score the top and sides of the ham with a small sharp knife in a crisscross pattern. Put the ham in the pan, pour 1/2 cup water or white wine into the bottom of the pan and bake, covered loosely with a tent of foil, 45 to 60 minutes.
  • To make the glaze, combine the preserves, horseradish, brown sugar, cinnamon, cumin, cardamom, salt, and lemon juice in a medium bowl. Transfer the cherry mixture to a small saucepan and bring to a boil over medium heat. Boil until the glaze is slightly thickened, 2 to 3 minutes. Remove from the heat; stir in the lemon zest.
  • Remove the ham from the oven and brush the top with 1/4 cup of the glaze. Bake, uncovered, until the ham is hot and an instant-read thermometer inserted into the center registers 140 degrees F, about 20 minutes longer. Remove the ham from the oven to a cutting board and let stand 10 minutes before slicing. Arrange the sliced ham on a serving platter and serve with the reserved glaze.

This recipe was handed down through my family. We always had it at Christmas dinner, but it's so good we make it throughout the year now. The alcohol cooks out of the wine so it's safe for old and young alike! This makes a very flavorful and tender ham!

1 cup honey
1/2 cup wine (we use Mogan David cherry or blackberry)
1 teaspoon cinnamon
1 teaspoon belgium mustard (or other spicy)

Steps:

  • Mix all ingredients in a small saucepan and heat to boiling, stirring frequently.
  • Poke holes in your ham with a cutlery fork so the ham will absorb more of the glaze.
  • Pour the glaze over the ham and bake at 350 degrees until done, basting at least twice during cooking.
  • NOTE: If your ham is pre-cooked or smoked, you only need to cook long enough to re-heat it. Save the juices for any leftover ham you might have. You can freeze the ham with some of the cooking juices in ziplock bags. They re-heat wonderfully.

1 (4-pounds 15-ounce to 6-pounds 1-ounce) boneless mild-cure gammon
8 3/4 fluid ounces (250ml) red wine
5 pints 5 1/2 fluid ounces (3 liters) water (approximately)
1 large onion, halved
2 garlic cloves, unpeeled
1 head fennel, halved
2 star anise
1 tablespoon coriander seed
1 tablespoon fennel seed
1 tablespoon mixed peppercorns
Approximately 16 whole cloves
4 tablespoons red currant jelly
1/2 teaspoon ground cinnamon
1 teaspoon smoked paprika
1/2 teaspoon red wine vinegar

Steps:

  • Place the gammon in a large saucepan. Add all the ingredients for the ham to the pan, adding more water if the ham isn't covered. Bring to the boil, before reducing the heat to a simmer and partially covering the pan. Cook for about 2 1/2 to 3 hours, approximately 1 hour a kilo simmering time, plus an extra 15 minutes.
  • When you are ready to glaze the ham, preheat oven to 440 degrees F (230 degrees C).
  • Remove the ham from the liquid and sit the ham on a board. Strip off the rind, and a little of the fat layer if it's very thick, and cut a diamond pattern into the remaining fat with a sharp knife in lines of about 3/4-inch apart. Stud each diamond with a clove. Put the jelly, cinnamon, paprika and red wine vinegar into a saucepan and whisk together over a high heat bringing it to the boil. Let the pan bubble away so that the glaze reduces to a syrup-like consistency.
  • Place a layer of foil over a roasting tray big enough to hold the ham. Place the ham on top of the foil. Pour the glaze over the clove-studded ham and then transfer it to the oven. Cook for about 15 minutes, or until the glazed fat is burnished. Allow the meat to rest in a warm place for at least 15 minutes before carving it.

5 cups frozen peach slices

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Use a serrated knife to score the top of the ham in a diamond pattern. Press whole cloves into the ham and place on a roasting rack in a roasting pan.
  • Bake for 1 1/2 to 2 hours in the preheated oven, or until the internal temperature of the ham has reached 140 degrees F (60 degrees C). Cover with aluminum foil if the ham starts to look dry.
  • While the ham is baking, mix together the cinnamon, mustard and 1/2 cup of brown sugar in a cup or small bowl. Set aside. In a saucepan over medium heat, mix together the remaining brown sugar, cider vinegar, peach nectar and peach preserves. Bring to a boil and then stir in the sliced peaches, ginger, cherry pepper and the cinnamon stick. Simmer until the peaches are tender and the sauce has thickened, 25 to 30 minutes.
  • Remove the ham from the oven and brush liberally with the mustard glaze. Increase the oven temperature to 350 degrees F (175 degrees C) and return the ham to the oven, uncovered.
  • Bake for an additional 20 to 30 minutes, or until glaze is bubbly. Allow the ham to rest for 15 to 20 minutes before carving. Serve with hot Peach-Ginger sauce.

1/2 c honey
1/2 c dry red wine
1/4 c pineapple juice
2 Tbsp butter
1 1/2 tsp ground black pepper

Steps:

  • 1. Preheat oven to 325F.
  • 2. Place ham, fat side up, on rack in roasting pan; pour in 2 cups water.
  • 3. Cover pan tightly with foil; roast for 2 hours, adding more water if necessary to maintain level.
  • 4. If ham has skin, slide a sharp knife under the skin and lift off. (Discard skin or save for making ham broth for split pea soup).
  • 5. Trim fat layer to 1/4-inch (5 mm) thickness. Discard trimmed fat.
  • 6. Diagonally score fat to form a diamond pattern.
  • 7. In a small saucepan, combine honey, red wine, pineapple juice, butter, pepper, nutmeg, cloves and ginger over medium heat, stirring occasionally, until butter is melted. Stir in Dijon mustard; let cool slightly.
  • 8. Brush enough of the glaze over ham to cover; stud center of each diamond pattern with clove.

SPICY HAM SLICE/STEAK

I'm not a big ham fan but I just LOVE this dish. Easy to do, very forgiving - you can substitute different kinds of juice or soda. Ham steaks freeze well and thaw fast so it's good for a week night. Fairly economical if you get the ham on sale. I love to have it with orange rice where I substitute about a half a cup of OJ for water with plain old white or even brown rice, and a nice green salad. Enjoy!

1/2 cup tamarind concentrate
1/2 cup plus 1 tablespoon honey
Kosher salt
1/2 cup dry red wine
5 tablespoons unsalted butter, cut into pieces

Steps:

  • Let ham sit at room temperature 1 hour for even baking.
  • Place a rack in lower third of oven; preheat to 300°F. Wrap ham tightly in foil and place on a wire rack set inside a foil-lined rimmed baking sheet. Bake until an instant-read thermometer inserted into the thickest part of ham, avoiding the bone, registers 120°F, 1 1/2-2 hours.
  • Meanwhile, mix chiles, garlic, ginger, tamarind, and 1/2 cup honey in a small bowl; season lightly with salt. Set 1/3 cup glaze aside for sauce.
  • Remove ham from oven and uncover. Increase oven temperature to 450°F. Brush ham with 1/3 cup glaze and bake 10 minutes. Brush with another 1/3 cup glaze and bake until surface is crisp and looks lacquered, 10-15 minutes. Remove from oven and tent with foil; let ham rest 20 minutes before slicing.

Treat guests over for Christmas to a Boxing Day ham. You don't need a long shopping list - this easy, sweetly spiced version uses just five ingredients

2kg unsmoked boneless gammon joint
2 ½l ginger ale (not sugar-free)
2 tsp allspice berries , plus 1 tsp, crushed
300g light brown soft sugar
3 tbsp finely grated ginger

Steps:

  • Put the gammon in a large pan and cover with 2 litres of ginger ale. Top up with water to cover the joint, if you need to. Add the whole allspice berries and bring to a boil. Turn the heat down to low, and simmer gently, covered, for 2½ hrs. Top up with water, if you need to, while it's simmering.
  • Drain the ham and leave until it's cool enough to handle while you make the glaze. Put the remaining ginger ale in a pan with the sugar, grated ginger and crushed allspice. Simmer, uncovered, for 20-25 mins until syrupy.

Spicy Mustard Ham Glaze (Not Sweet at All) image

I couldn't find a true savory ham glaze, so I made up my own. It turned out so well, I just had to share! I bought a large ham (bone-in of course!) that I wanted to use the left overs, for other yummies later in the week. I don't necessarily like the sweet ham glazes, as it seems to linger with the leftovers. This will be great in scalloped ham and potatoes, ham and beans, omlets, sandwiches.. you name it! Hope you enjoy!! :)

2 tablespoons spicy brown mustard
2 teaspoons Worcestershire sauce (or my original thought was liquid smoke, but then learned I didn't have any)
2 teaspoons ground cumin
2 teaspoons fresh ground black pepper
1 1/2 teaspoons garlic powder
1 1/2 teaspoons mustard powder
8 1/2 lbs bone-in ham

Steps:

  • 1. In a small bowl, wisk all ingredients together.
  • 2. Pat ham dry with papertowel.
  • 3. Schmear all over ham.
  • I put mine in the slow cooker for 8 hours on low, or you could bake, roast, smoke, or grill the ham, depending on your preference. You could also marinate the ham before cooking, but I just didn't think about this until the morning of.
  • I made a double batch of this to use as a dipping sauce as well. Delish!

Number Of Ingredients 12

1 (10- to 12-pound) fully cooked, trimmed, bone-in smoked ham (shank end), room temperature
2 cups freshly squeezed orange juice
1/2 cup packed dark brown sugar
3/4 cup bourbon
1/2 cup guava or apple jelly, warmed
2 large shallots, peeled and thinly sliced
3 whole allspice
3 whole cloves
Zest of 1 orange plus 2 oranges cut into 1/4-inch-thick slices
1 (2-inch-long) piece fresh ginger, peeled and grated
Special Equipment
1 (10- by 14-inch) roasting pan; toothpicks; pastry brush

Steps:

  • Position a rack in the lower third of oven and preheat to 325°F.
  • Using a sharp knife, score the fat covering the ham in a 3/4-inch-wide diamond pattern (do not cut into the meat). Place the ham in a 10-by-14-inch roasting pan and add 1 cup water. Roast the ham for 2 hours.
  • While the ham is roasting, prepare the glaze: In a heavy, medium saucepan over moderately low heat, combine 1 cup orange juice, brown sugar, and bourbon. Bring to a simmer and continue simmering for 10 minutes. Add the guava or apple jelly, shallots, allspice, and cloves, and continue simmering until slightly reduced, about 5 minutes. Add the orange zest and the remaining 1 cup orange juice, and bring to a boil. Continue boiling until thickened, about 5 minutes. Add the orange slices and fresh ginger, and cook until the orange slices are tender, about 2 minutes.
  • Once the ham has been in the oven for two hours, drape the glazed orange slices over the ham, securing them with toothpicks, and brush the ham and oranges with about 1/2 cup of glaze, reserving the remainder for serving. Continue roasting the ham until an instant-read thermometer inserted into the thickest part registers 145°F, about 30 minutes.
  • To Serve:
  • Remove the toothpicks from the ham and arrange the orange slices on a platter. Slice the ham and arrange on top of the oranges. Warm the remaining glaze and serve alongside.

  • Meanwhile, strain the pan juices into a saucepan and boil over high heat until reduced to 3 cups, about 20 minutes. Skim off the fat and pour the juices into a warmed gravy boat. Carve the ham in thin slices and serve with the pan juices.
