SPICY TOMATO BISQUE WITH GRILLED BRIE TOAST

Spicy Tomato Bisque with Grilled Brie Toast image

Nothing's more comforting than grilled cheese and tomato soup. This is a gussied-up version, with grilled Brie cheese sandwiches and spiced tomato bisque with basil. As the soup soaks into the sandwich, break into pieces with your spoon and ladle up with the soup.

Time 25m

Yield 4

Number Of Ingredients 10

4 ounces Brie cheese
4 slices rye bread
1 (28 ounce) can tomato puree
½ teaspoon red pepper flakes
⅛ teaspoon freshly ground black pepper
¾ teaspoon dried basil
½ teaspoon white sugar
¼ cup milk
4 ounces cream cheese, cubed
2 tablespoons chopped fresh basil leaves

Steps:

  • Preheat the oven or a toaster oven to 400 degrees F (200 degrees C). Spread the Brie cheese onto two slices of bread, and top with remaining slices. Place on a baking sheet and toast in the oven for about 8 minutes, turning once halfway through. Cut in half, and set aside.
  • In a saucepan over medium heat, stir together the tomato puree, red pepper flakes, black pepper, basil, and sugar. Bring to a simmer, and cook for 10 minutes.
  • Whisk in the cream cheese until well blended, then stir in the milk. Heat through without bringing to a boil. Stir in the fresh basil, and remove from the heat.
  • To serve, place each sandwich half into a separate bowl. Ladle soup over each one into the bowl. Serve immediately.

SPICY TOMATO SOUP

After some looking at different recipes, I thought I would experiment with making an Indian Tomato Soup, as I once had in a restaurant. This comes close. Warning! Indian Chili powder is much spicier than your ordinary store-bought.

SPICY TOMATO SOUP

Spicy Tomato Soup image

This recipe has been in my family for as long as I can remember. Ever since I was a kid, I can remember my Mother's Tomato Soup on those cold winter's nights while sitting on the poarch on one of the cattle stations, listening to the quiet chatter of the stockmen preparing for an early start on Monday morning. Sunday evening was one of the few times of the week that we could have my Mum to ourselves. The rest of the week was rather busy with early morning starts and busy evenings perparing the bread dough, biscuits and cakes for breakfast and morning teas.

Time 1h

Yield 4 serving(s)

Number Of Ingredients 12

1 ounce butter
1 medium onion
1 carrot
1 tablespoon plain flour
1 lb ripe tomatoes
1 pint water or 1 pint vegetable stock
1 bay leaf
2 teaspoons sugar
1 pinch ground mace or 1 pinch nutmeg
salt and pepper
1 teaspoon arrowroot (optional)
3 -4 tablespoons cream (optional)

Steps:

  • Slice tomatoes, onion and carrot.
  • Melt butter in a medium size saucepan.

  • Stir until boiling, simmer for 20-30 minutes.
  • Rub soup through sieve, pour back into rinsed saucepan, and reheat.

  • Reboil to cook the arrowroot if used to thicken the soup.
  • Add cream if used.
  • If cream is added do not boil the soup.
  • If required, a teaspoon of tomato paste may be added to the tomato soup for extra colour and flavour.
  • Serve with crusty bread, the kind that you have to break apart with your hands.
  • Feel free to dip your chunks of bread into the soup.

SPICY FRESH TOMATO SOUP

Spicy Fresh Tomato Soup image

I attempted to make spicy tomato sauce out of fresh tomatoes and this soup is the result. We think it is a winner. If you simmer this for an additional 45 minutes, not covered, you will get a thick spicy sauce. This soup tastes great frozen and reheated.

SPICY TOMATO JALAPENO SOUP

Spicy Tomato Jalapeno Soup image

This is not your average run-of-the-mill tomato soup, this soup takes time to prepare but well worth the extra time. The soup can be made and refrigerated then pureed and heated the following day, actually it tastes even better as the flavors blend overnight. If you like spice then try this soup, of coarse you can adjust the jalapeno to taste. This is a fantastic starter to serve to your guests at a dinner party, to save time, make the soup well in advance even a day ahead, and just warm before dinner, pass a small cup of whipping cream. The complete recipe may be doubled to serve more than four people.

Provided by Kittencalrecipezazz

Categories     Vegetable

Time 1h15m

Yield 4 serving(s)

Number Of Ingredients 11

2 (28 ounce) cans whole tomatoes (drain only 1 can)

whipping cream (unwhipped)

EASY TOMATO SOUP

Easy Tomato Soup image

Making homemade tomato soup is incredibly simple, and my tips will take it to the next level! Adding bacon and sautéing plenty of extra vegetables in the drippings before adding the tomatoes gives the soup a rich and deep flavour.

Provided by Nora from Savory Nothings

Categories     Lunch     Main Course

Time 30m

Number Of Ingredients 9

2 slices bacon (chopped)
1 onion (roughly chopped)
3 cloves garlic (chopped)
2 stalks celery (roughly chopped)
1 large carrot (peeled and roughly chopped)
2 teaspoons Italian seasoning
2 1/2 cups broth (any kind works, we prefer chicken)
28- oz. can crushed tomatoes
Heavy cream (to serve (optional))

Steps:

  • Get sautéing: Heat a large pot or Dutch oven over medium heat. Add the bacon and brown until there's rendered fat in the pot. Add the onion, garlic, celery and carrot. Cook until starting to soften and caramelise, about 5 minutes.
  • Season: Stir in the Italian seasoning and any additional seasoning you might like. Cook for 1 minute, stirring constantly.
  • Add liquids and simmer: Add the broth and crushed tomatoes and stir well. Bring to a boil, then reduce the heat to low and simmer for 10-15 minutes. If you prefer a thick soup, leave the lid off. If you like your soup on the thinner side, cook it with the lid on.
  • Blend: Allow the soup to cool for 5 minutes before blending it until smooth. If you like, stir in a few tablespoons of heavy cream before serving.

Provided by pammyowl

Categories     European

Time 1h20m

Yield 6 serving(s)

Number Of Ingredients 9

2 tablespoons extra-virgin olive oil
1 small yellow onion, peeled, halved, and sliced into 1/4-inch-thick slices
1 teaspoon red pepper flakes (or to taste ( we started with 1/2 teaspoon)
2 (28 ounce) cans whole tomatoes
1 1/2 cups water
1/4 cup loosely packed fresh basil leaf
kosher salt
fresh ground black pepper
creme fraiche, for garnish (optional)

Steps:

  • Heat the olive oil in a large saucepan over medium heat until shimmering. Add the onions and red pepper flakes and cook, stirring occasionally, until the onions are translucent and very tender, about 10 minutes.
  • Stir in the tomatoes and their juices, plus the water, and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, until the flavors have melded, about 30 minutes. (If you're in a hurry, you can skip the simmer time -- just add a bit less water.)
  • Add the basil, season with salt and pepper, remove from the heat, and let cool briefly, about 5 minutes.
  • Set a fine-mesh strainer over a large, heatproof bowl.
  • Using a blender, purée the soup in batches until smooth, removing the small cap from the blender lid (the pour lid) and covering the space with a kitchen towel (this allows steam from the hot soup to escape and prevents the blender lid from popping off).
  • Pour the blended soup through the strainer, pressing on the solids with a rubber spatula or ladle; discard the solids. Taste the soup and season with additional salt and pepper as needed.
  • Return the soup to the saucepan and reheat on medium low until hot.
  • If you choose, serve topped with a tablespoon of crème fraîche.

  • Preheat oven to 400 degrees F. Cover a baking sheet with aluminum foil or parchment, and lay out tomatoes so that they are in a single layer. Drizzle or mist with 1-2 tablespoons of vegetable or canola oil, and then sprinkle generously with salt and black pepper. Roast until tomatoes are tender, about an hour.
  • Meanwhile, heat a large stockpot over medium-high heat. Add the bacon and cook, stirring occasionally, until crispy (about 8-10 minutes). Transfer to a heat-proof bowl and set aside, reserving about 2 tablespoons of the fat in the stockpot.
  • Add onion and saute for about 5 minutes until the onion is soft and translucent. Add the garlic and cook for an additional minute. Then add the chicken or vegetable stock, bay leaf, smoked paprika, roasted tomatoes and cooked bacon and bring to a boil. Reduce heat to medium-low, and simmer for 15-20 minutes to slightly reduce.
  • If desired, use an immersion blender to puree the soup. Or transfer the soup in small batches into a blender and puree until smooth. (Be very careful pureeing hot liquids!) Transfer the soup back to the stockpot and stir in the heavy cream. Remove from the heat and serve immediately.

SPICY TOMATO SOUP (WITH BACON AND SAUSAGE) : 11 STEPS ...

From instructables.com
Estimated Reading Time 7 mins
  • Tools. a nice big pot with a lid (I think mine is about 8 quarts) a skillet for frying. a knife. a cutting board. a spatula. a big spoon for stirring the soup.
  • Ingredients. 4 (10 oz) cans of condensed tomato soup (I never said this was healthy) 2 cans of water. 2 (10 oz) cans of tomatoes with diced chilies (I get one hot and one medium, get whatever you're comfortable with heat wise)
  • Preparation! Clean your work space and gather your ingredients. This might seem a little obvious, but having everything together in one places makes things go a lot faster!
  • Slice, Chop, Cry. Gently rinse off your mushrooms (unless you like eating dirt) and slice them all up. I usually get about five or six slices per 'shroom.
  • Clog Those Arteries Part 1: Bacon. Using a pair of kitchen scissors or, if yours are missing like mine (dratted roommates! hehe), a knife, cut your bacon into half-inch to inch long pieces.
  • Clog Those Arteries Part 2: Sausage. Remove the casings from each sausage (I hate biting in to them!) and discard. You don't want them floating around in your soup, trust me.
  • Clog Those Arteries Part 3: Onions. Here comes the fun part. Cook your onions in the bacon and sausage drippings until they are golden brown and tender.
  • Some Assembly Required. Empty all four cans of tomato soup into your pot (bigger is better!) , along with two cans of water and the chilies. Stir well to mix then set the heat to medium.
  • Chow Time! Finally! Pour some nice hot soup into a bowl and enjoy! I warned you that it is spicy! If it is too hot for your liking, try adding some shredded cheddar cheese or sour cream to help cool it off a little.
  • Now What? This recipe makes an incredibly large amount of soup, way more than I can eat in a few sittings. I like to keep half of it in the fridge to munch on throughout the week and put the other half in the freezer so it doesn't go bad.
