SPICY TOMATO BISQUE WITH GRILLED BRIE TOAST
Nothing's more comforting than grilled cheese and tomato soup. This is a gussied-up version, with grilled Brie cheese sandwiches and spiced tomato bisque with basil. As the soup soaks into the sandwich, break into pieces with your spoon and ladle up with the soup.

Steps:
- Preheat the oven or a toaster oven to 400 degrees F (200 degrees C). Spread the Brie cheese onto two slices of bread, and top with remaining slices. Place on a baking sheet and toast in the oven for about 8 minutes, turning once halfway through. Cut in half, and set aside.
- In a saucepan over medium heat, stir together the tomato puree, red pepper flakes, black pepper, basil, and sugar. Bring to a simmer, and cook for 10 minutes.
- Whisk in the cream cheese until well blended, then stir in the milk. Heat through without bringing to a boil. Stir in the fresh basil, and remove from the heat.
- To serve, place each sandwich half into a separate bowl. Ladle soup over each one into the bowl. Serve immediately.

After some looking at different recipes, I thought I would experiment with making an Indian Tomato Soup, as I once had in a restaurant. This comes close. Warning! Indian Chili powder is much spicier than your ordinary store-bought.

- Heat oil in a large saucepan over medium heat; stir in onions and bay leaves, and cook about 5 minutes until the onions begin to soften. Add flour, ginger-garlic paste, garam masala, turmeric, and Indian chili powder. Cook and stir until fragrant, about 1 minute.
- Pour the water into the pan, and bring to a boil while scraping the browned bits of food off of the bottom with a wooden spoon. Pour in the tomato puree and thin with additional water to desired consistency. Add sugar and salt; cook until sugar is dissolved and soup is hot, about 5 minutes.
- Remove bay leaves and serve with cream if desired.

SPICY TOMATO CHOCOLATE SOUP

- Heat oil and butter in a stock pot over medium high heat until butter melts.
- Add onion and sauté until translucent, approx. 5 mins. Add garlic, carrots, celery and sun dried tomatoes.
- Season with salt, pepper, harissa, paprika, cumin and coriander. Saute for a couple of minute to toast spices and soften vegetables.
- Add wine and continue cooking on high until all of the liquid has evaporated. Add tomatoes and chicken broth. Bring to a boil. Cover and reduce heat to a simmer. Cook for 45 mins or until the vegetables are tender.
- Pass soup through a food mill or blender to puree and remove any large particles. Return soup to pot and place over low heat.
- Add parsley and cilantro. Add chocolate and enough honey to balance acidity. Adjust seasoning to taste.
- Serve hot, garnished with queso fresco, fresh goat cheese or crème fraiche.
SPICY TOMATO SOUP
This recipe has been in my family for as long as I can remember. Ever since I was a kid, I can remember my Mother's Tomato Soup on those cold winter's nights while sitting on the poarch on one of the cattle stations, listening to the quiet chatter of the stockmen preparing for an early start on Monday morning. Sunday evening was one of the few times of the week that we could have my Mum to ourselves. The rest of the week was rather busy with early morning starts and busy evenings perparing the bread dough, biscuits and cakes for breakfast and morning teas.

- Slice tomatoes, onion and carrot.
- Melt butter in a medium size saucepan.
- Add the onion and carrot, cover, and allow to soften for 5-6 minutes.
- Remove from the heat, stir in the plain flour, add tomatoes, stock or water, bay leaf, sugar, mace or nutmeg and seasoning.
- Stir until boiling, simmer for 20-30 minutes.
- Rub soup through sieve, pour back into rinsed saucepan, and reheat.
- Adjust seasoning, and thicken slightly if necessary with a teaspoon or more of arrowroot blended with a tablespoon of cold water.
- Reboil to cook the arrowroot if used to thicken the soup.
- Add cream if used.
- If cream is added do not boil the soup.
- If required, a teaspoon of tomato paste may be added to the tomato soup for extra colour and flavour.
- Serve with crusty bread, the kind that you have to break apart with your hands.
- Feel free to dip your chunks of bread into the soup.
SPICY TOMATO & BACON SOUP
Original recipe that I thought tasted great, it is quite spicy so reduce or omit chilli flakes and/or pepper for a mild result. Can of course be scaled up easily.

- Remove rind from bacon and tear into bite sized pieces.
- Place bacon, oil, garlic, and onion flakes into medium saucepan and cook over medium heat until bacon is browned and cooked through.

This is not your average run-of-the-mill tomato soup, this soup takes time to prepare but well worth the extra time. - Puree 2 cans of tomatoes in a blender (leave one with the juice, and the other drained).
- In a heavy large pot or saucepan saute the onion, garlic, chile pepper and fresh ginger until onion is softened (about 6 minutes).
- Add in cumin; cook stirring 1 minute.
- Stir in pureed tomatoes, broth, 1 tablespoon sugar and 2 teaspoons salt; simmer uncovered, stirring occasionally for 30-40 minutes.

- Get sautéing: Heat a large pot or Dutch oven over medium heat. Add the bacon and brown until there's rendered fat in the pot. Add the onion, garlic, celery and carrot. Cook until starting to soften and caramelise, about 5 minutes.

- Heat the olive oil in a large saucepan over medium heat until shimmering. Add the onions and red pepper flakes and cook, stirring occasionally, until the onions are translucent and very tender, about 10 minutes.
- Stir in the tomatoes and their juices, plus the water, and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, until the flavors have melded, about 30 minutes. (If you're in a hurry, you can skip the simmer time -- just add a bit less water.)

- Fry the chopped onion and bacon if using in a small knob of butter/oil for about 5 mins
- Add cubed potato and quatered tomatoes, sugar and water simmer gently with the lid on a pan until potato is well cooked. Allow to cool slightly
- Remove the bacon if using and pour the ingredients into a blender.
- Once blended add the seasonings and blend well and adjust to your taste.

- Preparation! Clean your work space and gather your ingredients. This might seem a little obvious, but having everything together in one places makes things go a lot faster!
- Slice, Chop, Cry. Gently rinse off your mushrooms (unless you like eating dirt) and slice them all up. I usually get about five or six slices per 'shroom.
- Clog Those Arteries Part 1: Bacon. Using a pair of kitchen scissors or, if yours are missing like mine (dratted roommates! hehe), a knife, cut your bacon into half-inch to inch long pieces.
- Clog Those Arteries Part 2: Sausage. Remove the casings from each sausage (I hate biting in to them!) and discard. You don't want them floating around in your soup, trust me.
- Clog Those Arteries Part 3: Onions. Here comes the fun part. Cook your onions in the bacon and sausage drippings until they are golden brown and tender.
- Some Assembly Required. Empty all four cans of tomato soup into your pot (bigger is better!) , along with two cans of water and the chilies. Stir well to mix then set the heat to medium.
- Chow Time! Finally! Pour some nice hot soup into a bowl and enjoy! I warned you that it is spicy! If it is too hot for your liking, try adding some shredded cheddar cheese or sour cream to help cool it off a little.
- Now What? This recipe makes an incredibly large amount of soup, way more than I can eat in a few sittings. I like to keep half of it in the fridge to munch on throughout the week and put the other half in the freezer so it doesn't go bad.
