1/3 cup chopped fresh cilantro leaves
1/4 cup chopped Thai basil leaves
2 green onions, thinly sliced
1/4 cup fish sauce
3 tablespoons canola oil, divided
2 tablespoons freshly squeezed lime juice
1 tablespoon lime zest
1 tablespoon dark brown sugar
2 teaspoons freshly grated ginger
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 pounds boneless, skinless chicken thighs

Steps:

  • CILANTRO MIXTURE: In a medium bowl, combine cilantro, basil, green onions, fish sauce, 2 tablespoons canola oil, lime juice, lime zest, brown sugar, ginger, salt and pepper. In a gallon size Ziploc bag or large bowl, combine chicken and CILANTRO MIXTURE; marinate for at least 2 hours to overnight, turning the bag occasionally. Drain the chicken from the marinade. Preheat grill to medium high heat. Brush chicken with remaining 1 tablespoon canola oil; season with salt and pepper, to taste. Add chicken to grill, and cook, turning occasionally, until chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 10 minutes. Serve immediately.

My version of Thai Beef Basil I usually get from take-out. If you can find Thai Basil and Thai Chilies that would be great. Otherwise, I've used regular basil and serrano or jalapeno chilies instead. I freeze the beef for 10 minutes to make it easier to thinly slice.

1/2 lb beef, thinly sliced

1/4 cup onion, sliced

2 tablespoons fish sauce
1/2 tablespoon sugar
1/8 teaspoon white pepper
cilantro, chopped for garnish

Steps:

  • Heat wok with oil, add garlic and chiles.
  • Add beef and stir fry for 1 minute.
  • Add onions and basil, stir for 1 minute.
  • Add remaining sauce: oyster sauce, fish sauce, sugar, and white pepper.
  • Stir fry until cooked, garnish with cilantro.
  • Server immediately with steamed rice.

2 medium zucchini, quartered and chopped
2 cups sliced mushrooms
1/2 cup slivered carrot
1/2 cup chopped fresh basil
1/4 cup chopped cilantro
2 tablespoons soy sauce
2 tablespoons fish sauce
1/2 fresh lime, juice of
1/2 tablespoon minced ginger
1/2 tablespoon minced garlic
2 teaspoons sugar
1/2-2 tablespoon sambal oelek chili paste (to taste)
1 tablespoon cornstarch (optional)
1 1/2 tablespoons vegetable oil

Steps:

  • In a small bowl, combine the fish sauce, soy sauce, lime juice, ginger, garlic, sugar, and sambal oelek for the sauce; set aside.
  • The sauce in this is thin from the veggies; if you like a thicker sauce, add 1 tbsp.
  • cornstarch to your sauce, but it won't affect the flavor either way.
  • Heat oil in wok or large skillet over medium-high heat.
  • Add zucchini, mushrooms, and carrots to pan; stir-fry for 3 minutes.
  • Add sauce in bowl to pan; stir to mix well, and continue cooking for 5 minutes, until vegetables are crisp-tender.
  • Stir in herbs and serve.

SPICY THAI BASIL, CHICKEN & NOODLE STIR-FRY



Spicy Thai Basil, Chicken & Noodle Stir-Fry image

This is a recipe I got off the Thai Kitchen red rice noodles box. It's fantastic and very authentic tasting. It's also good with regular rice noodles and Asian wheat noodles. I've made it with Italian sweet basil, and also by substituting cilantro for the basil. Both are very good. I haven't tried it yet, but I think this would be great served with crushed peanuts sprinkled on top. I'm posting the recipe here for safekeeping.

1 tablespoon sugar
1 tablespoon lime juice
1 tablespoon fish sauce
4 ounces red rice noodles (2 single-serve packages)
2 tablespoons vegetable oil
1 teaspoon garlic, minced
1 small Thai chile, minced
1/2 lb boneless skinless chicken breast, cut into thin strips
1/4 cup carrot, julienne-cut
2 tablespoons green onions, thinly sliced
1/2 cup Thai basil (or cilantro)

Steps:

  • 1. Mix sugar, lime juice and fish sauce in small bowl. Set aside. Bring large pot of water to boil. Remove from heat. Add red rice noodles, stirring to separate noodles in water. Let stand 5 to 7 minutes or until noodles are tender but firm. (If you are using Asian wheat noodles, you will need to actually cook them for 5-7 minutes rather than merely letting them soak in hot water.) Drain well. Place in serving bowl. Set aside.
  • 2. Meanwhile, heat oil in large skillet or wok on medium-high heat. Add garlic and chile; stir fry 15 seconds or until fragrant. Add chicken, carrots and green onions; stir fry 3 to 5 minutes or until chicken is cooked through.
  • 3. Stir in fish sauce mixture; stir fry 1 minute. Add basil (or cilantro); stir fry 30 seconds or until basil (or cilantro) is wilted. Add to noodles in bowl; toss to coat. Serve immediately.
  • Tip: Thai basil has dark green leaves with purple stems and has a licorice flavor. It can be found in most Asian markets. If unavailable, substitute Italian basil.

  • In a small food processor pulse the basil, cilantro, garlic, sambal oelek and fish sauce until finely chopped. Add the lemon and lime zests and oil; pulse until the marinade is fairly smooth. Refrigerate for up to 3 days.

Lean pork tenderloin is marinated with chiles, ginger root and cilantro, grilled or broiled, then combined with cabbage, fresh herbs and nuts and coconut for richness. A bit of reserved marinade serves as the dressing. The recipe makes a large batch; you can halve it or make the whole thing and enjoy the leftovers.

1 1/2 pounds boneless pork tenderloin (usually 2 tenderloins)
2/3 cup thinly sliced shallots (about 4 shallots)
2/3 cup chopped cilantro leaves and tender stems
5 tablespoons light brown sugar
6 garlic cloves, grated
5 tablespoons soy sauce
5 tablespoons peanut or grapeseed oil
Juice and zest of 4 limes
3-inch piece peeled ginger root, grated
2 tablespoons Asian fish sauce
1/2 teaspoon kosher salt, more to taste
1 to 2 Thai bird, serrano or jalapeño chile peppers, seeded and minced
8 cups Napa or regular cabbage, thinly sliced
5 whole scallions, trimmed and thinly sliced
2 small Kirby or Persian cucumbers, thinly sliced
1 red bell pepper, thinly sliced
1 1/2 cups cilantro leaves
1 1/2 cups mint leaves
1 cup basil leaves
1 1/4 cups roasted cashews or peanuts, toasted and chopped
1/4 cup unsweetened coconut chips or large flakes, toasted

Steps:

  • Pat pork dry with paper towel. In a bowl, combine shallot, cilantro, 2 tablespoons of the sugar, garlic, soy sauce, peanut or grapeseed oil, lime zest and juice, ginger, fish sauce, salt and chile. Pour a quarter of the mixture into a blender, add remaining sugar and purée until a smooth, loose paste forms. (Save the unblended mixture to use as dressing.)
  • Place tenderloin in a large bowl and spread the paste all over pork. Marinate at room temperature for 2 hours, or cover and refrigerate up to 24 hours; turn the tenderloin occasionally.
  • Light the grill or heat the broiler and arrange a rack at least 4 inches from the heat. Grill or broil pork, turning occasionally, until well browned and meat reaches an internal temperature of 135 degrees, 4 to 10 minutes per side depending upon the heat of your broiler or grill. Keep an eye on it so it doesn't overcook. Let meat rest while you prepare the salad. (Or, cook the pork 1 or 2 hours ahead and serve it at room temperature.)
  • In a large bowl, combine the salad ingredients, reserving the herbs, cashews and coconut. Whisk the dressing and use just enough to dress the salad, tossing to combine. Let sit for a few minutes for the flavors to meld, then right before serving, add herbs and toss again.
  • To serve, slice the pork. Arrange salad on a platter and top with sliced pork. Scatter cashews and coconut on top, drizzle with a little more of the remaining dressing, to taste.

The DH and I came up with this recipe using a combination of several other recipes gleamed from other sites and my cook books to make a combination we thoroughly enjoyed. We didn't actually measure the oil out just used as needed. Times are estimated as we were cooking and prepping several dishes at the same time.

2 -4 tablespoons peanut oil
1 tablespoon garlic (minced)
1 kg beef (we used rump beaten out and cut into squares)
4 birds eye chiles (chopped)
1 cup onion (we cut into wedges and separated)
1/2 cup red capsicum (chopped)
1 bunch Broccolini (chopped)
1/4 cup basil leaves (fresh)
1 tablespoon oyster sauce
2 tablespoons fish sauce
1/8 teaspoon pepper
1/2 cup coriander (cilantro to garnish chopped, we didn't use)
1 cup beef stock
3 teaspoons cornflour (cornstarch)
2 tablespoons water

Steps:

  • Heat wok with oil and cook meat in batches and transfer to a dish and keep warm (use more oil if required).
  • Add more oil if required and add the garlic and chillies and stir fry for a few minutes and then return beef to the wok.
  • Now add the onion, capsicum and broccolini stems and stir fry till vegetables are cooked but still very crisp and then add the broccolini heads and the basil (if leaves are large tear them though ours were small sweet basil leaves and we added whole).
  • Add the oyster sauce, fish sauce and pepper and mix well.
  • Add the cup of beef stock and then mix the cornflour and water and add to the wok to thicken the sauce.
  • Garnish with coriander/cilantro if using and serve with rice or fried rice.

THAI SPICY BASIL FRIED RICE

This is a great use of leftover rice. It's important to use Thai sweet basil to get the authentic Thai restaurant taste. And don't skip the fish sauce, it smells strong in the bottle, but it blends in nicely with the other ingredients when it's all put together. Also, make sure you use chilled rice, or you'll end up with mush.

2 tablespoons fish sauce
1 tablespoon soy sauce
1 teaspoon white sugar
olive oil flavored cooking spray
4 cups cooked jasmine rice, chilled

2 Thai chiles, chopped (can use serranos)
1 red bell pepper, chopped
1 medium onion, chopped
1/2 cup egg substitute (like egg beaters, or can use 2 eggs)
8 ounces shrimp (or other protein, can use virtually any meat, fish, tofu, etc.)
2 cups Thai basil, leaves left whole
1/2 cup cilantro (optional)

Steps:

  • Whisk together oyster sauce, fish sauce, soy sauce, and sugar. Set aside.
  • Spray a wok or large frying pan with olive oil spray and heat over medium-high heat.
  • Add the garlic and chili (or serrano) peppers and stir fry for 30 seconds.
  • Add the red pepper and onion and stir fry until the onion is translucent. If using chicken or beef, add it with the the onion and red pepper. Cook until chicken is done, or beef is about medium.
  • Push ingredients in the wok/pan aside and quickly scramble the egg.
  • Add the oyster sauce mixture and stir everything together.
  • Raise the heat to high and add the chilled rice. Stir until blended with the sauce and other ingredients, breaking up clumps of rice with the back of a spoon.
  • Add more soy, oyster, or fish sauce, if necessary (or to taste).
  • When everything is blended together and rice is hot, remove from heat and stir in the basil.
  • Garnish with cilantro, if desired.
