SPICY THAI GRILLED WINGS RECIPE

Steps:
- Prepare Big Green Egg or other grill for direct heat cooking, medium-high temperature of 325⁰ using Lump charcoal.
- Season each wing with Killer Hogs AP rub on both sides
- Place 2 chunks of Hickory wood over hot coals for smoke flavor.
- Arrange wings on cooking grate directly over hot coals. Adjust the grill vents so that temperature remains constant at 325⁰.
- Check the wings every 5-10 minutes to avoid burning. Flip as needed.
- In a small sauce pan add Honey, Sweet Chili Sauce, Soy Sauce, water, lime juice, garlic, and Sriracha sauce.
- Heat over medium-high heat just until simmering.
- In a separate small dish combine corn starch and water. Add to sauce mixture and bring to boil. Remove from heat and cool. (reserve ¼ cup of sauce for garnish)
- After wings have cooked for 25-30 minutes, dunk each wing in the sauce and return to grill.
- Grill an additional 5 minutes on each side and remove from heat.
- Serve the wings with a drizzle of extra sauce and Fresh cilantro and Green Onion.

- Mix together all ingredients in a medium bowl. Add the chicken wings and toss to coat evenly. Cover and refrigerate for 2 hours. Grill wings

- Mix honey, 2 tablespoons of Marinade and crushed red pepper in a large bowl. Set aside.
- Place chicken wings in large resealable plastic bag. Add remaining Marinade; turn to coat well. Refrigerate 30 minutes or longer for extra flavor. Remove chicken from Marinade. Discard any remaining Marinade.
- Grill wings over medium heat 20 to 25 minutes or until cooked through, turning occasionally. Add wings to bowl with marinade mixture; toss to coat well. Sprinkle with additional crushed red pepper and sliced green onions before serving, if desired.

THAI-STYLE GRILLED CHICKEN W/ SPICY SWEET AND SOUR DIPPING SAUCE
This is from America's Test Kitchen and it's really good. I have also made it as a marinade for wings (just soaking them).

- To brine the chicken: Dissolve sugar and salt in 2 quarts cold water in large container or bowl; submerge chicken in brine and refrigerate at least 30 minutes but not longer than 1 hour. Rinse chicken under cool running water and pat dry with paper towels.
- For the dipping sauce: Whisk ingredients in small bowl until sugar dissolves. Let stand 1 hour at room temperature to allow flavors to meld.
- To make and apply the rub: Combine all rub ingredients in small bowl; work mixture with fingers to thoroughly combine. Slide fingers between skin and meat to loosen skin, taking care not to detach skin. Rub about 2 tablespoons mixture under skin. Thoroughly rub even layer of mixture onto all exterior surfaces, including bottom and sides. Repeat with remaining chicken pieces. Place chicken in medium bowl, cover with plastic wrap, and refrigerate while preparing grill.
- To grill the chicken: Using chimney starter, ignite about 6 quarts (1 large chimney, or 2 1/2 pounds) charcoal briquettes and burn until covered with thin coating of light gray ash, about 15 minutes. Empty coals into grill; build two-level fire by arranging all coals in even layer in one half of grill. Position grill grate over coals, cover grill, and heat until grate is hot, about 5 minutes (grill should be medium-hot; you can hold your hand 5 inches above grill grate for 4 seconds); scrape grill grate clean with grill brush. Using long-handled grill tongs, dip wad of paper towels in vegetable oil and wipe grill grate. Place chicken, skin-side down, on hotter side of grill; cook until browned, about 3 minutes. Using tongs, flip chicken breasts and cook until browned on second side, about 3 minutes longer. Move chicken skin-side up to cool side of grill and cover with disposable aluminum roasting pan; continue to cook until instant-read thermometer inserted into thickest part of breast (not touching bone) registers 160 degrees, 10 to 15 minutes longer. Transfer chicken to platter; let rest 10 minutes. Serve, passing sauce separately.
- Taking Thai Chicken Indoors. If you don't have a grill, heat your oven to 450 degrees and adjust an oven rack to the lower-middle position, as food tends to brown more deeply and evenly toward the bottom of the oven. Set the brined, rubbed chicken on a flat wire roasting rack and place the rack over a baking sheet lined with foil. Roast the chicken for 15 minutes, rotate the pan, and then cook for an additional 15 minutes. The skin should be light golden brown, and an instant-read thermometer inserted into the thickest part of each breast (not touching any bone) should register 160 degrees. To get the same deep brown exterior that the grill provides, finish the chicken with a quick shot under the broiler (2 to 3 minutes, with the chicken 6 to 8 inches from the broiler element). This pass under the broiler will help to crisp the skin, but the skin will probably not be quite as crisp as it is in the grilled version. The flavors, however, will be just as good.

Steps:
- Cut each chicken wing at joints to make 3 pieces; discard tip. Cut off excess skin; discard.
- In resealable heavy-duty food-storage plastic bag or large glass bowl, mix remaining ingredients. Reserve 1/4 cup of marinade to a small bowl and set aside; add chicken to marinade in bag; turn to coat. Seal bag or covered dish; refrigerate, turning once, at least 1 hour.
- Heat gas or charcoal grill. Remove chicken from marinade; discard marinade in bag. Place chicken on grill over medium heat. Cover grill; cook 45 to 60 minutes, brushing frequently with 1/4 cup reserved marinade turning once, until juice of chicken is clear when thickest part is cut to bone (180°F). Discard any remaining marinade.

Steps:
- Make the glaze, in a small bowl, whisk the sauces, sesame oil and ginger together.
- Trim excess skin from the edges of the wings.
- Lightly brush or spray with the oil, and season with salt and pepper to taste.
- Grill the chicken wings over Direct Medium heat until the skin begins to crisp, about 10 minutes, turning once or twice.
- Brush the wings with the glaze and continue to grill until the meat is no longer pink at the bone, 8 to 10 minutes, turning and brushing with the glaze 2 or 3 times.
- Serve warm.
SPICY THAI CHICKEN WINGS

- Preheat oven to 350°F.
- Cut wings by disjoining the two sections and trim away excess fat.
- Place wings on a baking sheet lined with foil and bake for 35 minutes.
- Set aside.
- In a large skillet over medium heat, add 2 tablespoons canola oil and the grated ginger and cook for 2 minujtes.
- Add vinegar, hot sesame oil, sesame seeds, honey, soy sauce and Sweet-Hot Garlic Chili Sauce.
- Cook for 2 more minutes then transfer to a large bowl and set aside.
- In the same skillet add 4-6 tablespoons canola oil.
- Return the chicken wings to the skillet and cook for about 3 minutes, or until crispy and golden brown.
- Remove wings and drain on paper towels then add to the bowl with the sauce mixture, tossing to coat.
- Marinate in fridge for at least 2 hours or overnight.
- Place wings on a baking pan, reserving the sauce, and bake in 375F for 15-20 minutes to heat thoroughly.
- Serve with more sauce. Garnish with chopped scallions and sesame seeds, tossing to coat evenly.
- SWEET-HOT GARLIC CHILI SAUCE:.
- 1/2 cup rice vinegar.
- 1/2 cup white sugar.
- 1/4 cup water.
- 3 tablespoons fish sauce.
- 2 tablespoons Sherry wine.
- 3 cloves garlic, minced.
- 3/4 teaspoons Thai dried crushed chilis.
- 1/4 cup tomato ketchup.
- 1 1/2 tablespoons cornstarch dissolved in 3-4 tablespoons water.
- Place all ingredients except the cornstarch in a pot and bring to a rolling boil.
- Reduce heat to medium and let boil for 10-12 minutes or until reduced by almost half.
- Reduce heat to low and add the cornstarch mixture incorporating into sauce.
- Cook until thickened about 5 minutes.
- Remove from heat and adjust taste to more sweet or more hot adding sugar or more chilis.
- Serve with wings.

SPICY GRILLED CHICKEN WINGS
We make these all the time! Some marinades need just a short time, but this really tastes amazing if you let it take up space in your fridge for at least 12 hours, preferably up to 48 hours. They taste great at room temperature, so you can even cook them in advance. Prep time, as always, includes marinating time.

- Place the pepper and salt in a medium bowl.
- Add the garlic cloves and crush into the salt and pepper to make a thick paste.
- Add the lemon juice, crushed red pepper, and hot sauce.
- Whisk in the olive oil slowly until well combined.
- Place the chicken wings in a large sealable plastic bag.
- Add the marinade and seal the bag tightly.
- Shake the bag well to coat.
- Refrigerate for 12-48 hours.
- Remove the chicken wings from the refrigerator and let sit at room temperature for 25-30 minutes while heating the grill.
- Grill over medium-high heat, flipping frequently and brushing with the marinade for 15-20 minutes or until cooked through.
- Do not brush the wings with the marinade for the last five minutes to make sure the juices all cook thoroughly.
- Throw away the marinade.
- Serve hot, at room temperature, or chilled (see how versatile this is?).
- The wings can be refrigerated for up to 2 days before serving chilled, or reheated.

SWEET THAI CHILI CHICKEN WINGS

- In a bowl whisk together peanut oil, rice vinegar, 2 teaspoons soy sauce, garlic, ginger and chili oil (if using). Place chicken wings in marinade and toss to coat. Cover and refrigerate for at least 1 hour.
- Preheat oven to 400 degrees. Line a baking sheet with aluminum foil. Place marinated chicken wings on top, cook 20 - 25 minutes or until chicken is cooked through and skin has darkened. Turning once.
- In another bowl whisk together sweet Thai chili sauce, 1 teaspoon of sriracha and remaining teaspoon of soy sauce. Taste and add more sriracha if desired.
- Transfer hot wings to the bowl and toss to coat.
- Serve with plenty of napkins.
