SIMPLY DELICIOUS SHRIMP AND SPINACH PIZZA
Lots of flavor and texture. This I made quick and easy by using shrimp already cooked and peeled, the dough I used Pillsbury pizza crust, bought shredded cheese and use prewashed baby spinach.

Steps:
- Preheat oven to 475.
- Saute onions, garlic and spinach in 1 teaspoon oil{adding more is needed}till translucent.
- Remove from pan season with basil, oregano, habanaro, salt and pepper, set aside.
- Unroll pizza dough and shape into a circle and place on a pizza stone.
- Brush 1 tablespoon oil on dough, arrange tomatoes, cut side up and shrimp on oiled dough.
- Place spinach mixture around the shrimp and tomatoes.
- Top with mozzarella then grated cheese.
- Sprinkle remaining oil over all.
- Bake 10-15 minutes till bubbling and lightly browned.

- In a nonstick skillet, saute onion, mushrooms, asparagus and garlic in oil until almost tender. Add shrimp; cook until shrimp turn pink. SHRIMP PIZZA
Steps:
- Preheat an oven to 400 degrees F (200 degrees C). Stir together the cream cheese, Parmesan cheese, mayonnaise, garlic, and spinach until evenly mixed; set aside.
- Press the pizza dough onto a baking sheet, and brush with 2 tablespoons of olive oil. Sprinkle with 1 teaspoon Italian seasoning. Bake in the preheated oven until golden brown, 10 to 12 minutes.
- Meanwhile, heat 2 tablespoons of olive oil in a skillet over medium heat, and cook the bell pepper and onion until tender, about 5 minutes. Season with 2 teaspoons of Italian seasoning, and stir in the canned shrimp; cook until the shrimp are heated through.
- When the crust has baked, remove from the oven, and spread evenly with the spinach mixture. Spread the shrimp and vegetable mixture onto the pizza, and cut into pieces to serve.

Thick sliced bacon adds so much flavor to this light pizza. I was skeptical because there's no sauce but it turned out great! I used fresh ripe homegrown tomatoes and fresh baby leaf spinach. Use as little or as much as you like.

- Fry bacon, when mostly done but NOT cripsy, drain grease except for 1 Tablespoon.
- Take the bacon out of the pan (pat down with paper towel).
- Saute shrimp, onion and garlic in remaining bacon grease (don't over-cook!).
- Spoon the contents of the skillet over the pizza crust, spread evenly.
- sprinkle with parmesan.
- tear bacon into pieces (quarter size), place evenly on crust.
- sprinkle half mozzarella.
- tear spinach leaves and place evenly on pizza.
- cut tomato in slices, then in 1/2s, place in a wheel formation on top.
- sprinkle with remaining mozzarella and parmesan and red pepper flakes.
- Bake 400 for 5 minutes directly on oven rack, keep checking pizza until cheese has melted but not bubbled. (approx 8 minutes).

THREE-CHEESE BACON PIZZA

- Put a pizza stone or inverted baking sheet on the lowest oven rack and preheat to 475 degrees F for at least 15 minutes. Meanwhile, roll out the dough into a 9-inch round on a lightly floured surface. Lightly dust a pizza peel or another inverted baking sheet with flour; lay the round of dough on top and set aside. Cook the bacon in a large skillet over medium heat, stirring, until crisp, about 6 minutes. Remove with a slotted spoon and drain on paper towels. Combine the tomato sauce, olive oil, garlic and oregano in a medium bowl; season with salt and pepper. Slide the dough directly onto the hot stone or baking sheet and bake until lightly golden and puffy, about 7 minutes. Remove from the oven and let cool slightly, then carefully slice the crust in half horizontally with a serrated knife to make 2 thin crusts. Turn the crusts cut-side up. Spread with the sauce mixture, then top evenly with the mozzarella, cheddar and bacon. Slide the pizzas back onto the hot stone or baking sheet; bake until the cheese melts and the crust is golden, about 8 more minutes. Sprinkle with the parmesan.
PIZZA WITH SHRIMP, BACON AND ARTICHOKE HEARTS
Homemade pizza is meant to be imperfect, Sam Sifton argued in 2009, in bringing this recipe to The Times. "Your pizza may look a little funny," he wrote. "It may be ovoid, crackly in parts. It may have soft spots. But it will still be pizza, and it will still be delicious, and in these parlous times, it is cheap to boot." But, still, it's worth making - and topping as you please. Do as Chris Schlesinger, formerly of the East Coast Grill in Cambridge, Mass., does, and add shrimp and artichoke hearts to a flatbread. - At least 45 minutes before cooking, preheat the oven and pizza stone to 550 degrees.
- Melt the butter in a small sauté pan over high heat until it foams. Add the shrimp and garlic, season with salt and cook for about a minute, shaking the pan, until the shrimp just start to color. Transfer to a bowl.
- Place the bacon in the pan and set over high heat. Cook, stirring occasionally, until brown and crispy. Using a slotted spoon, transfer the bacon to a small bowl.
- Place the dough on a heavily floured surface and stretch and pull, using your hands or a rolling pin, into about a 14-inch round. Place on a lightly floured pizza peel or rimless baking sheet. Cover with the toppings, being careful not to press on the dough and weigh it down: the bacon first, then the artichoke hearts, the shrimp, the cheese and finally the oregano, leaving roughly a 1/2-inch border. Shake the pizza peel slightly to make sure the dough is not sticking. (Gently lift any sections that are sticking and sprinkle the peel with flour.) Slide the pizza directly onto the baking stone in one quick, forward-and-back motion. Cook until the crust has browned on the bottom and the top is bubbling and browning in spots, about 7 minutes. Drizzle the pie with a little olive oil and some pepper. Serve hot.

- Pre-heat oven to 400°F.
- Spray a cookie/pizza sheet with cooking spray. Mix thawed shrimp, oil, and garlic until coated and set aside.
- Unroll dough carefully and place on the cookie sheet. Gently press dough intoa large rectangle. Bake at 400°F 6-8 minute or until edges are golden brown.
- Meanwhile, cook bacon until crisp and drain.
- Remove crust from oven and spread Alfredo sauce over it and the mozzarella cheese over that. Bake another 6-10 minutes until cheese is melted.
- While that is baking chop the bacon into bite-size pieces and chop tomato and parsley.
- Remove pizza from oven one more time and add all the chopped stuff as well as the shrimp mixture. Bake 3 more minutes, sprinkle with parsley, and serve!

- Position a rack 3 to 4 inches from the heat source and preheat the broiler. Whisk the lemon juice, garlic, paprika, thyme, olive oil and 1/2 teaspoon salt in a shallow baking dish. Add the shrimp and toss to coat; marinate in the refrigerator, 20 minutes.

- melt 1 T butter in a nonstick pan over medium high heat.
- add shallot, garlic and thyme.
- cook, stirring, till mixture is reduced to about 1/2 cup (toward end of reduction, reduce heat to low and stir frequently).

- roasted garlic:.

- scrape up the garlic and redistribute it in a single layer to provde even browning.

- remove from the oven when it is uniformly golden brown. set aside.
- to make pizza:.
- preheat oven to 425.
- prepare dough.
- use a large spoon to spread garlic shallot butter over surface of the crust, within the rim.
- spread mozzarella over the butter sauce.
- evenly distribute the onions and roasted garlic over the cheese.
- place shrimp, skin side up evenly over the cheese and toppings.
- transfer pizza to preheated oven, bake till crust is crispy and golden and the cheese at the center is bubbly, about 15 minutes.
- the shrimp should be opaque and cooked through.
- when pizza is fully cooked, carefully remove from the oven, sprinkle oregano and parsley over the cheese.
- slice and serve.
