Steps:
- Place pinto beans in heavy large pot. Add enough water to pot to cover beans by 3 inches; let soak overnight. Drain beans. Return beans to pot. Add 5 cups water, chopped onion, garlic and bay leaf and bring to a boil. Boil until beans are just tender, stirring occasionally, about 55 minutes. Stir in remaining ingredients and simmer until beans are very tender and flavors blend, about 30 minutes. Season to taste with salt and pepper and serve.
CRAIG'S SWEET & SPICY CROCKPOT BBQ BEANS
Adapted from a friend's amazing baked beans recipe, this is a very flexible, crowd pleasing dish. It freezes well so I usually make a double batch and freeze it in single portions for work week lunches or quick sides for dinner. Adapt it to whatever ingredients you have on hand, keeping the ratios of ingredients similar. You can use canned beans. This is a super flexible recipe, I've made it with all sorts of variations (more/less vinegar, using Indian BBQ sauce instead of ketchup, using corn syrup instead of molasses, using bacon/Spanish chorizo/Italian salami) and had it turn out about the same every time.

- To cook the beans:
- 1. Put beans, bouillon, pork, garlic and bay leaf in crock pot.
- 2. Add water to about 1-2 inches over the beans.
- 3. Cook on high until soft, ~3 hours or overnight (8 hours) on low. Cooking for a longer period (aka overnight) won't hurt them, just make them softer and more creamy.
- To make the sauce:.
- 1. Saute onions, peppers and garlic in a little bit of oil (I use a tsp of bacon fat if I have it) ~10 minutes until softened and brown.
- 2. Add rest of ingredients, stir, bring to a boil, and simmer on low until mixture has thickened to a syrupy consistency and onions and peppers are very soft.
- 3. Mix in beans, pour into large pan, cover with aluminum foil and bake at 350 F for one hour (or longer). Remove foil about 15 minutes before end of cooking time to let top brown.
- 4. Beans are best if served the next day (I usually make this in the evening and let the beans sit in cooling oven overnight). Will keep for one week or more in fridge, great to freeze and reheat later.
- Note: ****My secret ingredient is a can of dr. pepper (diet is fine) added with the rest of the liquid ingredients in the sauce.
CROCK POT SWEET AND SPICY PORK OR BEEF RIBS AND BEANS
For this recipe the ribs need to be browned under the broiler first for extra flavor. You can also cook this in a 300 degree oven.

Steps:
- Place the drained beans in the crock pot; set aside.
- Cut the pork or beef ribs into serving-size pieces, then season with seasoned salt and black pepper.
- Place the ribs in a broiler pan, then broil in oven for about 20-25 minutes, turning once.
- Add the browned ribs to the slow cooker and then sprinkle the onion, fresh garlic and green pepper over the ribs.
- In a saucepan combine the BBQ sauce, jalapeno jelly and Tabasco hot sauce; cook stirring over low heat until melted and combined.
- Pour the mixture over the ribs and toss to coat with the sauce.
- Cover and cook on HIGH for about 5-6 hours or on LOW for about 9-10 hours.
- Remove the ribs and skim off any fat from the sauce.
- Arrange the ribs over the bean mixture.

SPICY SLOW COOKER PINTO BEANS
This makes a lot of beans--a 7-quart slow cooker's worth! This is not fast cooking, but low and slow. And it's not a low-calorie/low-fat meal. My mother started this recipe and was a staple in our home growing up. My brother has perfected it and shared it with us. Serve with anything you desire. In our home, it's tortillas and eggs! These freeze well and reheat/refry beautifully.

- Place pinto beans in a 7-quart slow cooker and add enough water to cover. Allow to soak for 3 to 4 hours.
- Combine jalapeno peppers and garlic in a food processor; puree into a paste.
- Drain beans and return to the slow cooker. Stir in jalapeno-garlic paste. Nestle ham hocks among the beans. Sprinkle onion chunks, salt, cayenne, pepper, and paprika over the beans. Place bacon and green chiles on top.
- Cover and cook on Low for 10 hours. Remove ham hocks. Cool slightly; shred the meat.
- Return meat and fat to the slow cooker. Stir for a few minutes to incorporate fat into the beans and give liquid a creamy consistency. Turn off or keep warm until ready to serve.

- Add beans, water, and salt to your instant pot. Cook on manual, using high pressure, for about 25 minutes (20 minutes for firmer beans, 30 minutes for very soft beans). Allow the pressure to manually release.
- Remove the lid, and pour the beans into a strainer. Rinse with cold water and set aside.
- Set instant pot to saute and heat the bacon until it starts to brown. Drain some of the grease, then add the onions (optional) and cook until tender.
- Turn the instant pot off and add ketchup, bbq, chilies, syrup, and mustard. Stir, making sure to scrape the bottom of the Instant Pot. Add the beans back in to the instant pot and stir until completely combined.
- Replace the lid, turn the steam valve to sealing and cook on manual, using high pressure, for 15 minutes. Naturally release the pressure. Open the lid and stir, then serve warm.

- Cook bacon in large nonstick skillet over medium heat until crisp. Drain bacon on paper towels. Chop bacon; reserve. Pour off all but 2 teaspoons drippings from skillet.
- Heat drippings in same skillet over medium heat. Add onion and sauté until golden, about 5 minutes. Add garlic; stir 1 minute. Add tomato sauce, 1 cup water, sugar, molasses, vinegar and mustard and bring to boil. Reduce heat and simmer 5 minutes, stirring often. Stir in all beans and bacon and bring to boil. Reduce heat; cover and simmer 5 minutes to blend flavors. Uncover and simmer until mixture thickens slightly, about 5 minutes. Season with salt and pepper.
COWBOY'S PINTO BEANS
This is my recreation of the pinto beans at our favorite BBQ restaurant. It took a while to get the spicy, slightly sweet flavor right and this comes pretty durn close to the original.

- Spray a 1 1/2-quart casserole dish with cooking spray.
- Cook bacon until just crisp, pat with paper towels, and crumble. Reserve 2 tablespoons of bacon grease.
- In reserved bacon grease, sauté onion and garlic until tender, about 10 minutes.
- Put undrained pinto beans, onions and garlic, bacon pieces, and rest of ingredients into the casserole dish and mix well.

- Fry the bacon pieces in a large skillet until browned and crisp, remove from the pan and set aside. Crumble the ground beef into the pan; cook and stir until no longer pink, then drain off grease. Transfer the ground beef and bacon to a slow cooker.
- Pour the baked beans, navy beans, kidney beans, ketchup, brown sugar and vinegar into the slow cooker. I found this recipe in Southern Living! Yummy! I've prepared this the night before on low to have done for an early dinner! I did tweak it. The optional ingredients were added to the original recipe from Southern Living.

- Place beans in a 5-quart electric slow cooker; set aside.
- Cut ribs apart; sprinkle with garlic powder, salt, and pepper.
- Place ribs on a broiling pan. Besides browning for taste this removes some of the fat.
- Broil 5 1/2 inches from heat 18 to 20 minutes or until browned, turning once.
- Add ribs to slow cooker, and sprinkle with onion, garlic, and pepper.
- Combine jelly, barbecue sauce, and hot sauce in a saucepan; cook over low heat until jelly melts. (I just added right to the beans and it melted in with no problem).
- Pour over ribs; stir gently.
- Cover and cook at HIGH 5 to 6 hours or at LOW 9 to 10 hours.
- Remove ribs.
- Drain bean mixture, reserving sauce.
- Skim fat from sauce.
- Arrange ribs over bean mixture; serve with sauce.
- Serve on a bed of rice.
