2 (1 lb) eggplants
1/4 cup tomato paste
2 tablespoons red wine vinegar
1 tablespoon balsamic vinegar
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon ground red pepper
2 tablespoons extra virgin olive oil
1 cup onion, chopped finely
2 garlic cloves, minced
4 anchovy fillets, canned chopped (about 1/3 ounce)
2 tablespoons fresh flat-leaf parsley, finely chopped

Steps:

  • Preheat oven to 450°.
  • Pierce eggplants several times with a fork; place on a baking sheet. Bake for 45 minutes turning often, until blackened.Cool slightly; peel. Drain eggplant pulp in a colander for 5 minutesthen chop.
  • Combine tomato paste and next 5 ingredients (through ground red pepper) in a small bowl, stirring until smooth.
  • Heat oil in a large nonstick skillet over medium-low heat. Add onion and garlic cook 6 minutes , stirring occasionally. Stir in eggplant, tomato paste mixture, and anchovies; cook 10 minutes.
  • Remove from heat; stir in parsley and spoon it into a bowl. Cover and chill for at least 1 hour.
  • Makes 12 1/2 servings.

2 large eggplants
4 cloves garlic (peeled and minced)
1/4 cup extra virgin olive oil (plus more for serving)
3 tablespoons freshly squeezed lemon juice
3/4 teaspoon kosher salt
1/4 teaspoon pepper
Chopped fresh parsley leaves and olives for garnish (optional)

Steps:

  • Preheat the oven to 400 degrees Fahrenheit. Place the eggplants on a foil-lined baking sheet and prick a few times with a fork. Roast in the pre-heated oven for 50 to 60 minutes, turning every 15 minutes, until charred and soft.
  • Allow the eggplant to rest until cool enough to handle. Peel the skin away from the flesh (if this proves difficult, simple slice the eggplant in half lengthwise and use a spoon to scoop out the meat). Roughly chop the flesh and place in a colander to drain for 15 minutes.
  • Transfer the eggplant to a large bowl and gently mash with a fork. Add the garlic, olive oil, lemon juice, salt, and pepper. Stir well, taste, and add salt and pepper to taste. Chill for one hour; serve drizzled with olive oil and topped with whole olives and a sprinkling of parsley.

This is a "throw it in the oven & blend it all together" recipe which is always a great hit any time of the year. I have called it a Tapenade; a Tapenade contains olives, anchovies & capers normally, with a few regional variations, but this reminded me of the consistency of a Tapenade, so that's what it's called! (There are NO anchovies in this one!) I use this for dips, spreads, sauces, grilled sandwiches plus grilled meat & vegetables. It is very versatile & stores for up to 2 weeks in the fridge - with a coating of olive oil on top. This recipe makes enough to fill a 1lb jar; it is very easy to increase the quantities. Please note, there is no need to salt the aubergines OR take the skin off after they have cooked.

1 large aubergine, chopped into 2-inch dice
1 large red pepper, de-seeded with the white membrane cut out & chopped into 2-inch dice
6 garlic cloves, peeled
4 tomatoes, roughly chopped
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon chili powder
salt & pepper
2 sprigs fresh coriander (Cilantro)
1 teaspoon harissa (optional)
4 sun-dried tomatoes packed in oil, drained (reserve 1 tablespoon of the sun-dried oil or olive oil)

Steps:

  • Preheat the oven to 200°C or 400°F.
  • Take a sturdy oven proof tin or dish and add the aubergines, red peppers, garlic cloves, tomatoes, cumin, coriander, chili powder and the olive oil.
  • Mix thoroughly, so everything has a light coating of oil.
  • Roast in the oven on the top shelf for 30 to 45 minutes, or until charred and tinged brown on the edges and soft to the touch.
  • Take out and leave to cool slightly.
  • Add the fresh coriander (cilantro), harissa paste if using and sun-dried tomatoes. Season well with salt & pepper.
  • Tip all the mixture into a large bowl and blend it all together with a hand mixer/blender.
  • Do NOT over mix - it should be smooth but not pureed!
  • Serve in an attractive bowl and dribble the remaining olive oil over the top, garnish with some fresh coriander (cilantro) or chopped flat leaf parsley. You can also add an olive or two.
  • Store in a container in the fridge with olive oil on the top for up to 2 weeks.

1 chipotle bouillon cube
1/2 cup water
2 tablespoons liquid amino acid (Bragg Liquid Aminos)
2 molasses (or more to taste)
1 tablespoon cornstarch
1/2 cup cold water
1 eggplant, cubed
3 -4 slices onions, chopped
2 garlic, minced
1/2 red bell pepper
1 tomatoes, cubed
1 vegetable bouillon cube
1/2 cup hot water (add more to keep eggplant from drying out)
1 tablespoon liquid amino acid (Bragg Liquid Aminos)
1/2 cup hot water (add more to keep eggplant from drying out)

Steps:

  • Prepare the sauce first by adding first four ingredients. Taste. Add more molasses if needed. Bring to a boil, then turn down tosimmer.
  • In a preheated pan on medium, spray with a non-stick spray then add eggplant, onion, garlic, red bell pepper and saute for a couple of minutes.
  • In a small bowl add bouillon cube and dissolve. Add to eggplant mixture. Add more water if needed.
  • Add tomato and Bragg liquid aminos.
  • Turn heat down and cover.
  • Return to the sauce. In a separate bowl, mix cornstarch with cold water. Pour into sauce and stir constantly until mixture turns dark.
  • Pour over eggplant, cover, and cook for 5 more minutes.
  • Serve with rice. Hope you enjoy.

1 (300 g) eggplants, medium size
1 cup breadcrumbs
2 garlic cloves, crushed
1/2 cup fresh parsley, chopped
2 teaspoons ground cumin
1/2 teaspoon hot paprika
2 tablespoons lemon juice
1/4 cup yoghurt (natural yoghurt)

Steps:

  • Place eggplant on oven tray. Bake, uncovered, in moderate oven 180°C about 40 minutes or until soft.
  • Remove eggplant and place eggplant in paper bag for 10 minutes.
  • Remove and discard eggplant skin, chop flesh.
  • Blend or process eggplant with remaining ingredients until smooth. You may need to add more yoghurt depending how smooth or thick you prefer your dip. Cover, refrigerate until cold.

1/2 lb eggplant, washed
1 tsp grated ginger
2 Tbsp olive oil
1 1/2 tsp curry powder
1 Tbsp soy sauce
1 tsp sugar
1 tsp ground cumin
1/2 tsp mustard seed
1/2 c french fried onions

Steps:

  • 1. Chop eggplant coarsely, put into a food processor or blender and chop eggplant.
  • 2. In a non-stick skillet, heat olive oil over medium heat and cook mustard seed until fragrant. Add eggplants and cook until eggplants are very tender and until reduced by almost half.
  • 3. Stir in ginger, curry powder, soy sauce, sugar and cumin. Cook until well coated. Lastly, stir in French fried onions. Serve as warm dip or refrigerate until chilled then serve (your choice). To serve, your favorite chips, crackers or toasted baguettes.

1 1/2 lbs Japanese Eggplant (about 4 x 10 inch eggplants)
2 teaspoons salt
bowl of water

2 tablespoons cornstarch
2-4 tablespoons peanut oil ( or wok oil)

4 cloves garlic, rough chopped
2 teaspoons ginger, finely minced
5-10 dried red chilies
1 teaspoon Szechuan peppercorns ( or sub regular peppercorns)
1/4 cup soy sauce or low sodium soy sauce
1 tablespoon garlic chili paste ( or sub 1 teaspoon chili flakes)
1 tablespoon sesame oil
1 tablespoon rice vinegar
1 tablespoon Chinese cooking wine (or mirin)
3 tablespoons sugar, brown sugar, coconut sugar, maple syrup or alternative
1/2 teaspoon five spice

Steps:

  • Cut eggplant into 1/2 inch thick half-moons or into bite-sized pieces ( see photos). Place in a big bowl covered with water and stir in 2 teaspoons salt. Cover with a plate and let stand 20-30 minutes.
  • In the meantime, chop the garlic and ginger and make the Szechuan Sauce.
  • To make the Szechuan Sauce: Toast the Szechuan peppercorns in a dry skillet over medium heat for 1-2 minutes. Crush. Place these along with the remaining ingredients ( soy, chili paste, sesame oil, rice vinegar, Chinese cooking wine, sugar, and five spice) in a small bowl and whisk. Set by the stove.
  • Drain and rinse the eggplant and pat dry with a towel. Toss with the corn starch.
  • heat 1 -2 tablespoons oil in an extra-large skillet over medium heat. Add half the eggplant spreading them out. You want to get both sides nice and golden, and the insides cooked through -so take your time here and dont rush this step. Let one side brown then turn them over using tongs. This will take about 10 minutes for each batch. ( If in a hurry sometimes I'll use 2 pans.) Set the eggplant aside.
  • Add 1 more tablespoon oil to the skillet, and over medium heat, add the garlic and ginger, stirring for 2 minutes. Turn the fan on, add the dried chilis and stir one minute. Pour the Szechuan sauce into the pan and bring to a simmer for 20 seconds. Add the eggplant back into the skillet, tossing gently for about 1 minute. If it seems dry add a tablespoon of water to loosen.
  • Place in a serving dish and top with scallions and optional peanuts.
  • Serve with rice, cauliflower rice, black rice or rice noodles.

  • With a spoon or potato masher, crush and blend tomatoes and eggplant.
  • Add lemon wedge to the pot, if using. Continue simmering mixture, uncovered, for 10 minutes. The lemon will give a tangy nuance but is not necessary.
  • The zaalouk is ready when liquids are reduced and mixture can be stirred into a heap in the center of the pan.
