2 pounds green cabbage
4 carrots
1 medium yellow onion
1/2 cup mayonnaise
1/4 cup mustard
2 teaspoons apple cider vinegar
1 cup sugar
1 teaspoon black pepper
1/2 teaspoon cayenne
Salt and freshly ground black pepper

Steps:

  • Cut cabbage in quarters and remove core. Peel carrots and onion and cut into pieces that would fit through the feed tube of a food processor. Fit food processor with the large-holed grater attachment and push cabbage, carrots, and onions through feed tube to grate. In a large bowl, toss vegetables together.
  • In another medium bowl, prepare the coleslaw dressing by whisking together the mayonnaise, mustard, cider vinegar, sugar, black pepper, and cayenne. Toss dressing with the cabbage mixture, and season with salt and pepper, to taste. Cover with plastic wrap and chill for at least 2 hours before serving.

2 pounds green cabbage (about 1 small or 1/2 large cabbage)
4 carrots
1 medium onion
1/2 cup mayonnaise
1/4 cup mustard
2 teaspoons apple cider vinegar
1 cup sugar
Freshly ground black pepper 1/2 teaspoon cayenne pepper
Kosher salt

Steps:

  • Quarter and core the cabbage. Peel the carrots and onion and cut into pieces that will fit through the feed tube of a food processor. Fit the food processor with the grater attachment and push the cabbage, carrots and onion through the feed tube to grate. Toss the grated vegetables in a large bowl.
  • Prepare the coleslaw dressing by whisking together the mayonnaise, mustard, cider vinegar, sugar, 1 teaspoon black pepper and the cayenne in a medium bowl. Toss the dressing with the cabbage mixture and season with salt and pepper. Cover with plastic wrap and chill at least 2 hours before serving.

3 cups green cabbage, leafy part only, julienned
2 cups red cabbage, leafy part only, julienned
1/2 red bell pepper, seeded and membranes removed, julienned
1/2 yellow bell pepper, seeded and membranes removed, julienned
1/2 carrot, peeled and cut into very fine julienne
1 cup mayonnaise
2 shallots, diced
2 garlic cloves, minced
1 -2 jalapeno pepper, minced
1/2 teaspoon cumin seed, toasted and ground
2 tablespoons fresh cilantro, chopped
1/2 tablespoon malt vinegar
1/2 tablespoon Worcestershire sauce
fresh lime juice (to taste)
salt

Steps:

  • In a large bowl, combine cabbages, red and yellow peppers and carrot until well blended.
  • Process remaining ingredients in a blender until smooth and adjust seasoning.
  • Pour dressing over vegetables and toss to combine.
  • Recheck seasoning and serve.

There are few new recipe discoveries that are as big a hit as this one was when I served it the first time. If you like coleslaw and spicy food, this is the recipe for you to try. You can always adjust the spiciness to your own taste by adding more or less chile paste. The recipe is inspired by a Perla Meyers recipe which was posted in the Houston Chronicle. Whether you like the cabbage and carrots sliced, shredded, or finely minced - it makes no difference. You can purchase pre-sliced or shredded cabbage if you prefer. The prep time does not include slicing or chopping the vegetables, or the chill time.

1/4 cup apple cider vinegar, plus more if needed
1/4 cup canola oil, plus more if needed
1/2 Vidalia onion, minced
Fine sea salt and freshly ground black pepper

My family just raves about this one - try it and see why. I was just playing around in the kitchen one day when I came up with this one. Quick and easy to make. I think most coleslaw recipes have too much mayo or salad dressing and too many calories. Have you ever looked at coleslaw at the supermarket - it's swimming in dressing. I think my recipe is healthy and slimming. I like to put it on a french roll with ham, or chicken, or just on it's own. Or serve it with shrimp mixed in for a cool summer dinner.

1/2 small head cabbage
20 baby carrots
4 tablespoons salad dressing
1 tablespoon lemon juice
2 tablespoons hot horseradish

Steps:

  • Coarsely chop up the cabbage and carrots and place in a salad bowl.
  • In another bowl mix salad dressing (do not substitute mayonnaise, it doesn't taste the same), add lemon juice, and hot horseradish. Try 2 tablespoons of horseradish, taste, if you want it hotter add a little more at a time. If it's too hot, add a tiny bit more salad dressing. Mix well. Taste will cool a little bit once it's added to the veggies.
  • Next mix into salad bowl containing cabbage and carrots. We are so used to seeing lots of dressing on our food at first you will think you do not have enough - but mix it in thoroughly and you will have just a light coating of dressing over the veggies. It tastes great and has far fewer calories than store bought.

1 large carrot, finely shredded (1 cup)

1/2 cup white wine vinegar, white vinegar or cider vinegar
1/4 cup vegetable oil
1 teaspoon ground mustard
