Spiced Sweet Potato and Carrot Soup image

A delicious, warmly spiced, sweet potato and carrot soup. It's so easy to make, tasty, filling and vegan!

1 tbsp olive oil
1 medium yellow onion (finely chopped)
3 large cloves of garlic (minced)
1 thumb-size piece of fresh ginger (peeled then finely grated )
1 heaped tsp cumin
½ tsp garam masala
1/2 tsp paprika
600 g sweet potato (1 large sweet potato) (peeled then cut into similar sized chunks)
490 g carrots (4 large carrots) (peeled then roughly chopped)
1.2 litres of vegetable stock (about 2 pints)
¼ tsp salt (+ more for serving)
¼ tsp freshly cracked black pepper (+ more for serving)
pumpkin seeds
fresh coriander/cilantro
plain yoghurt (plant-based if you are vegan)

Steps:

  • Heat the oil in a large saucepan. Add the onion and cook over medium heat for about 15 minutes, stirring every now and again. The onion should be translucent and springy but not brown.
  • Add the spices, ginger and garlic and cook for a minute until they release their aromas. Then add the carrots to the pan and cook for about 5 minutes, stirring often.
  • Now add the sweet potato to the pan along with the stock, salt and black pepper, stir well then leave to simmer over a low to medium heat for about 20 minutes.Once the sweet potato and carrots are tender blitz the soup with a handheld blender until smooth. Check the seasoning then serve.

6 cups reduced-sodium chicken broth

Steps:

  • In a 5-qt. slow cooker, combine the first 11 ingredients. Cook, covered, on low 6-8 hours or until vegetables are tender., Puree soup using an immersion blender. Or, cool soup slightly and puree in batches in a blender; return to slow cooker and heat through. If desired, top servings with pumpkin seeds.

1 large onion, chopped
1 medium sweet red pepper, chopped
2 medium carrots, chopped
2 teaspoons canola oil

1 carton (32 ounces) plus 1 can (14-1/2 ounces) reduced-sodium chicken broth
1 can (14-1/2 ounces) diced tomatoes, undrained

2 teaspoons honey
4 green onions, chopped

Steps:

  • In a large saucepan, saute the onion, red pepper and carrots in oil for 3 minutes. Stir in the ginger, garlic, cayenne and pepper; cook 2 minutes longer. Add the broth, tomatoes and sweet potato. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are tender., Cool slightly. In a blender, cover and process soup in batches until smooth. 4 tablespoons olive oil
1 cup chopped sweet onion
1 cup chopped peeled potato
2 medium cloves garlic, 1 minced and 1 thinly sliced
Pinch cayenne pepper
Pinch freshly grated nutmeg
Kosher salt and freshly ground black pepper
3 cups diced peeled sweet potato
1 tablespoon unsalted butter
Thinly sliced fresh parsley, for garnish

Steps:

  • Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the onion and cook, stirring, until soft, 3 to 5 minutes. Add the potato, garlic, cayenne, nutmeg, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring, until the potatoes are well coated, 2 to 3 minutes. Pour in 3 1/2 cups of water and bring to a simmer.
  • Add the sweet potato, bring back to a simmer and cook until both potatoes are tender, about 20 minutes, adjusting the heat as needed to maintain a simmer. Remove from the heat and let cool at least 5 minutes. Carefully puree until smooth with a handheld immersion blender or in 2 to 3 batches in a blender (do not fill the blender more than halfway full).
  • Meanwhile, combine the remaining 2 tablespoons of oil and sliced garlic clove in a small skillet and heat over medium. Swirl the pan as the garlic becomes fragrant and turns golden brown, 4 to 5 minutes. Remove the toasted garlic from the oil to a paper towel-lined plate. Reserve with garlic oil.
  • Reheat the soup if necessary, and adjust the consistency and seasoning with additional water, salt and pepper. Stir in the butter off the heat right before serving.
  • Serve hot and garnish with the toasted garlic, a drizzle of garlic oil and a sprinkle of parsley.

1 teaspoon ground turmeric
3/4 teaspoon ground cinnamon

1 tablespoon unsalted butter
1 tablespoon olive oil
2 leeks, white and pale-green parts only, roughly chopped, washed well (1 cup)
1 large onion, cut into 1/4-inch dice
4 sweet potatoes, cut into 1/2-inch dice
1 butternut squash (about 1 1/2 pounds), cut into 1/2-inch dice
2 carrots, cut into 1/2-inch dice
3 quarts Basic Chicken Stock for Chicken and Kale Soup
Coarse salt and freshly ground pepper
Radish sprouts, for garnish (optional)

Steps:

  • Combine spices in a small bowl. In a medium saucepan, heat butter and oil over medium heat. Add leeks and onion; cook until translucent, about 8 minutes. Sprinkle with spices; add sweet potatoes, squash, and carrots. Stir well to combine.
  • Add chicken stock to the mixture in the saucepan, and simmer over low heat, partially covered, until vegetables are tender, about 40 minutes. Season with salt and pepper. Remove from heat.
  • Transfer half the soup to a blender, working in batches, if necessary, so as not to fill jar more than halfway; process until smooth. Return puree to saucepan; place over low heat until heated through. Serve hot; garnish each bowl with a handful of radish sprouts, if using.

  • Once onions are soft add in squash and sweet potato, continue to fry on low heat for ten to twenty minutes or until softened on the outside and golden brown.

2 roughly chopped leeks (white part only)
1 large carrot, chopped
1 whole garlic bulb, sliced in half through the middle not the stalk
1 lemon grass stalk smashed and finely chopped
2 teaspoons of turmeric
1 teaspoon of cumin
1 teaspoon of paprika
A handful or about 20g fresh coriander
A handful or about 20g of fresh Thai holy basil
750ml organic vegetable stock
250ml of coconut milk
A drizzle of olive oil

Steps:

  • Instructions Put the leek, garlic and lemongrass in a roasting tin, drizzle over the olive oil and put in a 200c/392°F oven for 20 minutes. Take the leek and lemongrass out and set aside after this time but return the garlic for another 10 minutes. Meanwhile, pour the stock into a pan and bring to a boil then add sweet potato, carrot, turmeric, cumin and paprika. Simmer for 15 minutes or until the sweet potato and carrot are tender then add the roasted leeks and lemongrass. Remove the roasted garlic cloves from the skin and add to the pan along with the coconut milk, coriander and Thai holy basil. Let the soup cool a little then transfer to a blender or with a hand blender blitz until smooth. re-heat in a pan when ready to be served.

2 leeks, trimmed and chopped (about 500g/1lb prepared weight)
1 onion, peeled and chopped
500g (1lb) prepared weight of sweet potato, diced
1 tsp each ground cumin and ground turmeric
900ml (1½ pints) hot vegetable stock, plus an extra 600ml (1 pint) stock, for serving
410g can chickpeas, rinsed and drained
Salt and ground black pepper
2 tbsp seed mix, dry-fried, optional
A little chilli or paprika flavoured oil, optional

Steps:

  • Heat 2 tbsp of the oil in a large pan and fry the leeks and onion gently for 5 mins. Add the rest of the oil and then fry the sweet potato, stirring, for about 3 mins.
  • Stir in the spices, then pour in the stock and bring to the boil. Reduce the heat, cover and simmer gently for 15-20 mins until the potato is soft. Add the chickpeas and cook for another 5 mins.
  • Blend the soup in a food processor until smooth. Pour back into the pan, add extra stock to get the consistency you like, and heat through. Check the seasoning. Ladle into bowls, sprinkle with seeds and a few croutons, and drizzle with chilli or paprika-flavoured oil, if you like.
  • To make the croutons: Set the oven to 200°C/400°F/Gas Mark 6. Put the oil in a small roasting tin with the whole, lightly squashed garlic cloves. Put in the oven for 10 mins until hot. Break the bread into small cubes and stir into the hot oil to coat them. Cook them for 10-15 mins until golden, turning them halfway through cooking.
