Warm Mustard Potato Salad - creamy potatoes paired with bacon and leek, bathed in a tangy mustard garlic dressing, finished with fresh parsley.

800 g chat / mini / baby potatoes (left whole)
good pinch of salt
1-2 tbsp olive oil
1 large leek
4 streaky bacon rashers (I use hickory smoked - see notes)
15 g salted butter
1/4 cup flat leaf parsley leaves (loosely packed)
1 tbsp whole grain mustard
2 tsp french mustard
2 tsp garlic infused olive oil
1 tsp red wine vinegar

Steps:

  • Bring the whole potatoes to the boil in a large saucepan with a good pinch of salt, and simmer for 10 mins - potatoes should be tender but not falling apart. Once cooked, drain and set aside to steam dry until cool enough (just) to handle - see notes.
  • Meanwhile, slice leek and roughly chop bacon.
  • Heat 1 tbsp of olive oil in a large frying pan over medium high heat, and fry bacon for 2 - 3 mins then remove to a small bowl (leaving fat in the pan) and set aside.
  • Turn the heat down to medium low. Add butter to pan, then leeks & fry for 4 - 5 minutes until leeks are soft. Depending on how much fat was left from your bacon, add the remaining olive oil to the pan if needed.
  • For the dressing, mix all ingredients in a small bowl to combine and set aside.
  • Once potatoes are cool enough to handle, chop each potato into 8.
  • When leeks are soft, add chopped potatoes to the pan along with the reserved bacon (plus any bacon fat!) and gently turn with a spatula for 1 -2 mins, then add dressing and continue to turn gently until dressing is well heated and incorporated.
  • Remove from heat, and add parsley to serve.

1/2 cup white wine vinegar
1 tablespoon coarse-grained mustard
1 tablespoon sugar
2 1/2 pounds red potatoes, diced into 1-inch cubes

6 bacon slices, chopped
1 medium sized red onion, diced
Freshly ground black pepper
2 cloves garlic, chopped
1/4 cup freshly chopped dill leaves, plus more for garnish
Vinaigrette:

Steps:

  • For the vinaigrette:
  • Mix all the ingredients together in a small bowl and set aside.
  • Add potatoes to pot of salted cold water. Bring to a boil, over high heat, then reduce heat to a simmer and cook for 20 minutes until tender. Drain and place in a large bowl. Cover with foil to keep warm, if necessary.
  • Add bacon to large saute pan and cook until crisp over medium heat. Remove to a paper towel-lined sheet tray and reserve. Add onion, dash of pepper and garlic to bacon grease and saute until tender, about 3 minutes. Add vinaigrette to vegetables. Let cook until reduced and thickened, about 2 to 3 minutes.
  • Add potatoes, dill and bacon to the pan and toss to coat with dressing. Allow to cook for 3 minutes. Season, to taste, with salt and pepper. Transfer potato salad to a serving platter and sprinkle with chopped fresh dill.

Steps:

  • Cook the potatoes in a large pan of salted water until just tender, about 10-15 mins. Meanwhile, whisk together the olive oil, mustard and lemon juice in a large bowl. Drain the potatoes and leave to cool for 5 mins, then tip into the bowl along with the spring onions. Toss everything until the potatoes are well coated. Leave to cool. The dish will keep in a covered container in the fridge for up to 2 days.

1 1/2 teaspoons salt
3 tablespoons finely chopped shallots (about 2)
1/2 tablespoon Dijon mustard
1 tablespoon whole-grain mustard
1 tablespoon white-wine vinegar, or to taste
1/2 teaspoon black pepper
3 tablespoons olive oil
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Cover potatoes with water by 1 inch in a 3- to 4-quart saucepan, then bring to a boil with 1 teaspoon salt. Simmer, partially covered, until potatoes are tender, about 10 minutes, then drain.

  • Set a steamer basket in a saucepan with 1 inch simmering water. Add potatoes, cover, and steam until potatoes are tender, 15 to 18 minutes. 1 (24-oz.) pkg. baby Yukon Gold potatoes, halved
4 large eggs
2 ½ teaspoons kosher salt, divided
4 center-cut bacon slices
2 tablespoons dark brown sugar
2 tablespoons whole-grain mustard
1 tablespoon sherry vinegar
¼ teaspoon cayenne pepper
2 tablespoons chopped fresh flat-leaf parsley, plus more for garnish

Steps:

  • Fill a bowl with ice water; set aside. Place potatoes, eggs, and 2 teaspoons of the salt in a large saucepan. Cover with 12 cups tap water; bring to a boil over medium-high. Boil, undisturbed, for 3 minutes. Using a slotted spoon, transfer eggs to ice water. Continue boiling potatoes, undisturbed, until fork-tender, about 15 minutes. Drain potatoes well. Peel eggs; roughly chop. Set both aside.
  • Place bacon in a 10-inch cast-iron skillet. Cook over medium, turning occasionally, until crispy, 10 to 12 minutes. Transfer to a plate lined with paper towels; reserve drippings in skillet. Cool 5 minutes; crumble.

Steps:

  • For the potato salad: Place the potatoes and whole garlic cloves in a large pot and cover by 2 inches with cold water. Season the water liberally with salt. Bring the potatoes to a simmer over medium heat and cook until fork-tender, 20 to 25 minutes. Drain the potatoes and garlic in a colander. Transfer to a sheet tray or cutting board. Gently press each potato and garlic clove to smash them and set them aside in a bowl, covering the bowl with aluminum foil to keep the potatoes warm.
  • For the vinaigrette: In a large bowl, whisk together the shallots, vinegar, lemon juice, mustard, honey, salt and a generous grinding of pepper. Slowly whisk in the olive oil to emulsify the vinaigrette.

  • Wash, dry and mince the tarragon.

2 pounds Red Bliss potatoes unpeeled and quartered
5 cups cold water
1 3/4 teaspoons salt
1/4 pound thick-sliced bacon, cut into 1/2-inch pieces
3 tablespoons all-purpose flour
2 cups chicken broth
2 teaspoons dry mustard
2 tablespoons sugar
1 teaspoon celery seed
1/3 cup cider vinegar
1/8 teaspoon freshly ground pepper
1/2 cup finely chopped scallions

Steps:

  • Place the potatoes in a pot with cold water and 1 1/2 teaspoons of the salt. Bring to a boil, reduce heat and simmer gently for 8 to 10 minutes. Drain and place the potatoes on a serving platter.
  • While potatoes are cooking, place the bacon in a skillet and saute until crisp. Remove the bacon, reserving 1 1/2 tablespoons of the bacon fat in the skillet. Place it over low heat and, using a wire whisk, make a roux by stirring in the flour and allowing it to cook for 5 minutes until thick and smooth. Remove from heat.
  • In a saucepan, warm the chicken broth. Whisk in the roux. In a small bowl mix together the mustard, sugar, celery seed, cider vinegar, the remaining 1/4 teaspoon salt and pepper. Add the mixture to the roux mixture and simmer for 5 to 10 minutes until thickened slightly.
  • Pour sauce over potatoes, sprinkle with reserved bacon and scallions, toss and serve warm.
