Sausage and Mozzarella Quiche with Pickled Cherry Peppers image

Pick Italian sausage for this quiche perked up by pickled peppers.

1 9-inch frozen pie shell
1 cup shredded mozzarella cheese
1/2 cup cooked crumbled Italian sausage
1/4 cup chopped pickled cherry peppers
1 1/4 cups heavy cream
1 tablespoon chopped fresh parsley
3 large eggs
Kosher salt and freshly ground black pepper

Steps:

  • For the crust: Par-bake the crust according to package directions. Let cool slightly before adding the filling.
  • Adjust the oven temperature to 350 degrees F.
  • For the filling: Combine the cheese, sausage and cherry peppers in a small bowl and sprinkle it in an even layer over into the crust.
  • For the custard: Whisk together the heavy cream, parsley, eggs, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl.
  • Pour the custard over the filling and bake until the quiche is set, 35 to 50 minutes. Let cool at least 30 minutes before serving warm or at room temperature.

Sheet Pan Sausage and Peppers image

It takes less than 20 minutes to make this simple, lightened up sausage and peppers recipe! Chicken sausage, colorful peppers, onions and juicy grape tomatoes with extra virgin olive oil, fresh thyme and oregano, all on one sheet pan. A family favorite!

1 lb fully cooked chicken sausage links (mild or spicy)
1 large red bell pepper, cored and cut into thin strips
1 large green pepper, cored and cut into thin strips
1 red onion, halved then sliced (half moons)
1 lb grape or cherry tomatoes
3 Garlic cloves, peeled and minced
Few springs fresh thyme (about 1/8-oz)
1 tbsp Dry oregano
½ tsp Sweet paprika
Kosher salt (I use Diamond Crystal)
Black Pepper
Extra virgin olive oil

Steps:

  • Set your oven to the broil function and arrange a rack about 6 inches or so from the heat source.
  • Score the sausage links in several places but do not cut all the way through.
  • Place the bell peppers, onions, and tomatoes in a mixing bowl. Add garlic, fresh thyme, oregano, paprika, a large pinch of kosher salt and black pepper. Drizzle some extra virgin olive oil (a generous drizzle of 3 to 4 tbsp or enough to coat the veggies well), and toss to make sure the vegetables are well-coated.
  • Arrange the vegetables in one layer on a large baking sheet. Add the sausage, nestling the sausage links between the spread veggies.
  • Slide the baking sheet under the broiler for 8 to 10 minutes (watching carefully) until the veggies have softened and the sausage is looking nicely charred.

One 1-pound bag sweet mini peppers
3 tablespoons olive oil
3 tablespoons white wine vinegar
1 tablespoon sugar
1 teaspoon granulated garlic
Kosher salt and freshly ground black pepper
8 links (about 2 pounds) sweet or hot Italian sausage links

Steps:

  • Add peppers, olive oil, vinegar, sugar, granulated garlic, salt and pepper to a large skillet and toss to coat. Place the skillet over medium-high heat and saute the peppers until they start to get slightly tender, 3 to 5 minutes. Nestle in the sausages amongst the peppers and lower the heat to low, then cover and gently simmer until the sausages are about 145 degrees F, 5 to 10 minutes.
  • Meanwhile, preheat a grill or grill pan over medium-high heat. Remove the sausage from the skillet and grill until charred and the internal temperature reaches 165 degrees F, about 10 minutes. Place back in the skillet with the mini sweet peppers and serve.

Chicken With Sausage and Hot Cherry Peppers image

From Sara Moulton, who says ... "This is based on an Italian dish called scarpariello - sort of a "turf and turf." I love the combination of chicken and sausages to begin with, and when you throw in the pickled peppers, the whole dish takes on a lively peppery taste. When I first made this, I braised the chicken in the sauce and it came out a little tough (my stove is electric and it is hard to get the low temperature right.) The skin was rubbery, too. I decided I could achieve a crisper skin and a moister texture by searing the chicken on top of the stove and finishing it in the oven. This has the added benefit of speeding up the preparation time since you can make the sauce on top of the stove while the chicken is in the oven. If you are a glutton for very spicy food, use hot Italian sausage. If you are trying to cut back on fat, use turkey sausages."

4 chicken breast halves, with skin and bone halved crosswise
kosher salt
fresh ground black pepper
2 tablespoons extra virgin olive oil
1/2 lb sweet Italian sausage or 1/2 lb hot Italian sausage, cut into 1/2-inch pieces
4 pickled cherry peppers, quartered, stems and seeds discarded
2 garlic cloves, minced (about 2 teaspoons)
1 cup white wine
1 (14 1/2 ounce) can chicken broth or 1 3/4 cups chicken stock
2 (6 1/2 ounce) jars marinated artichoke hearts, drained
1 1/2 tablespoons unbleached all-purpose flour

Steps:

  • Preheat the oven to 350°F Season the chicken on all sides with salt and pepper. Heat the oil in a large skillet over high heat until hot; reduce the heat to medium-high and add the chicken to the skillet skin-side down. Sauté until nicely browned, about 10 minutes. Place the chicken, skin-side up, on a rimmed baking sheet; place in the center of the oven and bake 25 minutes or until just cooked through.
  • Meanwhile, add the sausage to the skillet in which you cooked the chicken. Cook over medium-high heat until lightly browned, about 8 minutes. Add the peppers and garlic; cook for 1 minute. Add the wine and cook until reduced by half, about 5 minutes. Add the broth and artichoke hearts and cook 5 minutes.
  • Whisk together 2 tablespoons of water and the flour; whisk into the sausage mixture and cook until thickened. Transfer the chicken to a serving platter; cover loosely with aluminum foil, and let rest 5 minutes. Stir any juices that have collected on the baking sheet into the sauce. Return the sauce to a boil and spoon over the chicken.

This is an intense food experience, not for the bland palates of the world: succulent chicken thighs, artichoke hearts, olive, pepperoncini, and sausage-stuffed cherry peppers!

6 (4 ounce) bone-in chicken thighs with skin
1 tablespoon ground black pepper
2 teaspoons ground cumin
1 teaspoon salt
18 cherry peppers in brine (such as Peppadew®)
6 ounces fresh Italian sausage
2 tablespoons olive oil
1 onion, sliced
1 pinch salt
4 cloves garlic, crushed
1 tablespoon herbes de Provence
½ teaspoon crushed red pepper flakes
1 cup sliced pepperoncini peppers, with liquid
2 cups chicken stock
1 (14 ounce) can artichoke hearts, drained and chopped
½ cup pitted kalamata olives
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh marjoram

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken thighs in a large bowl; season with black pepper, cumin, and 1 teaspoon salt. Set aside.
  • Stuff each cherry pepper generously with Italian sausage. Set aside.
  • Heat olive oil in Dutch oven over medium-high heat. Place chicken thighs, skin-side down, in pan and brown, about 5 minutes. Turn chicken over and brown other side, about 1 minute. Remove chicken from pan.
  • Cook onion in the Dutch oven with pinch of salt over medium-high heat; cook and stir until caramelized, about 5 minutes. Reduce heat to medium; stir in garlic, herbes de Provence, and crushed red pepper.
  • Stir in pepperoncini and juices; cook until warmed through, about 2 minutes. Remove from heat.
  • Place chicken, skin-side up, in a single layer on top of the onions and pepperoncinis in the Dutch oven. Pour stock into the pan until almost covering the chicken.
  • Sprinkle artichoke hearts, olives, and stuffed cherry peppers over top of chicken.
  • Return to medium-high heat and bring to a simmer.
  • Cover and roast in preheated oven until sausage is cooked through and liquid is bubbling, about 1 hour.
  • Garnish with chopped basil, oregano, and marjoram.

2 tablespoons extra-virgin olive oil
1 teaspoon extra-virgin olive oil
3/4 lb dry penne pasta or 3/4 lb ziti pasta
1 lb sweet Italian sausage, casings removed (4 - 5 links)
2 large garlic cloves, minced
1 (28 ounce) can whole canned tomatoes
2 -3 pickled italian hot cherry peppers, cored, seeded, and diced (about 1-1/2 Tbs. from jarred)
2/3 cup freshly grated parmigiano-reggiano cheese, plus more for sprinkling
fresh ground black pepper
8 ounces shredded mozzarella cheese (2 cups)

Steps:

  • In a large covered pot, bring 4 quarts salted water to a boil. With 1 teaspoon olive oil, lightly grease an 8x11-inch baking dish.
  • Add the penne or ziti to the boiling water and cook until it's just tender but still firm to the tooth. Drain the pasta well and return it to its cooking pot.
  • Meanwhile, heat the remaining 2 tablespoons olive oil in a large straightsided skillet over medium-high heat. When the oil is hot, add the sausage, let it sit for a minute and then start stirring and breaking it into bite-size pieces with the side of a slotted metal spoon. Cook until lightly browned, another 3-4 minutes. Transfer to a plate using the slotted spoon.
  • Add the garlic to the pan, season with salt and cook, stirring constantly, until it colors slightly, about 30 seconds. Add the tomatoes and their juices and cook at a rapid simmer, stirring occasionally and breaking up the tomatoes with the spoon, for 5 minutes so the sauce thickens slightly.
  • Meanwhile, position an oven rack about 6 inches from the broiler element and heat the broiler on high. Stir the sausage and its juices, the diced peppers, and 1/3 cup of the Parmigiano into the sauce. Cook, stirring, until the sausage is cooked through, 3 to 5 minutes. Taste for salt and pepper.
  • Pour the sauce over the cooked pasta in the pot and stir well. Spread the pasta and sauce evenly in the baking dish or gratin dishes. Sprinkle with the mozzarella and the remaining 1/3 cup Parmigiano.
  • Place dish in oven and broil until the cheese melts and browns in places, 2 to 4 minutes. (check often to be sure they don't burn). Serve immediately with more Parmigiano.
