COCONUT SHRIMP WITH SPICY MAYO

3/4 cup all-purpose flour
2 teaspoons paprika
1 teaspoon garlic powder
1 teaspoon onion powder
Pinch kosher salt, plus additional for sprinkling
3 large eggs
1 cup panko breadcrumbs
1 cup shredded unsweetened coconut
3/4 pound large peeled and deveined shrimp, with tails on
1 1/4 cups coconut oil
Spicy Mayo, recipe follows
Lemon wedges, for serving
1/2 cup mayonnaise
1 to 2 tablespoons sriracha
Juice of 1/2 lemon

Steps:

  • Whisk the flour, paprika, garlic powder, onion powder and 1 teaspoon salt in a wide, shallow bowl. Beat the eggs with a splash of water in a second bowl. Combine the panko and coconut in a third bowl. Line a pan in foil and set aside.
  • Toss the shrimp in the flour mixture to coat; then, working one at a time, shake off the excess flour and dip the shrimp in the egg. Let the excess egg drip off, then toss the shrimp in the coconut-panko mixture until thoroughly coated. Put the shrimp on the lined pan and repeat with the remaining shrimp.
  • Heat the coconut oil in a large skillet over medium-high heat until very hot and a panko crumb dropped into it sizzles immediately. Line a plate with a paper towel. Add about half of the shrimp, making sure the skillet is not too crowded, and pan-fry, turning once, until the shrimp are cooked through and golden brown all over, 3 to 4 minutes; transfer to the lined plate and sprinkle with salt. Repeat with the remaining shrimp. Serve with the Spicy Mayo and lemon wedges.
  • Combine the mayonnaise, sriracha and lemon juice in a small bowl.

To be used with my Crispy Fish Tacos, but it would have lots of other applications. This makes a lot of mayo...we used the leftovers to dip baked sweet potato fries the next day. Depending on your taste, you might want to up the chipotles and lime juice. We like things very punchy and flavorful, so I probably at least doubled both.

1 1/2 cups sour cream
2 canned chipotle chiles in adobo
1/2 lime, juice of
kosher salt
fresh ground black pepper

Steps:

  • Put the mayonnaise, sour cream, peppers, and lime juice in a blender and process to a puree.
  • Refrigerate the mayo for 1/2 hour to let the flavors to blend; taste and adjust seasoning with salt and pepper.

This is another great recipe from the Oct 2006 addition of Gourmet magazine. I've found so many wonderful recipes in this issue and this is no exception. I love coconut shrimp and the addition of club soda, makes this one special!

3/4 cup asian sweet chili sauce
3 tablespoons fresh cilantro, chopped
2 1/2 tablespoons fresh lime juice
3/4 cup all-purpose flour
1 teaspoon curry powder (Madras style if you can find it)
3/4 teaspoon baking powder (make sure it is still active!)
1/2 teaspoon salt
1 large egg, beaten to blend
1 cup club soda
vegetable oil (for deep frying)
1 1/2 cups medium shredded unsweetened coconut
16 large shrimp, peeled, deveined, tails left in tact

Steps:

  • SAUCE:.
  • Can be made 1 day ahead, covered and chilled.
  • Mix all ingredients in small bowl.
  • FOR SHRIMP:.
  • Whisk first 4 ingredients in medium bowl.
  • Add egg and club soda; whisk just until combined but still lumpy.
  • Let stand 15 minutes.
  • Meanwhile, pour enough vegetable oil into heavy large saucepan to come halfway up sides of pan.
  • Attach deep-fry thermometer to pan and heat oil over medium heat to 375 degrees.
  • Line baking sheet with paper towels.
  • Spread coconut on plate.
  • Working with 1 shrimp at a time, dip into batter, allowing excess to driip back into bowl, then roll in coconut.
  • Working in batches, deep-fry shrimp until cooked through, about 2 1/2 minutes. Ensure oil comes back to 375 before adding each batch.
  • transfer shrimp to paper towels to drain.
  • Serve hot with dipping sauce.

The best recipe I have found for coconut shrimp. The dipping sauce is a perfect Indonesian- inspired condiment. Ketchup manis is a sweet indonesian sauce. You can substitute 3 Tbs. soy sauce mixed with 1 Tbs. brown sugar if you can't find ketchup manis in your local asian food store.

1 lb shrimp, peeled and deveined- the larger the better
1 cup cornstarch
4 egg whites, lightly beaten
1 1/4 cups unsweetened dried shredded coconut
2 1/2 cups peanut oil (for frying) or 2 1/2 cups vegetable oil (for frying)
3 tablespoons ketchup, manis
1/8 teaspoon dried red chili pepper
1 garlic clove, chopped
1 teaspoon fresh ginger, grated
1 tablespoon fresh lime juice
2 tablespoons sugar

Steps:

  • Wash and dry the shrimp on paper towels.
  • Put cornstarch, egg whites and coconut into three separate bowls.
  • Dip shrimp into the cornstarch.
  • Shake off the excess.
  • Dip into the egg white.
  • Dip into the coconut, pressing into the shrimp.
  • Heat oil and fry the shrimp until golden brown ( only a couple of minutes).
  • Note: The shrimp can be coated 1 hour before frying and kept in the refrigerator. After frying, they can be kep warm in a preheated oven at 300 degrees for up toe 30 minutes.
  • Place all of dipping sauce ingredients in a food processor or blender and puree until fairly smooth. The mixture may also be chopped and mixed by hand.

1/4 cup mayonnaise
2 tablespoons sweet chili sauce (like Mae Ploy or Thai Sweet Chili Sauce)
1 teaspoon chili-garlic hot sauce (Sriracha) (optional)
1 lb tail-on shrimp, shelled deveined and tail on (See Step 2)
1/2 cup all-purpose flour
1 egg
2 tablespoons coconut milk (or regular milk)
salt and pepper
1/2 cup japanese panko breadcrumbs
1/2 cup sweetened flaked coconut
oil, for frying

Steps:

  • In a small bowl, combine the mayonnaise, sweet chili sauce and the chili-garlic hot sauce. Set aside.
  • With a paring knife, slice down deep at the middle of the back of the shrimp, but do not cut all the way through. Discard the black vein/tract.
  • Set three shallow bowls side by side. Place flour in the first bowl; whisk the egg and coconut milk in the second then combine the panko and coconut flakes in the third.
  • Heat 2 inches of oil in a saute pan over moderate heat until thermometer registers 350°F.
  • As the oil is heating, bread the shrimp by dipping the shrimp on both sides in the flour and shaking excess off. Next dip in the egg/coconut milk mixture and then in the panko/coconut flakes, patting to ensure the coating sticks well.
  • Fry the shrimp in small batches for 2-3 minutes until golden brown on both sides. Serve with Sweet Chili Mayo for dipping.

  • Place the cornstarch, salt and cayenne pepper in a large zip-lock bag and mix well. Add the shrimp to the bag, seal shut and shake to coat evenly. Set aside.
  • Using a fork, beat the egg whites in a small bowl until frothy. Place the coconut and sugar in a large shallow bowl or pie dish and mix well.
  • Holding each shrimp by the tail, shake off excess cornstarch, dip into the egg whites (let the excess drip off), then dredge in the coconut mixture, turning to coat evenly (if the sugar drops to the bottom of the dish a bit, move the shrimp around so it gets coated with both the sugar and coconut.) Place the shrimp on foil-lined baking sheet in a single layer. Cover and refrigerate until ready to cook. This can be done several hours ahead of time.
  • Pour enough oil into a large nonstick pan to reach a depth of ½-inch; heat over high heat until hot. To test if the oil is hot enough, use tongs to hold one shrimp by the tail and submerge it in oil; if it sizzles and crackles, it’s ready. Working in batches so as not to crowd the pan, add the shrimp to the hot oil and fry, turning once, until golden brown. It should take between 40-60 seconds per side; if the shrimp are browning too quickly, turn the heat down a bit. Use a slotted spoon to transfer the shrimp to a plate lined with paper towels to drain. Arrange the shrimp on a platter and serve with the Sweet Red Chili Sauce.
