SPICY BAKED BEANS

Spicy Baked Beans image

Tangy and sweet old-fashioned baked beans with a little jalapeno. They're easy to make and great at a BBQ, hamburger night, a picnic, etc. My husband's favorite semi-homemade recipe. Says the sweetness and fire create a super depth of flavor. It's not strong enough to overwhelm the sweet home-style of baked beans.

STIR-FRIED GREEN BEANS WITH PORK AND CHILES

Stir-Fried Green Beans With Pork and Chiles image

In this fast, piquant weeknight meal, ground pork and green beans are stir-fried with plenty of ginger, garlic and chiles, and seasoned with soy sauce and coriander seeds. A big splash of rice-wine vinegar right at the end adds a hit of acidity, which balances the pork's richness. Serve this over rice or rice noodles to help absorb all the salty, spicy sauce. Slices of fresh tomato add a sweet juiciness that works well here. But if you don't have a ripe tomato, feel free to leave it out.

Time 1h

Number Of Ingredients 15

3 garlic cloves , 1 crushed, 2 sliced
2 tbsp rapeseed oil
4 tsp smoked paprika
4 lean pork shoulder steaks (525g), trimmed of any fat
2 large onions (340g), halved and sliced
325g carrots (about 6), diced
2 tbsp sherry vinegar
2 red peppers , deseeded and chopped
1 tbsp vegetable bouillon powder , made up to 500ml with boiling water
3 rosemary sprigs , leaves picked and finely chopped

⅓ x 30g pack parsley , chopped
squeeze of lemon (optional)

  • Mix the crushed garlic, 1 tbsp of the oil and 1 tsp smoked paprika together in a shallow dish and turn the pork steaks over in the mix to coat them on both sides. Heat a large non-stick frying pan and fry the pork for about 4 mins on each side to part-cook and brown them, then remove them from the pan.
  • Add the rest of the oil to the pan and fry the onions, carrots and sliced garlic, stirring frequently for 10 mins until the veg starts to caramelise a little. Pour in the sherry vinegar, allowing it to sizzle in the heat, then add the peppers, bouillon, rosemary, any juices left in the dish from the pork, the cherry tomatoes, tomato purée, remaining 3 tsp paprika and beans.
  • Lay the pork steaks on top, then cover the pan and cook for 20 mins until the pork and vegetables are tender. The pork will be cooked and juicy, but not fall apart. Remove the pork from the pan, stir in the parsley and a squeeze of lemon juice, if using.
  • If you're following our Healthy Diet Plan, eat two portions of the pork and beans now and chill the rest for another day. Will keep for up to two days. To serve the second night, just reheat in a pan.

PORK STIR FRY WITH GREEN BEANS

Pork Stir Fry with Green Beans image

Recipe VIDEO above. A simplified version of the popular Szechuan Stir Fried Green Beans with Minced Pork - same flavour punch but made with everyday ingredients. Has intense flavour so you won't miss the sauciness of usual stir fries. Mix it up with rice then eaten with a spoon - forget chopsticks! Also, see here for the Japanese version of this dish. Spiciness: Mild.

Categories     Stir Fry

Time 15m

Number Of Ingredients 10

10 oz / 300 g green beans ((Note 1a))
7 oz / 220 g pork mince ((Note 1b))
1/2 small onion, finely chopped (about 1/2 cup)
2 tsp finely chopped garlic (2 cloves) ((Note 2))
2 tsp ginger, finely chopped ((Note 2))
2 1/2 tbsp peanut oil (or vegetable or canola)
1 tbsp dark soy sauce (Note 3)
1 tbsp Chinese cooking wine (Note 4 for subs)
1 tsp sugar
1 1/2 tsp + Chilli Garlic Sauce (Note 5)

Steps:

  • Mix Sauce ingredients in a bowl.
  • Trim the tough end of the beans, then chop into 2 - 2.5cm / 4/5 - 1" pieces.
  • Charred Beans: Heat 1 1/2 tbsp oil in a heavy based skillet over high heat (I use cast iron) until smoking. Add beans, spread out to cover base. Leave for 1 minute. Quick stir, spread out, cook for 30 seconds. Stir, then leave for 30 seconds, then repeat once more (so 2 1/2 minutes in total cook time) until beans are charred but tender crisp (not withered and floppy). Remove into bowl.
  • Turn heat down to medium high, add 1 tbsp oil. Add onion, then garlic and ginger. Cook for 1 minute until edges of onion are golden.
  • Turn heat back up to high. Add pork and cook, breaking it up as you go. Cook for 2 minutes until the pork is cooked through, then add Sauce. Cook for 30 seconds, then add beans and stir for another 30 seconds.
  • Serve over rice. Garnish with slices of large red chilli (it's mild), entirely optional. To eat, mix the pork into the rice then eat it with a spoon - forget chopsticks for this one! (For a low carb, low cal option, try Cauliflower Rice)

PORK STIR FRY WITH BLACK BEAN SAUCE

Pork Stir Fry with Black Bean Sauce image

Quick and easy pork slice stir-fried with black bean sauce

Provided by Elaine

Categories     Main Course

Time 20m

Number Of Ingredients 17

150 g around 4.5 ounces pork butt or tenderloin, sliced
1/4 tsp. salt
1/2 tbsp. cooking wine
1 tbsp. light soy sauce
3 tbsp. water or chicken stock
1/4 tsp. white pepper
1 tsp. cornstarch
1 tsp. sesame oil
cooking oil as needed
1 garlic cloves ( ,minced)
1 tsp. minced ginger
4 scallions ( ,cut into small sections)
1 black bean sauce or 1 tbsp. chopped black beans
1 tsp. dark soy sauce
3 fresh red chili peppers ( ,cut into small sections)
2 fresh green chili peppers ( ,cut into small sections)
a very small pinch of salt if needed

Steps:

  • Thinly slice the pork. Add salt, cooking wine, light soy sauce, water (or chicken stock) and white pepper. Message the pork slice for 2-3 minutes until all the juice is well absorbed. Set aside for 10 minutes.
  • Add cornstarch and message again. Make sure all the slices are well coated with starch. At last, add 1 teaspoon of sesame oil, mix well too.
  • Heat your wok or pan firstly. Add cooking oil to form a 2-3 cm high layer (do not be scared by the oil amount, we do not eat them all). Spread the pork sliced in. Let them stay for 5 to 10 seconds and then quickly fry them until turns pale. Transfer out immediately.
  • Remove the extra oil and save them for vegetable stir fries. Keep around 1 tablespoon of oil and fry garlic, ginger and scallion until aromatic. Place fresh pepper sections in to fry for 1 minute or until slightly softened. Return pork sliced in, add dark soy sauce and black beans sauce. Mix well and see if any extra salt is needed. Move out immediately after mixed. Be quick in this process and it is better to finish this within 30 seconds.

BRAZILIAN FEIJOADA (PORK AND BLACK BEAN STEW)

Brazilian Feijoada (Pork and Black Bean Stew) image

A comforting, rustic Feijoada recipe for classic Brazilian stew that features savory pork, flavorful black beans, and lots of toppings.

Provided by Sommer Collier

Categories     dinner     Main     Main Course     Soup

Time 4h30m

Number Of Ingredients 15

1 pound dried black beans
4.5 ounces dried beef slices (Buddig or Carne Seca)
2 pound bone-in pork roast (or 1.5 pound boneless roast + hambone)
12 ounces Mexican-style chorizo
14 ounces kielbasa sausage (sliced)
3 cups chopped onion (2 large onions)
6-8 cloves garlic (minced)
28 ounces crushed tomatoes
2 bay leaves
¼ - ½ teaspoons crushed red pepper
2 large oranges (cut into wedges)
3 cups shredded collard greens or kale
4 cups cooked white rice
Hot sauce
Farofa (toasted cassava flour) (optional)

Steps:

  • Set out a large bowl. Chop the dried beef slices into small pieces. Place them in a bowl along with the dried beans. Pour 8 cups of boiling water over the beans and let them soak for at least 1 hour, but up to several hours.
  • Chop the pork roast into 1 inch chunks, reserving the bone to simmer in the stew. (You can also use boneless pork roast and a hambone for extra flavor!) Slice the kielbasa into ½ inch slices.
  • Once the beans and dried beef have soaked, set a large 7-8 quart saucepot over medium heat. Add the chorizo and brown for 2-3 minutes. Then add in the pork chunks and kielbasa. Sauté for 5-8 minutes, stirring occasionally.
  • Move the meat to the sides of the pot and add in the chopped onion and garlic. Sauté another 3-4 minutes to soften.
  • Now add in the tomatoes, bay leaves, and crushed red pepper, along with the soaked beans, beef, and bean water.
  • Cover and simmer on medium-low for 3+ hours, or until the beans are soft. (Cook time is determined by how long the beans previously soaked.) Open the lid and stir every 30 minutes or so. If the stew seems to thicken before the beans are fully cooked, add in another 1-2 cups water.
  • Meanwhile, prepare the garnishes. Once the beans are soft and silky, turn off the heat.
  • Serve warm, topped with shredded greens, sliced oranges, hot sauce, and rice if desired.
