BLUEBERRY PIE WITH GRAHAM CRACKER CRUST
We live in blueberry country, and this pie is a perfect way to showcase these luscious berries. A neighbor first made this pie for us when we had a death in the family several years ago. Our whole family enjoys it. -R. Ricks, Kalamazoo, Michigan

Steps:
- In a large saucepan, combine sugar, cornstarch and salt. Gradually add water, stirring until smooth. Stir in 2 cups of blueberries. Bring to a boil; cook and stir until thickened, 1-2 minutes. Remove from heat; cool to room temperature., Gently stir remaining blueberries into cooled blueberry mixture. Spoon into crust. Refrigerate, covered, until chilled, 1-2 hours. Serve with whipped cream.

Great to feed a lot of people at a potluck. Great-grandma gave recipe to me. This is a rectangular cheesecake.

Steps:
- Melt the butter or margarine, and add 1 cup sugar and the graham crackers. Press this mixture into a 9x13 pan.
- Beat the eggs. Gradually beat cream cheese, sugar, and vanilla into the eggs.
- Pour egg and cream cheese mixture over the graham cracker crust. Bake at 325 degrees F (165 degrees C) for 15-20 minutes. Cool.
- Pour blueberry or cherry pie filling over the top of the baked dessert. Spread nondairy whipped topping on top of fruit. Refrigerate until ready to serve.

Blueberry pie is delicious, but add a custard for a little something different... I love this for a quick breakfast snack for guests!

- Preheat the oven to 350 degrees F (175 degrees C).
- Spread blueberries over the bottom of the graham cracker crust.
- Mix 1/2 cup flour, white sugar, and salt together in a bowl.
- Whisk sour cream and eggs together in a separate bowl. Fold in flour mixture. Pour batter over the blueberries.
- Combine remaining 1/2 cup flour and brown sugar in a bowl. Cut in butter using a pastry cutter or 2 knives until mixture forms coarse crumbs. Scatter crumb topping over the pie.
- Bake in the preheated oven until custard and topping are golden brown, 50 to 55 minutes. Transfer to a rack and cool completely before serving.

BLUEBERRY SOUR CREAM PIE
Adopted recipe.I made this with a premade graham cracker crust.It's not super sweet.It will puff up slightly during baking but it shouldn't overflow your pie plate, at least mine didn't.You could very easily substitute any flavor of canned pie filling that you like.I didn't garnish with a TBSP on each slice, I just spread the rest of the pie filling over the top.

Steps:
- Mix together sour cream, flour, brown sugar, and egg. Stir until well blended.
- Spoon half the mixture into crust. Top with 1 cup blueberry pie filling. Spoon remaining sour cream mixture over pie filling.
- Bake at 400°F for 30 minutes. Cool and place in refrigerator to chill. Garnish with a tablespoon of pie filling on top of each slice prior to serving.

- In a large bowl, on medium-high speed beat the cream cheese, sugar, and vanilla together until it's nice and smooth about 2 minutes. With a rubber spatula, fold in the whipped cream and place in the refrigerator.
- If you want to use homemade whip cream (which is best) then in a large bowl add the cream, powder sugar, and vanilla. Using a stand mixer or a hand whisk, or good old arm strength beat until the cream reaches stiff peaks. Don't go beyond that or you'll make butter. It's easier to start the beaters on low and slowly increase the speed to avoid a bunch of splatters. Once the mixture reaches stiff peaks you can use it for the cream cheese. Any extras can be saved and kept in the refrigerator and used to dollop on top of the pie.
- In a saucepan combine the sugar, cornstarch, and salt. Stir in the water. Mix it well to help distribute the cornstarch so it doesn't all lump together. Add 1 cup of blueberries. Bring this to a boil and stir for a couple of minutes until it's thickened. Off the heat, add the butter and remaining blueberries. Let it cool completely.
