Delicious and easy French toast that is taken up a notch with the Parmesan cheese.

⅓ cup grated Parmesan cheese
¼ cup milk
ground black pepper to taste
1 tablespoon butter, plus more as needed
4 slices whole wheat bread

Steps:

  • Whisk eggs, Parmesan cheese, milk, and black pepper in a shallow bowl until light and fluffy, about 1 minute.
  • Melt butter in a large skillet over medium heat.
  • Dip both sides of each slice of bread in the egg mixture and place in the skillet. Cook until golden brown, 2 to 3 minutes per side. Transfer to a warmed plate and dot with butter to serve.

Another stupidly simple side dish made from pantry staples that my family asks for over and over. The savory combination of flavors goes well with many other foods. It can be made with freshly-cooked pasta or with leftover, cooked pasta that has no sauce on it. I've included options for some variations to create not-so-simple but extremely tasty side dishes or complete, one-dish meals by adding ingredients you probably have on hand.

1 lb pasta, cooked (any type)
3 -4 tablespoons butter or 3 -4 tablespoons olive oil
1/4-1/3 cup grated parmesan cheese
1/8-1/4 teaspoon garlic powder
fresh ground black pepper

Steps:

  • Put pasta into a microwavable dish large enough to give you a little room for stirring and tossing.
  • Dot pasta with butter or drizzle with olive oil.
  • Sprinkle Parmesan over top. Add plenty of fresh-ground, black pepper.
  • Heat in microwave on high 3 to 5 minute at a time, stirring frequently, until thoroughly hot.
  • Serve, passing the pepper grinder at the table.
  • You can add 1-2 cups of cooked meat (chicken, turkey, and ham are all especially good), and/or 1-3 cups pre-cooked, chopped vegetables. I particularly recommend broccoli, zucchini, onions, and/or green, snap, or snow peas.

These are a favorite in my house, they are incredibly easy to make and so good!. A good olive oil and Parmesan cheese is a must with this. Purchase the long narrow French baguette for this and make certain that it is a day old, it makes slicing easier. I have even made these using melted butter in place of olive oil, and added in some garlic powder with the cayenne/cheese mixture. If you like super spicy just increase the cayenne slightly. These make a great late-nite or weekend snack! Yield is only estimated depending on the size of the baguette.

1 French baguette (use a day old bread)
1/3 cup olive oil (you might need a bit more)
1/2 teaspoon salt (or to taste)
2 cups grated parmesan cheese
1/4 teaspoon cayenne pepper

Steps:

  • Set oven to 375 degrees (oven rack to second-lowest position).
  • Prepare a one or two large baking sheets.
  • Slice the baguette into 1/4-inch slices and arrange in a single layer on baking sheet/s.
  • brush one side with olive oil and sprinkle with salt.
  • Bake for 8-10 minutes.
  • Toss the cheese with the cayenne pepper.
  • Remove the toasts from oven and sprinkle with the cheese/cayenne mixture.
