This is my traditional way of making Brats. We use wild game meet brats that is put together by our butcher. I get it ground in packages, and then I make patties out of it. You can also use linked brats jsut the same! We love this with gravy, rice/spaetzle and red cabbage... It is definitely one of our monthly must haves!

1 lb bratwurst
1 large onion, sliced thick
1 tablespoon minced garlic clove
1 tablespoon butter
20 ounces beer (we prefer Budlight)
1 teaspoon salt
1 teaspoon pepper

Steps:

  • In a skillet over medium heat Saute the garlic and butter for approx one minute.
  • Add in the onions, salt, pepper, and enough beer to cover the bottom of the pan.
  • Cook the onions over medium heat until tender and caremelized.
  • Remove the onions from the pan and place the bratwurst in the pan. Brown the bratwurst and cook.
  • Once the bratwurst are cooked add the onions and remaining beer to the pan. Cook over medium heat until the beer has reduced to a thicker sauce with the onions.

One 12-ounce bottle hard apple cider
1 1/2 cups beef broth
6 fresh bratwurst sausages (about 1 1/2 pounds total)
1 tablespoon olive oil
1 tablespoon unsalted butter
2 large sweet onions, thinly sliced
Kosher salt and freshly ground black pepper
6 pretzel rolls, split
Spicy brown mustard

Steps:

  • Combine the hard cider, 1 cup of the broth and the bratwurst in a large saucepan, bring to a simmer and gently simmer over low heat for 15 minutes.
  • Meanwhile, heat the oil and butter in a large skillet over medium heat. Add the onions, sprinkle with 1 teaspoon salt and 1/4 teaspoon pepper and cook until just tender, about 5 minutes. Add the remaining 1/2 cup broth and simmer until the onions are browned and completely soft, about 5 minutes more. Keep the onion mixture warm while you cook the bratwurst.
  • Preheat a grill to medium-high heat or heat a grill pan over medium-high heat.
  • Transfer the bratwurst to the grill or grill pan and cook, turning occasionally, until browned, about 10 minutes. Lightly grill the pretzel rolls, cut-side down. Serve the bratwurst topped with the onions and with the pretzel rolls and mustard on the side.

3 cups thinly sliced yellow onions
1 (12-ounce) bottle amber beer
3 tablespoons apple cider vinegar
1 teaspoon kosher salt
1 teaspoon yellow mustard seeds
1/2 teaspoon celery seed
1 fresh bay leaf
A few grinds black pepper
6 uncooked bratwurst
1/2 teaspoon crushed red pepper
2 tablespoons olive oil
1 tablespoon chopped fresh parsley
2 tablespoons softened butter
6 potato rolls

Steps:

  • Prepare a charcoal grill.
  • Combine the onions, beer, vinegar, salt, mustard seeds, celery seed, bay leaf, and black pepper in a 4-quart saucepan, bring to a simmer, and simmer gently over medium-low heat for 20 minutes.
  • Add the bratwurst and simmer gently until cooked through, 8 to 10 minutes.
  • Remove the bratwurst and set aside. Strain the poaching liquid reserving the onions. Let cool. Remove the bay leaf, add crushed red pepper, olive oil, and chopped fresh parsley. Set aside to use as a relish.
  • Place the bratwurst on the grill and cook over medium-high until charred. Butter the rolls and toast on the grill just before serving.

  • While onions are sauteing, bring water to boil and add bratwurst.
  • Reduce heat; simmer, uncovered, until bratwurst is firm and cooked.
  • Drain.
  • Can be eaten as is or broil or grill brats until browned.
  • Pile on onions.
  • Enjoy!

3 large onions, thinly sliced and separated into rings
6 garlic cloves, minced
1 tablespoon hot pepper sauce
2 to 3 teaspoons celery salt
2 to 3 teaspoons pepper
1 teaspoon chili powder
15 fresh bratwurst links (3-1/2 to 4 pounds)
15 hot dog buns, split or brat buns

Steps:

  • In a Dutch oven, combine the beer or water, onion, garlic, pepper sauce, celery salt, pepper and chili powder. Bring to a boil. Add bratwurst. Reduce heat; simmer, uncovered, for 20-25 minutes or until a thermometer reads 160°. Drain, reserving onions. , Broil brats 4 in. from heat or grill over medium heat for 4-5 minutes or until browned, turning once. Serve on buns with reserved onions.

1 tablespoon canola oil
1 large onion, sliced
1 medium sweet red pepper, sliced
1 medium sweet yellow pepper, sliced
1 cup dark beer or chicken broth
BURGERS:
1/2 pound ground beef
1/2 pound uncooked bratwurst links, casings removed
1 large egg, lightly beaten
1 tablespoon 2% milk
3/4 cup seasoned bread crumbs
4 slices Muenster cheese
4 hamburger buns, split and toasted
8 teaspoons spicy brown mustard

Steps:

  • In a large skillet, heat oil over medium heat. Add onion and peppers; cook and stir 5 minutes. Stir in beer. Bring to a boil. Reduce heat; simmer, uncovered, until vegetables are tender and liquid is almost evaporated, 15-20 minutes. Remove and keep warm., In a small bowl, combine beef and bratwurst, mixing lightly but thoroughly. Shape into four 3/4-in.-thick patties., In a shallow bowl, mix egg and milk. Place bread crumbs in a separate shallow bowl. Dip patties in egg mixture, then roll in crumb mixture to coat., In the same skillet over medium heat, cook burgers until a thermometer reads 160° for medium doneness and juices run clear, 3-4 minutes on each side; top with cheese during the last 1-2 minutes of cooking. I've seen lots of recipes for beer-boiled brats here, but they have all this other stuff in them: butter, carrots, onions--probably 'cause people use nasty flavored beer ;) Anyway, this is how my family makes them, and the ingredients are VERY particular.

4 bratwursts (Johnsonville, none of that precooked Usinger's. Miller Park does those wayyyyy better.)
1 (12 ounce) bottle beer (do not use Coors, Miller, Miller Lite, or *gulp* Bud. I think a weiss does quite nicely, so split th)
mustard
1 cup sauerkraut (We just use Frank's)
4 French rolls (NOT hoagie buns. These must be crunchy but not hard. Turano's makes some great ones. If these cannot)

Steps:

  • Place brats and beer in saucepan, making sure that the sausages are covered.
  • Bring to a boil
  • Reduce heat and simmer about 10 minutes or until the brats look done (they will be gray and foamy--bear with me!).
  • In the meantime, you should fire up the grill. Charcoal, of course, is best but not always practical.
  • Also in the meantime, take some aluminum foil and fold it into a packet.
  • Remove sauerkraut from can/jar with a fork (thus preventing drainage needs) and place into packet. Seal TIGHTLY!
  • Put brats and packet on grill (use indirect heat for sauerkraut packet, or place on a rack above grill--you know what I mean if you have one ;)).
  • Grill, turning occasionally, about 8-10 minutes over medium high heat. I, personally, like mine with a nice black burnt crust, but I am odd. So go with what looks right. You want them brown and shiny with wee grill marks on them.
  • During the last 2-3 minutes of cooking, place buns, slightly open, with opening down, on grill (again, indirect heat) to toast them.
  • Serve with mustard and the sauerkraut. Thou shalt not eat thy brat with ketchup. 'Tis a mortal sin.
  • Quaff the rest of the beer.
