Very soft, moist oatmeal cookies with bananas. Very yummy!

1 ½ cups all-purpose flour
1 cup white sugar
½ teaspoon baking soda
1 teaspoon salt
¼ teaspoon ground nutmeg
¾ teaspoon ground cinnamon
¾ cup shortening
1 egg, beaten
1 banana
1 ¾ cups rolled oats

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • In a large bowl, stir together the flour, sugar, baking soda, salt, nutmeg and cinnamon. Cut in the shortening, until the mixture appears mealy. Stir in the egg, mashed banana and oatmeal until well blended. Drop by rounded spoonfuls onto an unprepared cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven. Remove from baking sheet to cool on wire racks.

1 cup all-purpose flour
1 teaspoon ground cinnamon
3/4 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
1/2 cup packed brown sugar
1/2 cup sugar
1 cup old-fashioned oats
1/2 cup milk chocolate chips
1/2 cup butterscotch chips
1/2 cup sweetened shredded coconut
ADDITIONAL INGREDIENTS:
1/2 cup butter, softened
1 large egg, room temperature
3/4 teaspoon vanilla extract

Steps:

  • In a small bowl, combine the first five ingredients. In a 1-qt. glass jar, layer flour mixture, brown sugar, sugar, oats, chips and coconut, packing well between each layer. Cover and store in a cool, dry place up to 6 months. Yield: 1 batch (4 cups). , To prepare cookies: Preheat oven to 350°. In a large bowl, beat butter, egg and vanilla. Add cookie mix and mix well. , Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake 9-11 minutes or until golden brown. Cool 2 minutes before removing to wire racks.

With a little experimenting, I came up with these chewy, spicy, oatmeal raisin cookies. They make your kitchen smell wonderful while they are baking. They almost remind me of Christmas because the spices smell so good.

½ cup butter, softened
½ cup butter flavored shortening
1 cup packed light brown sugar
½ cup white sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon salt
3 cups rolled oats
1 cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter, butter flavored shortening, brown sugar, white sugar, eggs, and vanilla until smooth. Combine the flour, baking soda, cinnamon, cloves, and salt; stir into the sugar mixture. Stir in the oats and raisins. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
  • Bake 10 to 12 minutes until light and golden. Do not overbake. Let them cool for 2 minutes before removing from cookie sheets to cool completely. Store in airtight container. Make sure you get some, because they don't last long!

A friend of mine brought these cookies to a square dance several years ago and was nice enough to write out the recipe for me. I have no idea where she got it, but, I've made them for years and they are just so tasty.

2 cups sugar
1 cup shortening
4 eggs
3 cups oatmeal
1 cup chocolate chips
2 teaspoons baking soda
1 cup milk
1 teaspoon salt
1 teaspoon clove
2 teaspoons cinnamon
2 teaspoons vanilla
5 cups flour

Steps:

  • Mix ALL ingredients together, thoroughly.
  • I like to mix this in my Kitchen Aide Mixer.
  • Drop by rounded Tbsp onto greased cookie sheets.
  • These cookies rise as opposed to spreading out.
  • Bake in a pre-heated 400 degree oven, 12-15 minutes.
  • Remove to wire rack to cool.
  • Enjoy!

3/4 cup raisins
1/2 cup chocolate or 1/2 cup carob chips (optional)

Steps:

  • Preheat oven to 375 degreed F.
  • In a large bowl, stir together the oat flakes, flour, salt, baking soda, cinnamon, nutmeg, ginger, cumin, cardamom, pepper, and cayenne.
  • Add the mashed banana, sweetener, oil, sour milk, raisins, and chocolate chips to the oat mixture and mix together gently until just mixed.
  • Scoop spoon-sized portions onto a lightly oiled cookie sheet and bake for 8-10 minutes.

1 1/2 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon freshly grated nutmeg
1 teaspoon ground ginger
1 teaspoon ground cumin
a pinch ground cloves
a pinch cayenne
1/2 teaspoon baking soda
1/2 teaspoon salt
2 sticks (1 cup) unsalted butter, softened
1 cup packed brown sugar
1 cup granulated sugar
1 large egg
1 teaspoon vanilla
3 cups old-fashioned or quick-cooking rolled oats
1 cup raisins

Steps:

  • Preheat oven to 375°F.
  • Into a bowl sift together flour, spices, baking soda, and salt. In a large bowl with an electric mixer beat butter and sugars until light and fluffy and beat in egg and vanilla. Add flour mixture and slowly beat until just combined well. Stir in rolled oats and raisins (dough will be stiff).
  • Working in batches, drop dough by level tablespoons about 2 inches apart onto an ungreased baking sheet and bake in middle of oven until golden, 8 to 10 minutes. Cool cookies on baking sheet 1 minute and transfer to racks to cool completely.

  • Cut in shortening until mixture resembles cornmeal.
  • Add rolled oats and mix well.
  • Store in tightly covered container at room temperature.
  • To make the cookies, place 2 cups mix in bowl, and add 1 egg,1 tablespoon milk and 1 teaspoon vanilla. Mix well. Drop from teaspoon onto greased baking sheets. Bake at 375 degrees for 12 to 15 minutes, until golden. Remove from sheet and store. Keeps eight months.

2 teaspoons cinnamon
2 teaspoons allspice
1 1/2 teaspoons cloves
1 1/2 teaspoons ginger
1/8 teaspoon salt
1/2 teaspoon finely ground black pepper
1/2 teaspoon baking soda
8 ounces unsalted butter
1 teaspoon vanilla
1 cup granulated sugar
1 cup light brown sugar, firmly packed
2 eggs
3 cups quick-cooking rolled oats

Steps:

  • Sift flour with spices, salt and baking soda. Set aside.
  • In large bowl of electric mixer, cream butter. Add vanilla and both sugars, and beat well. Add eggs and beat to mix.
  • On low speed, beat in sifted dry ingredients.
  • Stir in oats with spoon.
  • Line two cookie sheets with aluminum foil, shiny side down. Measure out 1/4 cup of batter for each cookie and place 5 to 6 cookies on each sheet.
  • Bake at 375 degrees for 12 to 15 minutes on racks that have been placed on the second and third rungs in the oven. Reverse sheets once during baking. The cookies should still be quite soft when they are done. Cool on rack before removing from sheet.
