1 3/4 lbs lean lamb leg steak
1 1/2 ounces onions, chopped
2 cloves garlic, chopped
1/2 teaspoon cayenne pepper
2 inches cinnamon sticks, broken in half
1 teaspoon ground ginger
1 teaspoon paprika
10 -12 saffron strands
turmeric, if you want a little colour
salt and pepper
4 1/2 ounces ready to eat dried apricots, quartered
6 ounces carrots, diced
3 1/2 ounces zucchini, diced
12 ounces tomatoes, chopped
2 tablespoons chopped fresh coriander (chopped)
2 tablespoons chopped fresh parsley
10 ounces couscous
fresh coriander
parsley

Steps:

  • Trim any fat off the lamb and cut it into 1 inch cubes.
  • Put the meat, onions, garlic, cayenne pepper, cinnamon, ginger, paprika and saffron if using,into the bottom of a double boiler or a large saucepan, season to taste and add enough water to cover.
  • Bring the contents to a boil, then cover the pan, reduce the heat to low, and simmer for 1 hour 30 minutes.
  • Add the apricots, carrots,zucchini,tomatoes, coriander and parsley to the pan and cook, covered for a further 15 minutes.
  • Meanwhile, following package directions, prepare enough couscous for 6 people.
  • Add salt to taste.
  • To serve, spoon the couscous onto serving dish, lift the lamb and vegetables from the pan with a slotted spoon and lay them on top of the couscous and sprinkle them with chopped coriander and parsley.
  • Pour the broth into a jug or bowl to serve separately and let people help themselves at the table.

A spicy blend of lamb, apricots and chickpeas. This makes a large pot, so freeze to give you a few meals down the road. I made mine in a crock pot. I have made this using chicken parts. I also serve this with a bit of plain yogurt on the side for those who want to cool down the spiciness.I didn't use all the cinnamon just 1/2 tsp as I don't care for meat and cinnamon together. Argan oil should be found in a speciality store. Time preparing does not include the overnight in fridge.

1 teaspoon cayenne pepper
2 teaspoons ground black pepper
1 1/2 tablespoons paprika
1 1/2 teaspoons ground ginger

1 cup onion
2 tablespoons olive oil
2 tablespoons argan oil
3 garlic cloves
1 pint tomato juice
2 (28 ounce) cans chopped tomatoes
4 ounces dried apricots
2 ounces dates
2 ounces raisins
3 ounces sliced almonds
1 teaspoon saffron
1 pint lamb or 1 pint chicken stock
1 tablespoon clear honey
2 tablespoons coriander
2 tablespoons parsley

Steps:

  • preheat oven to 300 degrees.
  • Place the cayenne, pepper, paprika, ginger, turmeric and cinnamon in a small bowl and mix.
  • Place the lamb in a large bowl and toss with 1/2 the spice mixture.
  • Cover and leave overnight.
  • Heat 1 tbsp olive oil and 1 tbsp of argan oil in a large casserole dish.
  • Add the grated onion and the remaining spice mix and cook over a gentle heat for 10 minutes. Add the crushed garlic in the final 3 minutes.
  • In a separate pan, heat the oil and brown the lamb on all sides.
  • Add to the casserole dish.
  • Deglaze the pan with 1/4 pint of the tomato juice and add that to the casserole dish as well.
  • Add the remaining tomato juice, chopped tomatoes, apricots, dates, raisins, saffron, lamb stock and honey to the casserole dish.
  • Bring to a boil, cover and place in oven or slow cooker 2 1/2 - 3 hours until meat is very tender.
  • Serve with couscous or rice and top with herbs.

This recipe came from a friend (apparently from a slimmers recipe book). Its a fantastic side dish at BBQ's and get togethers or simply for your everyday meal.

400 g lamb fillets
1 tablespoon curry powder
1 cup water
1 cup couscous
1 tablespoon oil
1/2 cup of diced cucumber
1/2 cup chopped spring onion (shallots)
1/4 cup chopped of fresh mint
1 lemon, juice of (only)
1 1/2 tablespoons mango chutney
salt and pepper, to taste
mint (to garnish) (optional)

Steps:

  • Rub the lamb in the curry powder covering completely.
  • Cook lamb in oil for approx 3 minutes on either side.
  • Set lamb aside to cool.
  • Boil water, add couscous, remove from heat, cover and stand for 2 minutes.
  • Stir and let stand for a further 3 minutes.
  • When cool transfer to bowl and add cucumber, spring onions and mint.
  • Thinly slice cooled lamb and add to bowl.
  • In a seperate bowl mix lemon juice, mango chutney and oil.
  • Pour over couscous and season to taste with salt and pepper.
  • Garnish with fresh mint.

Slowly cooked Morrocan Lamb Tagine with Feta and Coridander Couscous.

Steps:

  • Finely slice the onions and brown in a pan, remove and then brown the lamb along with a small knob of butter/ghee. Once browned add finely chopped chilli, garlic and ginger along with the onions. Cook for 5mins.
  • Next, add both tins of tomatoes, your sultanas or chopped dried apricots and a tbsp of Mango Chutney along with your spice mix. Transfer the entire tagine into an oven proof dish with lid and cook in a 140C preheated oven for about 2 hours, but the longer it cooks the better it is. (4-5 hours is great)
  • Once cooked, Add either a little water to the tagine if it is too thick or some ground almonds if it is too thin. Add a good pinch of salt and lots of pepper with chopped coriander.
  • Place the Couscous into a large bowl and cover with boiling water. Once the Couscous is done (5mins) add chopped coriander and feta.
  • Place the tagine into large bowls and swirl some natural yogurt over the top with a spoon or squezy bottle. Finish with some flaked almonds and serve with the Couscous.

1 kg diced lamb
1 cup chicken stock
250 g pitted prunes
1/2 cup whole blanched almond

Steps:

  • Preheat oven to 180°C.
  • Place all the spices, lemon juice and oil in a small bowl and mix to form a paste.
  • Coat the lamb with the paste, cover and refrigerate overnight (or minimum 4 hours).
  • Heat a large pan on high, add lamb in batches and cook for 3-5 minutes or until well browned. Place browned lamb in a large casserole dish.
  • Pour the stock over lamb. Bake, covered for 1 hour, stirring occasionally.
  • Mix in the prunes and almonds and bake uncovered for another hour, or until lamb is tender.
  • Serve with couscous.

3/4 cup dried chickpeas
5 garlic cloves (2 whole, 3 chopped)
1 large cinnamon stick, broken in half
2 tablespoons olive oil
3 pounds 1" cubes lamb shoulder
Kosher salt and freshly ground black pepper
1 large onion, diced
5 teaspoons Ras-el-Hanout spice blend
1 tablespoon chopped peeled ginger
1 cup canned diced tomatoes with juices
2 1/2 cups (or more) low-salt chicken stock
1/2 cup halved dried apricots
Steamed couscous
Chopped fresh cilantro

Steps:

  • Place chickpeas in a medium saucepan. Add water to cover by 2". Let soak overnight.
  • Drain chickpeas; return to same saucepan. Add 2 whole garlic cloves and cinnamon stick. Add water to cover by 2". Bring to a boil, then reduce heat to medium and simmer until chickpeas are tender, about 45 minutes. Drain; set aside.
  • Meanwhile, heat oil in a large heavy pot over medium-high heat. Season lamb with salt and pepper. Working in batches, brown lamb on all sides, about 4 minutes per batch. Transfer lamb to a medium bowl. Add onion to pot; reduce heat to medium, season with salt and pepper, and sauté until soft and beginning to turn golden, about 5 minutes. Add chopped garlic, Ras-el-Hanout , and ginger. Stir for 1 minute. Add tomatoes and lamb with any accumulated juices. Bring to a boil. Add 2 1/2 cups stock. Return to a boil, reduce heat to low, partially cover, and simmer, stirring occasionally, until lamb is tender, about 1 hour 30 minutes.
  • Stir in chickpeas; simmer until heated through, about 10 minutes. Stir in apricots; simmer until heated through, about 5 minutes. Season with salt and pepper.
  • Spoon couscous onto a large, shallow platter, forming a large well in center. Spoon tagine into center. Sprinkle cilantro over.

2 (400 g) loin lamb, back straps about (eye of lamb loin)
2 -3 teaspoons chopped chili (fresh or bottled)
2 teaspoons ground cumin
1 garlic clove, crushed
1/4 cup fresh coriander, chopped (cilantro)
1 cup peas (frozen or fresh)
1 1/2 cups couscous
2 cups chicken stock
3 garlic cloves, thinly sliced
2 teaspoons olive oil
1/2 cup low-fat yogurt

Steps:

  • FOR THE LAMB.
  • Trim off any fat.
  • In a small bowl combine the chili, cumin, garlic and coriander.
  • Rub the mix into the lamb, you can allow it to marinate for up to 4 hours but it isn't essential.
  • Cook the lamb on a preheated, oiled grill plate until browned and cooked to your liking.
  • Remove from grill, sprinkle with a little sea salt and cover to keep warm.
  • FOR THE COUSCOUS.
  • Combine the stock, garlic and peas in a medium saucepan and bring to the boil.
  • Remove from the heat and stir in the couscous and oil.
  • Cover and stand for about 5 minutes or until the liquid is absorbed.
  • Fluff with a fork.
  • TO SERVE.
  • Slice the lamb, place on top of a mound of couscous and add a dollop of yoghurt.
