1/2 head cabbage (cut julienne)
3 carrots (grated)
1/2 red onion (halved and thinly sliced)
2-3 jalapeno peppers (seeded and thinly sliced)
1/2 cup chopped fresh cilantro
3/4 cup mayonnaise
juice of 2 limes (about 3 tablespoons)
1/4 teaspoon cayenne pepper
2 tablespoons honey
kosher salt (to taste)
black pepper (to taste)

Steps:

  • In a large bowl, whisk together all dressing ingredients.
  • Add the cole slaw ingredients to the bowl with the dressing.
  • Stir together.
  • Serve immediately or after refrigerating for up to two days.
  • Serving suggestion: on top of pulled pork sandwiches or fish tacos, or on the side of oven BBQ chicken.

FOR THE COLESLAW
3 cups thinly sliced green cabbage
2 cups thinly sliced purple cabbage
3 carrots, shredded
1/4 cup green onions, sliced thin
1/2 cup coarsely chopped cilantro
1 jalapeno, seeds removed, finely diced
FOR THE LIME VINAIGRETTE
Juice of 2 limes
1/3 cup olive oil
1 large clove garlic, minced
1 to 2 teaspoons honey
pinch red pepper flakes
salt and black pepper to taste

Steps:

  • Combine the shredded and chopped vegetables in a large bowl and toss to mix.
  • Combine all vinaigrette ingredients in a bowl and whisk.
  • Pour the lime vinaigrette over the coleslaw and toss to mix.
  • Chill if desired

1 head green cabbage, sliced thin
1 head purple cabbage, sliced thin
2 cups whole milk, plus more for thinning
1 cup mayonnaise
2 tablespoons sugar
4 teaspoons white vinegar
1/2 teaspoon salt
1 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
2 cups fresh cilantro leaves, barely chopped

Steps:

  • Combine the shredded cabbage in a bowl. In a separate bowl, mix the milk, mayonnaise, sugar, vinegar, salt, black pepper and cayenne. Add more milk if you like the dressing a little thinner. Pour over the cabbage. Toss to combine.
  • Just before serving, toss in the cilantro. Can mix the slaw up to 2 hours before serving.

1 head green cabbage, shredded
1 onion, chopped
2 carrots, shredded
2 jalapeno chile peppers, chopped
1 egg
1 small lemon, juiced
1 tablespoon white vinegar
¼ teaspoon salt
1 cup vegetable oil
2 tablespoons prepared mustard
2 tablespoons white sugar
1 tablespoon cider vinegar
½ teaspoon ground chipotle chile pepper
½ teaspoon celery salt

Steps:

  • Combine cabbage, onion, carrots, and jalapeno peppers together in a bowl.
  • Blend egg, lemon juice, white vinegar, and salt in a food processor until smooth. Slowly drizzle oil into egg mixture through the feeding tube while the food processor is running until mayonnaise is smooth and thickened.
  • Mix mustard, sugar, cider vinegar, chipotle chile pepper, and celery salt into mayonnaise until dressing is smooth and evenly combined.
  • Stir dressing into cabbage mixture until evenly coated. Cover bowl with plastic wrap and refrigerate until flavors blend, at least 2 hours.
