SPICY LOW-COUNTRY SHRIMP AND GRITS

4 cups milk
1 teaspoon salt
1 teaspoon course ground black pepper
1 tablespoon butter
1 cup stone-ground yellow grits
1 teaspoon red pepper flakes
1 tablespoon pepper sauce
2 ounces grated Cheddar
1 1/2 pounds (21 count) shrimp, peeled and deveined
2 tablespoons Cajun seasoning
1/4 cup extra-virgin olive oil
1/4 pound diced andouille sausage
2 teaspoons diced garlic
1/4 cup butter
1 teaspoon cayenne pepper
2 small chopped piquillo peppers
1 teaspoon red pepper flakes
1/4 cup wine (Spanish rioja)
1/4 cup chopped fresh herbs (parsley, thyme, basil)
Salt and freshly ground black pepper
Sliced scallions

Steps:

  • Grits: Bring milk, salt, pepper, and butter to a boil. Stir in grits, pepper flakes, and pepper sauce over low heat. When consistency is ready, in about 45 to 50 minutes add cheese and stir.
  • Shrimp: Toss shrimp in Cajun seasoning and set aside. In a saute pan, over medium heat, heat the oil. Add the sausage and render for 3 minutes. Add garlic, stir for 1 to 2 minutes. Add the shrimp and butter and saute for 2 to 3 minutes. Stir in cayenne pepper, piquillo peppers, and pepper flakes. Add half wine (drink what's leftover), and fresh herbs and simmer for 2 to 3 minutes. Add salt and pepper, to taste. Plate grits in a shallow bowls with shrimp mixture over the top. Garnish with scallions and serve.

If you're not into spicy foods, you might be surprised by these. The cheese tones down spiciness of the jalepeno. I'm a spicyhot wimp, and I love me some cheesy grits! From LJ entry on Thursday, April 4th, 2002. Easy and delicious!

4 cups cooked grits
2 -3 tablespoons minced jalapenos, to taste
1/2 teaspoon ground cumin
1/4-1/2 teaspoon dried ancho chile powder, to taste
1/4 teaspoon granulated garlic (don't overdo it)
1/4 cup grated parmesan cheese
1 teaspoon butter
salt & freshly ground black pepper, to taste
1/2 cup cubed monterey jack pepper cheese (optional)

Steps:

  • Prepare the grits (instant or regular) as normal, according to packaging, to make four servings.
  • When grits are almost to their finished texture, mix in the rest of the listed ingredients. Stir well and heat for another few minutes until everything is well incorporated.
  • You can either eat them immediately (which we usually do), or you can spread it about an inch thick it into a lightly pan-sprayed or buttered cooking pan and refrigerate it (and/or any leftovers) and cut it into squares or wedges for browning and re-heating in a sauté pan later. Either way, they're delicious.
  • Note: Whether or not I add the pepperjack cheese depends on what texture I'm feeling like eating. It's smoother without the cheese, a little gloppier (but cheesier!) with the pepperjack. If I'm using jalepenos from the jar, I pour in some of the juice from those, too.
  • Makes 4 servings.

Spicy Grits image

In the Deep South we tend to incorporate grits into so many wonderful dishes. This base can be used to back up scrambled or poached eggs for breakfast or sautéed greens and shrimp for lunch or dinner. I will often chill the leftovers and make grits cakes for another meal. The possibilities are as endless as the Bubba Gump shrimp dishes!

16 ounces sharp cheddar cheese, grated
2 jalapenos, finely diced
2 cups grits, uncooked
4 cups chicken broth
4 cups milk
4 tablespoons butter
salt and pepper

Steps:

  • Bring the broth/milk combo to a boil and slowly whisk in the grits. Add salt if your broth is unsalted.
  • Add the jalapenos.
  • Bring to a boil again, stirring constantly, then lower the heat, cover, and cook the grits until done. Stir occasionally.
  • Add the buter and incorporate completely, season with salt and pepper to taste.
  • Remove from the heat.
  • Add the cheese 1/3 cup at a time, stirring well.
  • Serve.

Remove the andouille to a plate, and add the shrimp to the pan, and cook for 2 to 3 minutes. Remove the shrimp from the pan, and heat the oil. Cheddar Cheese Grits With Spicy Black Beans image

Southern and Southwestern ingredients unite in this sustaining meal of beans, peppers and tomatoes over the best grits you will ever eat! If you don't have the quick-cooking variety, use regular and follow the ingredients on the pkg. F&W Magazine. We are always looking for different ways of serving black beans and this one sounds like a winner; we may have to cut down on the amout of heat!

2 1/2 cups water
1 cup milk
3 tablespoons butter
1/8 teaspoon Tabasco sauce
1/8 teaspoon paprika
1 1/4 teaspoons salt
cayenne or crushed red pepper flakes
3/4 cup quick-cooking grits
1/4 lb cheddar cheese, grated (about 1 cup)
1 red bell pepper, cut into 3/4-inch squares
1 green bell pepper, cut into 3/4-inch squares
6 scallions, including green tops sliced thin
2 cups drained and rinsed canned black beans (one 19 oz can)
3 plum tomatoes, chopped

Steps:

  • In a medium saucepan, combine the water, milk, 1 T butter, the Tabasco, paprika, 1 t salt and 1/8 t cayenne.
  • Bring to a boil over moderately high heat.
  • Add the grits in a slow stream, whisking.
  • Reduce the heat, cover, and simmer, stirring frequently with a wooden spoon, until the grits get very thick, 5 to 10 minutes.
  • Remove the saucepan from the heat and stir in the cheese; cover to keep warm.
  • Meanwhile, in a large nonstick frying pan, melt the remaining T of butter over moderate heat.
  • Add the bell peppers and scallions and cook, stirring frequently, until the vegetables start to soften, about 5 minutes.
  • Add the beans, broth, 1/4 t cayenne, and the remaining 1/4 t salt.
  • Bring to a simmer and cook, stirring frquently, until the beans are hot, about 5 minutes.
  • Remove from heat and stir in the tomatoes.
  • Serve over the cheese grits.
  • Have a salad of greens, hot rustic bread just from the oven and a great wine.*.

Spicy Shrimp and Grits With Tomato and Country Ham image

From Slightly North of Broad in Charleston, SC. If the sausage is spicy you may want to leave out the cayenne pepper.

1 1/4 cups stone ground corn grits
4 cups water
1/2 teaspoon salt
1 tablespoon butter
1/4 cup cream
2/3 lb shrimp, 26-35 ct
2 tablespoons butter
4 ounces country ham, julienned
4 ounces smoked pork sausage, cut into rounds
1 teaspoon garlic, finely chopped
1 pinch cajun spices (optional) or 1 pinch cayenne pepper (optional)
1/2 cup fresh tomato, seeded and diced
4 tablespoons green onions, tops only, chopped
1/2 cup chicken stock or 1/2 cup water

Steps:

  • For the grits:.
  • Rinse the grits in a large bowl of water. With your hand, scoop out any bran or hulls floating on top of the water. Drain well.
  • Combine the water, salt and butter in a medium saucepan and bring to a boil. Add the grits and stir. Turn the heat to low and simmer for 28 to 40 minutes (check instruction on the bag of grits), stirring occasionally. If the grits stick to the bottom of the pan, reduce the heat and stir more frequently.
  • Remove from the heat and stir in the cream. Keep warm.
  • For the shrimp:.
  • While the grits are cooking, peel and devein the shrimp. If desired, swish the shrimp in a bowl of cool, salted water to remove any impurities. Repeat. Finish with a cool water rinse, drain and set aside.
  • When the grits are ready, prepare the topping. In a large skillet, sauté the shrimp in a tablespoon of butter over medium heat for 1 to 2 minutes, until they are just cooked through. Remove and set aside.
  • In the same skillet, sauté the country ham and sausage for 1 to 2 minutes, or until the sausage is cooked through.
  • Add the garlic and cayenne, if using, and sauté 30 seconds. Add the tomatoes and green onions and sauté 30 seconds.
  • Return the shrimp to the skillet, add water or chicken broth and simmer briefly. Stir in the remaining tablespoon of butter.
  • To serve, spoon four equal portions of the grits into four bowls. Place 5 or 6 shrimp on top of each portion of grits and spoon on equal parts of the topping, including some of the liquid. Serve at once.

1 teaspoon salt
1 cup quick-cooking grits
2 tablespoons margarine
1 bunch green onions, chopped
1 green bell pepper, diced
2 cloves garlic, minced
1 pound peeled and deveined small shrimp
1 cup shredded Monterey Jack cheese
¾ cup shredded sharp Cheddar cheese
1 (10 ounce) can diced tomatoes and green chilies
½ teaspoon black pepper
¼ cup shredded sharp Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x12 inch baking dish.
  • Bring chicken broth and salt to a boil in a large saucepan over high heat. Stir in the grits, return to a simmer, then reduce heat to medium-low, and continue cooking for 20 minutes, stirring frequently.
  • Meanwhile, melt the margarine in a skillet over medium heat. Stir in the green onions, green pepper, and garlic; cook until the peppers have softened, about 5 minutes. Stir in the shrimp, and cook until they begin to firm.
  • Stir the Monterey Jack cheese, 3/4 cup Cheddar cheese, shrimp and vegetable mixture, canned tomatoes, and black pepper into the grits; pour into prepared baking dish and sprinkle with remaining 1/4 cup Cheddar cheese.
  • Bake in preheated oven until the cheese is bubbly and beginning to brown, 30 to 45 minutes.
